Sesame seared tuna with fried cauliflower rice 🥲 2 @sizzlefishfit ahi tuna steaks 1/4 cup of black & white sesame seeds (~2 tbsp per piece of tuna) 3 tbsp liquid aminos 1 tbsp sesame oil 1 tbsp avocado oil . For the rice - 3 cups of frozen riced cauliflower 1 tbsp minced garlic 2 cups of stir fry veggies (I just bought a frozen mix of broccoli, snap peas, carrots, mushrooms, water chestnuts & edamame) 1/2 of a white onion, chopped 1/4 cup of chopped green onion 2 eggs 2 tbsp liquid aminos 2 tbsp of sesame oil . DIRECTIONS Coat the tuna in liquid aminos and sesame seeds. Heat the sesame and avocado oil in a pan & add the tuna. Cook on high heat for 1 - 1 1/2 min each side then transfer to a plate. For the rice, add all the veggies to a large pan with a splash of water and put the top on. Let sit for a few min until the veggies are soft / water evaporated. Next, remove the lid and add the minced garlic, sesame oil, and green onion (save some for garnish at the end). After ~4 min, add the liquid aminos and sauté. Once done, plate the rice with the tuna on top & add green onion, sesame seeds, a little bit more of liquid aminos, and sea salt! Parmesan pasta with bacon, scallops, and roasted asparagus 🥲 INGREDIENTS @eatbanza chickpea gemelli 2 cups of sliced asparagus (into 2 inch pieces) 3 slices of turkey bacon 4 @sizzlefishfit scallops . Sauce - 1 tbsp butter 1 tbsp GF all-purpose flour 1/2 cup of grated parmesan cheese 3/4 - 1 cup of pasta water Generous pinch of salt *2 servings . DIRECTIONS Cook pasta as directed and remember to salt the water and reserve some for the sauce later. In a large pan, heat the butter. Next, add the flour and salt and stir for about 30 seconds (it’ll be a thick paste). Then add in around 1/2 cup of the pasta water at a time and stir for a few mins on medium heat to get desired consistency. Bake the bacon in the oven at 400 for 20 - 25 min. Remove from the baking sheet and add the raw asparagus to the same sheet. Coat with the bacon grease (I didn’t have too much but if there’s a lot from your bacon pour some out) and roast at 400 for ~15 min. Pour the cooked pasta, scallops (just seared these in butter for ~2 min each side), crumbled turkey bacon, and roasted asparagus into the pan with the sauce. Honey balsamic chicken salad 🥲 4 chicken thighs 1 small beefsteak tomato Kalamata olives Feta Avocado Romaine . Dressing: 1.5 tbsp balsamic vinegar 1 tbsp lemon juice 1 tbsp honey 1 tbsp @sonomagourmet garlic & herb olive oil (you can use regular olive oil if that’s what you have on hand) 1 tsp dried oregano 1 tsp dried basil *Serves 2 . DIRECTIONS Combine all of the dressing ingredients + some salt. Cut up chicken thighs into bite-size pieces & put on a large pan on low/med heat. Pour the dressing on top (but save some to top your salads with!) & let the chicken sizzle in it. Once it’s more cooked through, up the heat so it starts to brown on the outside. Chop up the romaine & place in a bowl. Top with olives, tomato, avocado, and the cooked chicken. Then pour the dressing on top, sprinkle feta, and add salt & pepper. Pan-seared garlic chicken with sautéed zucchini & chickpea spaghetti🥲 INGREDIENTS Chicken thighs Zucchini @eatbanza chickpea spaghetti Cherry tomatoes Kale Mozzarella Olive oil Minced garlic Pecorino Romano . . DIRECTIONS Heat 1 tbsp olive oil + minced garlic in a pan & then add cut up chicken thighs. Cook for 4ish min (until browned) then repeat process on other side until cooked through. Cut up zucchini and steam. Once tender, sauté in olive oil & minced garlic (same process as the chicken). Cook pasta as directed & once done, add in a handful of kale, roasted tomatoes (mine were pre roasted- check my highlight for deets!), mozzarella, pecorino Romano, and a drizzle of olive oil. Baked salmon with roasted garlic brussel sprouts & chickpea mac & cheese 🥲 . . ? . @sizzlefishfit salmon (2 pieces) 1/2 tbsp @primalpalate new bae seasoning 2.5 cups of whole brussel sprouts 1 tbsp of olive oil 1/2 tbsp garlic power @eatbanza chickpea mac & cheese *2 servings . DIRECTIONS For the brussel sprouts, preheat oven to 400. Slice brussels in half & spread on baking sheet, drizzle with olive oil then add garlic powder. Roast for 10 mins, flip & 10 mins on other side. Thaw out the salmon overnight if using frozen, drizzle with olive oil, and sprinkle seasoning on top. Lay skin side down on a parchment paper on a baking sheet and bake at 400 for ~12 min then broil for a few more mins. Cook mac as instructed (just comes in a box) & serve with the salmon & brussels! . DIRECTIONS Crack an egg (or two) into a bowl & whisk. Pour Italian breadcrumbs onto a plate. Slice the eggplant, add each piece to the yolk, and then transferring to the breadcrumbs plate. Teriyaki chicken with smokey sweet potato fries & breaded zucchini fries 4 bone-in chicken thighs ~1/4 cup of Kinder’s teriyaki sauce 1 large sweet potato 1 tbsp of Primal Palate smokehouse rub 1 large zucchini 3 tbsp of Italian bread crumbs 3 tbsp of grated parmesan Olive oil . DIRECTIONS Coat the chicken thighs with the teriyaki sauce and spray your air fryer with olive oil. Remove once the chicken is cooked through & the skin is crispy. Slice the sweet potato into wedges, coat in olive oil, and sprinkle the smokehouse rub. Place on parchment paper on a baking sheet and bake for ~40 min at 400 (depending on how thick the fries are). Cut up the zucchini, pat dry, drizzle with olive oil, and add the parm + breadcrumbs. Evenly coat each piece, add to baking sheet lined with parchment paper. Sprinkle more breadcrumbs on top & bake at 400 for ~30 min. These will be more soft but if you want them crispy, toss in an air fryer instead. . . . . These Banza chickpea crust pizzas save me!! Sometimes when I’m done working, my brain is 🤯💀 & I’m just not capable of thinking of a dinner. Lovely opening up my freezer to this beaut though ✔️ . . . Pesto chicken meatballs with roasted cherry tomatoes & spaghetti squash 👉 INGREDIENTS 2 lbs ground chicken 3/4 cup of italian bread crumbs (we used Vigo) 3/4 pecorino romano 2 large eggs 1/3 cup of pesto Salt & pepper 1 yellow onion 2 cups of cherry tomatoes 1 large spaghetti squash Olive oil . DIRECTIONS Pierce holes using a fork on all sides of the spaghetti squash (like 5 times). Microwave for 3 min. Cut the stem off and slice lengthwise. Drizzle the inside with olive oil, salt, and pepper. Place cut side down on a baking sheet with parchment paper & bake at 400 for 45 min. Once done, scrape the seeds out with a fork & then pull the rest of the spaghetti squash flesh out (transfer to a bowl- add salt/pepper). Place cherry tomatoes drizzled with olive oil in a baking dish. Bake at 400 for 25 min. Chop the onion and add to a pan with 1 tbsp of olive oil. Cook until tender (~10 min), adding more olive oil as needed. In a large bowl, add ground chicken, eggs, sautéed onions, bread crumbs, pecorino romano, pesto, and a generous amount of salt & pepper. Using your hands, mix thoroughly tg. Spray a baking dish (or baking sheet w parchment paper- no olive oil needed) with cooking spray, form the ground chicken into balls, and place in the dish. Cook at 350 for 30 min. Serve with the tomatoes, and spaghetti squash with more pesto on top if desired!! * This made ~34 meatballs and prob 3-4 servings for the spaghetti squash just