My go-to chai smoothie
1. Banana
2. Papaya
3. Protein powder (I use the vanilla Vega Protein Made Simple)
4. Cinnamon powder
5. Turmeric powder (I use Gaia Herbs Turmeric Boost Restore)
6. Almond milk (I keep it simple with Califia Farms Organic Unsweetened Almond Milk - with only 3 ingredients)

Such a great experience at Pájaro Cafe Bosque in Acatitlán, Mexico. Fully vegan Mexican dishes full of flavor. If you go, make sure to try their spirulina drink. It’s definitely something from heaven.
Side note: Chris and the other co-owners went way beyond our expectations. Super sweet of them to bake me a birthday cake, sing me Las Mañanitas, and give us free drinks!

Hi guys! I’m back!
Currently recovering from this food because I put some very spicy chili peppers and I’m feeling it.
But anyways, let’s address the elephant in the room. I know! I’ve been MIA (such an understatement). But … I’ve been .. completing a masters … no big deal …. I’ve had no life pretty much this year, hence the lack of commitment to this blog. I’ve finally got some time on my hands so I’ll be posting some content from the past 3 months.
I’m excited! I have some great recommendations for vegan spots in Mexico City because this one right here, briefly moved to Mexico City. So stay tune! I’ll be sharing lots in the next posts to come.

Curry with tofu 🍛
Ingredients:
Tofu
Onion
Potato
Carrots
Thai basil
Curry
Broccoli
Tomato
Pepper
Soy sauce
Rice
Coconut milk
Optional: chili oil
In a pot, add all ingredients and water except the tomato. Allow curry to boil until vegetables get tender. Add a tomato a minute or two before curry fully cooks.
Side note: I decided to not sauté the vegetables in oil and did not add salt to make it a healthier curry. This curry came out less salty than the normal curry. I‘ve been dealing with a health issue so I’m limiting my salt and oil intake just to not disrupt my health anymore than what it is.
