Min Chiang Kueh (面煎粿) or Apam Balik is a sweet dessert originating in Fujian, China. The origin of this dessert attributes its invention to Zuo Zongtang, a military leader of the late Qing dynasty. In 1855, the army of the Taiping Heavenly Kingdom invaded the Fujian region and General Zuo was appointed to lead an army to crush the rebels. To provide the soldiers with food without interfering the life of local people, General Zuo decided to switch from the flatbread which was eaten together with spring onion and chilli sauce, to a pancake that used locally sourced and mass-produced ground cane sugar and peanut as filling. Nowadays, you can find various fillings from peanut, sweet corn, red bean paste, sweetened desiccated coconut to dual fillings with cheese etc…

The original is made with a large round pan though you can now also find small pancake with filling sealed inside like the one below today. The advantage of the smaller pancake is that the sellers will have a few such pan and he/she can make them with many different fillings at the same time. On the other hand, a big pan means one filling at a time since there is only one pan in use. The pancake's batter is made from a mixture of flour, eggs, sugar, baking soda, coconut milk and water. The filling is added to one half of the pancake and folded hence the name Apam Balik (turnover pancake) or Martabak Manis, before cutting into several pieces to be sold.

I have free food and drinks too if that's any incentive. Cake's gonna be carrot cake. Gonna have apam balik. (says this while knowing probably none of you know about nor have eaten apam balik) Just imagine whatever food you want and it's there.
You will be promised safety of your being, no permanent harm nor injuries, but I can't guarantee some of them will not say meanie things. And Chaos might pull something idk.

My First Day Working at Bazaar
On my first day working at the Ramadan bazaar, the atmosphere was overwhelming yet exciting. The air was rich with the scent of grilled meats, spices, and the sweetness of traditional desserts like kuih and baklava. The bazaar was a vibrant sea of colorful stalls, each packed with eager customers and busy vendors calling out their daily specials. My stall specialized in Apam Balik, and I was put in charge of wrapping and handing out orders.
At first, I was anxious. The rush of people, the heat from the grill, and the constant chatter around me made me feel like I was in over my head. My hands fumbled as I tried to wrap the Apam neatly and quickly, but the line only grew longer. Sweat dripped down my forehead, and I felt the pressure building. Just then, my uncle who is the owner of the stall noticed my struggle and stepped over with a reassuring smile. He showed me a trick to wrap an Apam more efficiently and with tighter folds, a small but crucial improvement that helped me keep up with the pace. His calm confidence gave me the push I needed.
As the night went on, I started to relax. I found my rhythm and began enjoying the interactions with the customers families with excited children pointing at the food, elders smiling warmly as they made their selections, and friends laughing as they picked up food to share. The lively energy of the bazaar, combined with the call to prayer echoing in the background, created a sense of unity and shared purpose.
By the time the evening ended, my legs were sore and my back ached, but I felt fulfilled. I had not just survived my first day. I had become part of the Ramadan bazaar’s vibrant and joyful community.
