Being vegan, I sometimes miss savory breakfast food (I grew up near NYC, egg n cheese on a bagel was an a.m staple!) & unfortunately tofu scrambles are sometimes pretty mediocre. As a vegan/plantbased chef-ish I struggle with not being overly dependent on simply making vegan versions of meat/dairy based foods, but rather trying to hot certain flavor profiles - savory, creaminess, tart etc. Soooo that being said, here's one of my fav brunch/hangover foods & it's actually a scramble - a spicy scramble to be exact ✨✨✨ Pressed/dried then crumbled firm tofu | sautéed onions, leeks | roasted corn | chilies in adobo for a smokey kick | add in crumbled tofu (s & p, garlic, cumin, coriander, paprika, chili powder) | fold in greens & some diced cherry tomato towards the end | top w/ fresh herbs.
