Back at it again
A very vegan ish meal prep this week
Red Thai Curry
I used a seasoning package from an Asian market, but it contained shrimp paste. I followed directions and subbed meat for mushrooms. Made yellow rice by adding turmeric. Nothing fancy.
Tofu Dish
Unfortunately I found this on a terrible website, it’s the second recipe on this blog post. I used pre packed cabbage mix, and doubled the peanut sauce. I used the air fryer to cook the tofu day of (seasoned, 400 for 11am, shake at one minute left). 10/10 tho, would eat again.
Cowboy Caviar
Was delicious and so easy to make. Used dried black eyed peas and doubled the recipe. Used the extra celery to make “fire ants” (craisins) on a log. Eat with chips. I also made bread because I felt like it.
The salsa containers on the bottom are actually overnight oats for my partner’s breakfast, and there’s also a side of olives for each of their lunches.

Pumpkin Week 2!
Pumpkin Seed Salad
I roughly followed this recipe, but used 50/50 spinach/spring mix instead of just spinach. I increased the amount of everything, and added onion, orange bell pepper, celery, and walnuts. The dressing was delicious.
I paired this with the best pumpkin bread recipe I’ve used that I made with extra 15oz pumpkin purée I froze from the pumpkin last week (I also used the seeds from that pumpkin for the salads too).
Extra Veggie Fried Rice
We doubled the recipe, but only used 3 cups rice instead of four. Not all of it is pictured here, I gave another serving to my friend because it was a lot.
Lentil Soup
This was delicious, and also added celery. We had a lot of celery to get rid of.

October Pumpkin Month! 🎃
Vegan Baked Spaghetti Squash with Pumpkin & Green Onion Alfredo
This was my favorite meal of this week. Absolutely delicious.
Pumpkin Soup with Leeks, Kale, & White Beans
The soup was not brothy enough for me, so maybe more liquids next time. We also soaked the bread in this soup, as the bread was like biting into concrete. Will not get this bread next time, but it was $2 so we thought we could try something new.
Burrito Bowls!
We made 2 cups of cilantro, lime rice (followed rice cooking directions and added seasonings). Pan cooked 2 cans of cannellini and black beans with a diced onion, garlic, and half a packet of taco seasoning. My partner added some pre shredded chicken to add to his bowl. Last layer was chopped radish (1 bunch) and 2 orange bell peppers. Sprinkled some cilantro and cheddar cheese on top.
Put sour cream and salsa in the fun colored containers.

Trying new things this week! Had to google how to pronounce latkas
Cheese & Red Pepper Latkas
We are eating these cold dipped into spicy ketchup. With fire ants (craisins) on a log and raspberries and blackberries.
Spaghetti and Meatballs
I used this recipe for the pasta sauce, I added a green bell pepper and the diced tomatoes were on sale at the store, so I used and immersion blender to smooth it out. I used one spiralized zucchini for myself, and my partner did two servings of angle hair pasta. The meatballs/vegan meatballs we will cook the day of.
Firecracker Brussel Sprouts
We added some toasted peanuts to this recipe, and made ginger and lime rice for the side.
Overall, I’m excited for this meal prep, but I think it’s lacking in protein. So a protein shake will probably be used to round that out every day this week.

This was actually a very good meal prep, and the “meatloaf” actually stayed good for two weeks. Which was perfect, because there was A LOT.
Vegan Lentil Loaf
This meal was absolutely delicious, but made way more than four servings. It fell apart as soon as cutting it, but it was delicious. We also used Whataburger’s spicy ketchup for it, and added extra after microwaving as it was a bit dry. We put it over buttermilk mashed potatoes because I had leftover buttermilk in the fridge. Every time I make mashed potatoes I always add a whole lot of cloves of garlic to the boiling water with the potatoes. We love garlic, and it’s the best way to infuse that garlic taste (do not remove cloves, just smash them with the potatoes). But veggies are important! So we also added roasted green beans and carrots.
Kung Pao Brussel Sprouts
Was really good, we added ginger lime rice (don’t have a recipe for that). It’s pretty small, so next time I would add tofu to it. This week we just also ate the rest of the “meatloaf” with it, as one meal was actually a meal and a half.
Vegetarian Cobb Salad
This was delicious! I doubled the recipe and added a couple extra eggs and some red bell pepper. Definitely saving this recipe. We also ate focaccia bread with it, and I added dried rosemary and sea salt on the top before baking.

I got a little carried away this week 😅
Bean Tostadas
Two cans vegetarian refried beans with half a diced onion and a small can of green chilies.
Potato Soft Tacos
With Mexican rice and street corn salad. The store only had fire roasted frozen corn in the right amount, and it was actually amazing. We also added a whole jalapeño to it.
We topped both of these meals with some shredded Romain lettuce, red onion, cilantro, cheese, and a homemade pico!
Eggplant and Bean Vegan Sausage Rolls
Made a honey mustard dipping sauce for these by combining 1/4 cup mayo, 1/4cup Dijon mustard, 2tbs honey, and 1tsp lemon juice. We also had a side of vegan broccoli salad that I topped with some candied walnuts. My partner also added some bacon bits that we had in the fridge to his. We each chose our own third side, I had some bell peppers and he has a large jar of random pickled things that he used.
We ate this meal cold, and it was delicious ���
End of week edit:
I think there needed to be some sort of separation between the sausage rolls and broccoli salad. The rolls got a bit wet by the end of the week and wasn’t as good.

