An incredible adventure hunting in the Outback of Australia

HUNTING RIG THROWBACK: Growing up in Northern Nevada there is no lack of rough roads between hunting spots. Through the season you encounter everything from steep rocky climbs, to snow, mud, wash outs, long gravel roads, and some long pavement drives as well. My dad always took pride in his hunting rigs, all having a name of course, there was Rambo (the camo truck) which became my first vehicle, The Scorpion (Land Cruiser), and the Beast (F-250). A lot went into these vehicles. He worked on them all year and a lot of thought went into how to make them better. No topic was discussed more than the perfect tire. They are a big investment and finding the right one was always the challenge. You balance side wall and tire ply, climbing capability, traction, mud and snow handling, durability in rock, as well as pavement noise and handling. This week I will be testing a new tire the #BFGKM3 that is designed for just this type of terrain! The perfect western hunting tire. The @bfgoodrichtires KM3 will be put to the test in practically my backyard, through the Sierras and along the toughest sections of the Rubicon trail. #BFGonRubicon *As a side note the buck and camo truck picture was my first deer. My grandpa used to tell me stories of driving his hunting rig through the Rubicon trail yearly during the summer, never missing a year for over a decade. It was his stories of the tough terrain that always made the trip a bucket list item for me. A real test, as rough of a road as you will find anywhere. It has been a trip so close to where I live, yet one I kept putting off... that is until this week. I am excited to have the chance to experience the trail as BFGoodrich launches their new KM3 tires on the Rubicon. I was lucky enough to get invited to experience an iconic place that someone who brought me up in the outdoors talked so much about. It is going to be cool to see the places I have heard so many stories of... like Arnold's Rock, Sluice Box, and the Martini Tree. Tomorrow is one of the most anticipated days of the year for me... my home state of Nevada releases the draw results. I can remember reading my draw results and the excitement that came with it over the years as vividly as some of the hunts. It is where a lot of great adventures have begun over the last 21 years of applying here. There have been some long awaited tags and some that I was surprised to draw...as well as a few years with absolutely nothing. So I will be refreshing my browser all day tomorrow with high hopes and anticipation. Her soul matches the landscape, open, wild, and beautiful. The symbolic stone church sits on the edge of one of the most amazing lakes in the world, steadfast and strong. This lake has been a starting point for me over the years for some of my favorite adventures. It is very fitting that this new adventure starts here as well. In this small space we exchanged our vows surrounded by our family and close friends. I have always said that there are only two things in this world that will make a real man cry, God and a woman, today I was touched by both.  My wife is as beautiful inside as she is outwardly. It's no suprise that hunters are the ones that put so much into conservation. Many of the animals we chase take major time investments, from packing into the backcountry for the hunt, to pre-season scouting, to shed hunting. It is year round. I am more invested in seeing elk flourish than just killing an elk. More of a hunter's time is spent outside the shooting of the animal. It is not only the food we eat, but the thoughts and time we occupy ourselves with throughout the year. Without elk, I cease to be an elk hunter. BIG BEAR: found this footage from a trip with my brother a few years back... had some epic footage, but I though this was pretty funny... that bear was less than 500 yards from where @meateatertv @stevenrinella @janis_putelis @dirtmyth @christophergill got charged...who knows... could be the same big fella? On this trip we saw bears like this all day long, almost every day. I was finishing up a granola bar when the wind shifted right to that bear. He casually got up and started coming our way. WHY SHANKS ARE THE BEST CUT: Believe it or not the shank is one of my favorite cuts. I have had many strange looks from friends thinking I am messing with them when they hear me say it. The reason it is one of my favorites is because the shank does not dry out when slow cooked. Venison is extremely lean but the shank holds many tendons that are full of collagen. When cooked for a period of time at a low temperature, collagen breaks down into a gelatin. As the muscle fibers begin to dry out, the collagen breaks down and coats the muscles in the shank. It adds moisture to the now tender meat and a great texture. There are a ton of great shank preparations. I highlighted one of the easiest ways to cook it on my saved insta story.
