The leaders of the 2018 Tour Divide have gone almost 240 miles since the start yesterday morning at 8am. Wow. They will cross the US border this morning. There are two historic dots they are chasing, the record holders Mike Hall (Men’s record of 13 days, 22 hours 51 minutes) and Lael Wilcox (women’s 15 days, 10 hours, 59 minutes). There was a significant course re-route that has added some distance and difficulty which is why they are so far behind now. 6AM. Time to get up and use the restroom, change into my cycling clothes and get on my rollers or head out the door for a bike ride. When I get back I shower then sit outside and drink my first cup of coffee of the day before starting work at 8AM. I work until around 11:30AM then take the dog out for a walk. I have a lite lunch at my desk when we get back then work until 5PM, then I make dinner, eat and wrap the day up by working on my blog, social media or design images with the TV on in the background. I’m back to bed at 10PM.

Here’s the recipe for my super simple Keto friendly Lemon Poppyseed Sour Cream muffins (my wife’s fav): . 1/2 cup melted butter 3/4 cup swerve (or similar sweetener) 3 large eggs 1 1/2 cup almond flour 1/2 cup coconut flour 2 tsp baking powder 1/4 tsp xanthan gum 1 tsp vanilla extract 1 cup full fat sour cream Zest from one lemon Juice from that lemon Pinch of salt 2 Tbs Poppy Seeds I put all the dry ingredients in my food processor, give it a quick whirl to mix, then add all the wet ingredients and let it mix completely (may have to scrape the sides once). While it’s mixing, pour in the poppy seeds. Makes 12 good sized muffins. Cook at 350 degrees for 35 min (I’m at 6,500 feet elevation, so your cooking time may vary). . Gotta try these! I’m about 62 hours into a 72 hour fast. Feeling good, it’s important to keep your electrolytes up while fasting, so I add a dash of salt to my black coffee and add 2 teaspoons of Apple Cider Vinegar, 1/8th teaspoon of Cream if Tartar (potassium) and a healthy dash of salt to my water bottle for sipping throughout the day.
