Starting a food truck in Kerala
[1] involves obtaining several licenses and permits from various government agencies. Here is a general overview of the steps you would need to take:
Obtain a Food Safety and Standards Authority of India (FSSAI) license. This is mandatory for all food businesses, including food trucks.
Register your food truck with the local Municipal Corporation. This will involve paying a fee and providing proof of ownership of the vehicle.
Obtain a trade license from the local municipality. This is needed to operate a business in Kerala.
Obtain a health trade license from the local health department. This is needed to ensure that the food you serve is safe for consumption.
Obtain a fire safety certificate from the local fire department. This will ensure that your food truck meets safety standards in case of a fire.
Obtain a pollution control certificate from the Kerala State Pollution Control Board.
Obtain a permit to operate in a specific area or location. This will depend on the local regulations and the area where you plan to operate your food truck.
It is important to note that these steps and requirements may vary depending on the location in Kerala where you plan to operate your food truck. It may be a good idea to consult with the local authorities to ensure that you have all the necessary licenses and permits before starting your food truck business.

FOOD TRUCK SPOTTING!
The concept of food trucks is still pretty new to Kerala. But the trend is catching on quickly. Especially towards South Kerala. It is nothing but a glorified 'Thattukada'. Usually, these trucks vary from mini trucks to mini trucks. The carrying space of the truck is converted into a portable kitchen. You can see a couple of food trucks set up around the busy parts of the cities. You can have your food standing around the truck. Some trucks have gone a step further to make the roadside eating experience a bit more comfortable by setting up portable tables and chairs. These trucks usually start popping up in the evening and go on late into the night. You get decent servings and don't have to burn a hole in your pocket to have a satisfactory meal. It's the ideal food joint for people on a budget. They provide all sorts of food like Idli, Dosa, Vellappam, Porotta, Beef Curry, Chicken Fry, Scrambled Eggs, and Omelettes to name a few.
