Ingredients: 1 cup medjool dates, pitted. 1/4 cup almond butter. 1/4 cup maple syrup. 1/2 teaspoon vanilla extract. 1 cup vegan dark chocolate chips.
Instructions: Put pitted dates, almond butter, maple syrup, and vanilla extract in a food processor and blend them together. Mix until smooth. After putting the mixture in a bowl, chill it in the fridge for 30 minutes. Make small balls out of the mixture, about the size of a Rolo candy, after letting it chill. Lay the rolled-out balls out on a baking sheet lined with parchment paper. Freeze for 15 to 20 minutes. At the same time, melt the vegan dark chocolate chips in a bowl that can go in the microwave for 30 seconds at a time, stirring each time until the chocolate is smooth. Take each rolled ball out of the freezer and dip it into the melted chocolate, making sure to cover it all the way around. Put the coated balls back on the baking sheet that has been lined with parchment paper. Freeze them for another 15 to 20 minutes to set. Once the vegan Rolo chocolates are set, put them in a container that won't let air in and put it in the fridge until you're ready to serve them.

Add frozen peas, sour cream, and shredded cheddar cheese and stir until well combined. To taste, add salt and pepper for seasoning. Spoon mixture into baking dish that has been greased. Bake for 20 to 25 minutes, or until the top is bubbly and golden, in a preheated oven. Before serving, garnish with chopped parsley.

Soy sauce, for serving. Pickled ginger, for serving. Wasabi, for serving.
Instructions: Lay a bamboo sushi mat on a clean surface and place a sheet of nori on top. Spread a thin layer of sushi rice evenly over the nori, leaving a 1-inch border along the top edge. Arrange slices of salmon, tuna, and avocado along the bottom edge of the rice. Roll the sushi tightly using the bamboo mat, sealing the edge with a bit of water. Mix mayonnaise and Sriracha in a small bowl and drizzle over the sushi roll. Sprinkle masago and sesame seeds on top of the roll. Slice the roll into 8 pieces using a sharp knife.