Just another meal prep!
Vegetarian Tikki Masala

Followed this recipe with naan bread on the side.
Green Curry Tofu over Zoodles
I marinated one block extra firm tofu in 3tbs Thai green curry, 1tsp tamari, 1tbs olive oil, 2 large cloves garlic, ~1tbs ginger, salt and pepper for a couple hours in the fridge. Spiralized and salted 6 zucchini. Pan cooked tofu, removed, added 1tbs olive oil and cooked 1 red bell pepper, 1 yellow onion, and 2 carrots. Added 1 cup coconut milk and the tofu and let simmer and reduce. (Side note: I do not cook the zoodles, I pat dry and remove excess salt before portioning, then add the rest of the meal on top. They cook to perfect when only microwaved.)
Buffalo Chickpea Wraps
Each wrap was layered: wrap, lettuce slice, cream cheese, thin sliced radish, chickpeas (cooked in buffalo sauce then mashed and cooled), pickled red onion. With ranch on the side.
Sides: carrots, blackberries, and grapes.
Overnight Oats
No recipe and only for my bf for breakfast. A scoop of any nut butter on the bottom, old fashioned oats and milk according to package directions, various frozen berries, and a drizzle of honey or agave. Then some granola on the side to add day of.

Post Vacation Meal Prep!
Decided lower carb was the goal this week after eating so much on vacation!
Crispy Peanut Tofu

We followed this recipe with almond butter and skipped the cauliflower rice. We ended up using two packages of tofu, added three baby bok choys, one red bell pepper, a couple sprigs of green onions, and added half a white onion as well.
Thai Red Curry with Vegetables

It came out a bit liquidy, but it soaked in nicely to the cauliflower rice and reheated really well in the microwave. 10/10
Spicy Lentil Salad

We eat this cold, and added cucumbers to it as well (adds a nice crunch to it!). Unfortunately, this was not spicy at all.

Cabbage and Broccoli Salad
For lunches this week I just kinda threw it together. Did two bags of precut green cabbage, two bags of red cabbage, a bag of broccoli and cauliflower, and topped with radishes, cannellini beans, sunflower seeds, S&P, and a cucumber ranch dressing on the side.
Was a pretty lazy meal prep this week, but I’m happy with how it came out!

It’s a good week for bread!
Kung Pao Brussel Sprouts

We tasted this while cooking and it’s amazing! If it’s not filling enough for us, we’ll either add tofu or rice to it if we make it again.
Future note: yes, add tofu or rice next time.
Black Bean Burgers w/ Air Fried Sweet Potato Fries (Vegan)
Store bought patties which we’ll grill day of with the fixings. We’ll also air fry the fries day of.
Croissant Chickpea Salad Sandwiches
Three cans chickpeas (drained and mashed), 2 stalks celery, a handful of red grapes, and a handful of sunflower seeds (normally use almonds or walnuts, but had sunflower seeds from last week). Added vegan mayo, Dijon mustard, and salt, pepper, and garlic powder to taste (with some chili powder optional for a bit of spice). I work with my heart here and don’t have any amounts or ratios for this.
I cut the croissants and store separately in sealed bags. In the container I stacked it Romain lettuce, tomato, provolone cheese, pickles, chickpea mixture on top. The tomatoes weren’t the best at the store this week, and I expect them to make everything a bit soggy by day 4, but with the bread separated it shouldn’t be too bad.
Spur of the moment! Vegan Mayo!

Just wondered what I could do with the aquafaba I had and found this. Used it for the chickpea mix, and will use as a spread for the lunch sandwiches and burgers this week. Not sure how long it lasts and it’s a bit flat. I just used whatever I had in the pantry, so this is what I actually used compared to the recipe: 1 cup aquafaba, 1tsb ground mustard and sea salt, 6tsb apple cider vinegar, 4tsb Swerve sweetener, 3 cups neutral oil (2.5C canola, 1/2C peanut). It made about four cups because I ran out of room in my jar for anymore fluff.

My lunch classic recipe for a vegetarian vs meat eater meal prep for us!
Chili Cheese Fries

I cut this recipe in half, added cheese, pickled jalapeños (and hot pepper rings for bf), and cilantro on top. For the fries, I crinkle cut them, and will season and air fry them the day of.
Eggplant Curry w/ yellow rice

We found three eggplants was a lot and only used two. For yellow rice we just added a lot of turmeric to the rice as well as fresh ginger, salt, pepper, garlic, and lime juice (I don’t have amounts, we just wing it).
Buffalo Chicken or Chickpea Wraps
Each wrap was layered: wrap, lettuce slice, cream cheese, second lettuce slice, thin sliced radish, either store bought pre cooked chicken diced and tossed in Buffalo sauce, or chickpeas cooked in buffalo sauce then mashed and cooled, diced red onion. With ranch on the side.
Sides: fire ants on a log (dried cherries instead of raisins), grapes for me, and store bought potato salad for him.
My normal wraps were not available at the store, and these new wraps were a lot smaller. So all the extra innards are now a side “salad!” If these wraps taste good tho, next time I’ll buy 2 packs for double wraps as they stretched real easy and didn’t break (extreme wellness high fiber & herbs by olé Mexican foods).