fyi. Lemon walnut tuna salad with avocado hard boiled egg, tomato, and kalamata olives👉 INGREDIENTS Yellowfin tuna (1 pouch) 2 spoonfuls of plain yogurt 1 teaspoon Dijon mustard 2 tbsp ish of lemon juice (to taste) Handful of chopped walnuts Handful of diced celery Handful of diced red onion *Serves 1 . Butter lettuce 1 hard boiled egg Avocado Tomato Kalamata olives 1/2 lemon . . DIRECTIONS Mix together tuna, yogurt, Dijon mustard, lemon juice, walnuts, celery, red onion, & salt and pepper. Put the tuna salad on top of butter lettuce. Serve with avocado, cut up hard boiled egg, tomato, & olives. I added juice from 1/2 a lemon to the olives, tomato, & avo once plated up. Baked BBQ tofu bites with cheesy chickpea bowties & baby broccoli 👌 INGREDIENTS 1 14 oz extra firm block of tofu @kinderssauce bbq sauce Olive oil 1 tbsp cornstarch Green onion Chickpea bowties Shredded plant based cheddar Vegan butter Almond or coconut milk Spinach Baby broccoli . DIRECTIONS Press the tofu by wrapping the block in paper towels and putting something heavy on top for 15-20 min to get rid of some of the water. Carefully cut up the tofu into bite-sized cubes & put them in a ziplock with olive oil, sea salt, and cornstarch. Toss gently to evenly coat each piece. Bake for 20 min on 400 degrees, pour on about 2-3 tbsp of bbq and make sure each piece is evenly coated. Bake for another 10 min & then garnish with green onion once done. Steam baby broccoli then sauté in olive oil and minced garlic. Cook pasta as directed. Strain and then move the pot back to the burner on the lowest setting. Steam spinach then add it to the pot along with cheddar, milk, and butter. Mix thoroughly until creamy (add more milk if needed). Top with sea salt once done. Credit-@kissmywheatgrass_ . . Trader Joe’s really pulls through for easy weekday dinners!! All 7 ingredients for this creamy sun-dried tomato cauliflower gnocchi are from there, making a 20 min meal a piece of cake 🍰 Recipe inspo from @broccyourbody!!❣️ . . . Sun-dried tomato cauliflower gnocchi 👍 1 bag of @traderjoes cauliflower gnocchi ~3 tbsp nutritional yeast 2 @traderjoes sun-dried tomato chicken sausages 2 large handfuls of spinach 1/4 cup of sun-dried tomatoes 1/4 cup of grated parmesan 2 tbsp oat milk (or milk of choice) *Serves 2 . DIRECTIONS Cut up the chicken sausages. These come pre cooked so just sauté them for in some olive oil for ~2 min or until they start to brown then set aside. Heat olive oil on the stove then add the gnocchi straight from the freezer (have heat on medium ish). Add the top & let sit for ~2 min to defrost. Remove the top, add more olive oil (or cooking spray), and coat each gnocchi with nutritional yeast (start with 1 tbsp & repeat this process every 3 ish min or until crispy). Add the chicken sausage, sun-dried tomato, spinach, parm, and milk to the pan (have the heat a little lower). Stir everything tg then serve & top with more parm, salt, and pepper. Slow-roasted cinnamon sweet potatoes with an almond butter dipping sauce 👉 INGREDIENTS 1 tbsp @baseculture almond butter 3-4 tbsp vanilla yogurt 2 medium size sweet potatoes 1-2 tsp cinnamon 2 tbsp coconut oil Sea salt . DIRECTIONS Slice the sweet potatoes into big chunks. Add them to a larger bowl, along with the coconut oil (melted), cinnamon, and a sprinkle of salt. Mix well, making sure all the pieces are evenly coated. Place parchment paper on a baking sheet, add the sweet potato, and roast at 350 for 50 minutes. Once done & cooling, make your dipping sauce by combining the almond butter, yogurt, and a few shakes of cinnamon. Add 3 tbsp of yogurt at first then add more as needed for desired consistency.
