Pasta time
Worked today a thick bolognese sause using a meat well known here in Valencia for the normal meat stews. It’s called “pelota” (balls 😁). Way better (IMHO) than the “normal” beef used for this sauce. A magic Lousas from Galicia from the guys of @envinatewine paired it perfectly. .
