In a bowl combine black beans, corn, taco seasonings and cumin. Arrange corn chips on the prepared baking tray in a single layer, layer with the bean corn mix and sprinkle with cheese. Pop in the oven for 10 minutes or until the cheese has melted. Make the salsa by combining all the ingredients in a bowl. You can also add them into a food processor and pulse a few times until finely chopped. Take nachos out of the oven, top with salsa, add guacamole and sour cream. INGREDIENTS @sizzlefishfit lobster tails 1 head of cauliflower 2 - 3 cups of whole brussel sprouts (1 bag) Butter or ghee Olive oil Salt & pepper *serves 3-4 . DIRECTIONS Thaw out the lobster tails. Turn them upside down and cut lengthwise down the center through the softer bottom shells of the tails using kitchen scissors. Spray the cut side with olive oil & place that side down on the grill. Cook for 6 min until the shells are bright red and flip. Pour melted butter on top of each tail and grill for another 6 min. . Remove the stem from the head of the cauliflower and break apart into smaller pieces. Place in a large pan with 1 inch of water and the top on to steam. Add more water after ~3 min or as the water runs out until the cauliflower has softened. Once soft, place in a food processor with 2 tbsp of melted butter and 1 tsp of salt & a pinch of pepper. Top with more butter once served. . Trim the Brussels by cutting off the stems and then slicing each one lengthwise. Coat with 1 tbsp of olive oil & 1/2 tsp of salt. Roast at 400 for ~20 - 25 mins. DIRECTIONS Mix together the pancake mix, almond milk, egg, and vanilla protein (batter should be thick). Heat a pan on the stove and spray with cooking spray. Pour in the batter and put the top on. Heat should be on medium ish. Let sit for around 4 min then flip and put top back on. Should be done around 2 min after that. Parmesan pasta with bacon, scallops, and roasted asparagus 🥲 INGREDIENTS @eatbanza chickpea gemelli 2 cups of sliced asparagus (into 2 inch pieces) 3 slices of turkey bacon 4 @sizzlefishfit scallops . Sauce - 1 tbsp butter 1 tbsp GF all-purpose flour 1/2 cup of grated parmesan cheese 3/4 - 1 cup of pasta water Generous pinch of salt *2 servings . DIRECTIONS Cook pasta as directed and remember to salt the water and reserve some for the sauce later. In a large pan, heat the butter. Next, add the flour and salt and stir for about 30 seconds (it’ll be a thick paste). Then add in around 1/2 cup of the pasta water at a time and stir for a few mins on medium heat to get desired consistency. Bake the bacon in the oven at 400 for 20 - 25 min. Remove from the baking sheet and add the raw asparagus to the same sheet. Coat with the bacon grease (I didn’t have too much but if there’s a lot from your bacon pour some out) and roast at 400 for ~15 min. Pour the cooked pasta, scallops (just seared these in butter for ~2 min each side), crumbled turkey bacon, and roasted asparagus into the pan with the sauce. DIRECTIONS Lay the bacon on parchment paper on a rimmed baking sheet. Bake at 400 for 18 min then broil for 5ish. Alternatively, you could fry in a pan on the stove. Whisk the eggs tg with sliced cherry tomato, green onion, broccoli (steam beforehand), and some salt/pepper. Heat olive oil in a pan and pour in the eggs. Once they’re almost done, add in the cheddar and remove from heat once cooked through. Top a toasted slice of cinnamon raisin bread with avocado & everything but the bagel seasoning. Honey balsamic chicken salad 🥲 4 chicken thighs 1 small beefsteak tomato Kalamata olives Feta Avocado Romaine . Dressing: 1.5 tbsp balsamic vinegar 1 tbsp lemon juice 1 tbsp honey 1 tbsp @sonomagourmet garlic & herb olive oil (you can use regular olive oil if that’s what you have on hand) 1 tsp dried oregano 1 tsp dried basil *Serves 2 . DIRECTIONS Combine all of the dressing ingredients + some salt. Cut up chicken thighs into bite-size pieces & put on a large pan on low/med heat. Pour the dressing on top (but save some to top your salads with!) & let the chicken sizzle in it. Once it’s more cooked through, up the heat so it starts to brown on the outside. Chop up the romaine & place in a bowl. Top with olives, tomato, avocado, and the cooked chicken. Then pour the dressing on top, sprinkle feta, and add salt & pepper.
