Annie's gluten-free banana bread 1 1/2 C. Cup for cup gluten free flour 1 tsp baking soda 1/2 tsp sea salt 1/2 C. Sugar 1 tsp ground cinnamon 1/4 tsp ground clove 1/4 ground nutmeg 2 eggs 1 1/2 tsp vanilla extract 1/2 C. Unsweetened apple sauce 3 very ripe, smashed bananas Optional 5-6 oz Dark chocolate chips )or you can use a dark chocolate bar and chop it) 1- 1 1/2 cups of chopped walnuts Directions In a big bowl mix together all the dry ingredients except your chocolate and walnuts. In a separate bowl mash your bananas, then mix together all your wet ingredients. Once the wet ingredients are well mixed, pour into the large bowl and whisk well. Then fold your chocolate and walnuts into the dough until well mixed. Pour into a well greased pan* and put in the oven for about 50 minutes at 350. (I cook it at 350 for 30 minutes and 375 for about 15 minutes to get that golden brown look)
*muffins bake for about 20-25 minutes at 350.

Thankful

Hey y’all! I’m so sorry I didn’t post earlier!! Hopefully y’all enjoyed your day! I finally had a day off and I was able to sleep in! I think it was about seven or seven- thirty when I got out of bed today. I’m thankful I was able to sleep. I am thankful that I was able to wake up with my favorite person next to me, and our lovely baby laying next to me. I’m thankful that Penelope woke up and called out my name so she could come cuddle with us. I am thankful for healthy children, for our home, food, and clothes.
To me, that is what thanksgiving is about. It’s not about the past-it’s about the present and the future. I hope everyone had at least a few things to be thankful/grateful for this year!

Apple cinnamon oatmeal
Good morning everyone! So I am breast-feeding my three-month-old and she seems to be having a little bit of an issue with dairy. So I've been cutting dairy out of my diet, which is kind of difficult! I've been using silk cashew milk because well it's delicious and it's creamy. So I've been using half Silk chocolate cashew milk and half unsweetened regular cashew milk for creamer in my coffee and it's pretty good, I really like it. So I highly recommend trying it out! As for breakfast this morning, we're having apple cinnamon oatmeal. I make one serving and I split it between myself and my three-year-old, Penelope.
Apple cinnamon oatmeal
2 C water
1/2 C oatmeal
Pinch of salt (optional)
1/2 C. unsweetened apple sauce
1-1 1/2 tbs raw honey
1/4 tsp ground cinnamon
Bring the water and salt to a boil, add half a cup of oatmeal, and reduce heat while stirring- for about a minute. Then add the apple sauce, cinnamon, and honey mix well dish up!

Paleo pumpkin pie
Hey everyone! I know I said I would post the paleo pumpkin pie recipe on Monday and it's now Tuesday night. Shame on me. I was in the middle of typing it out and I fell asleep in the middle of typing! I'll work on getting things posted more consistently and consecutively. Thanks for sticking it out with me! Let me know what you think of the pumpkin pie and want to to see on my next post!

Paleo pumpkin pie
Crust
1/2 C. melted coconut oil
1/3 C. raw honey
3/4 C. Coconut flour OR almond flour
1/4 tsp salt
2 eggs
Preheat oven to 350 degrees. Put all the ingredients into a medium sized bowl and mix well until crumbly. Then place in a 9 inch pie pan and press down firmly until even. Use a knife or fork and perforate the crust to prevent air bubbles forming. Bake for 10-15 minutes. Or until the crust starts browning.
Pie filling
1 can pumpkin purée
2 eggs
1 tsp vanilla extract
1/3 C. Canned coconut milk
1/3 C. Raw honey
1/4 tsp salt
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/4 tsp ground clove
OR use
2 tsp of pumpkin pie spice
Combine your wet ingredients in a medium sized bowl and whisk well. In a separate bowl mix your dry ingredients. Combine your wet and dry ingredients together, mix them together really well and pour into the crust. Bake at 350 for 40 to 50 minutes or until the center of the pie is no longer jiggly. Refrigerate leftovers.

Hello everyone,
Welcome to my blog! I hope everyone that has a chance to read my blog is having a positive day. My name is Annie. I am the mama of two beautiful girls, Penelope (3) and Athena (2m), If you follow this blog you will hear about them quiet often. We live with my fiancé, Zach who works long hours, but does his best or at least I think he does. He is also the father of our children and we're pretty happy. I work part time and I'm a nursing student. The point of my blog is to basically share my day-to-day life experiences; including my goals, dreams, ambitions, fears, and desires. I would love any comments, suggestions, advice, or even full on discussion of many topics. Life as a mother of two sometimes gets the best of me-but hopefully you'll enjoy, learn, and takeaway something valuable from my life experiences. To all the mothers out there who do it all, all the feedings, the diaper changes, cleaning the home, making the food, taking care of the kids, working, going to school, and just trying to be a good mother while taking care of yourself- you rock! I hope that sharing my many successes and failures will benefit you or at least make you laugh.
