white rockfish soup
Hi guys. Rain season starts here. On rainy day fishing is not boring than other dyas. I like fishing but can’t enjoy cause I running out of time.
Rockfishes are in season on December but you can buy anytime you want in market. thank you aquaculture.
I was thinking what do I wanna cook with this and I choose fish soup.
Real good taste of fish soup is right after fishing next to river (or sea)
There are two types of fish soup. one is white soup and the other is red soup.
This time I’ll tell you how to make white fish soup. name can be change by which fish you use.
p.s. all ingredients are what in Korea so some ingredients are not in there or hard to see. but dw. and prepare ingredients of here. Like radish the radish I use and normally in america is different.
YOU NEED
Tumblr media
Two small rockfish / or one big but if you ready for more than one 2 small can be better.
radish (long white one)                   70g     ( about quarter)
Crown daisy [ Garland Chrysanthemum ]       1 hand
red pepper                                            1
green pepper                                        1
spicy pepper                                         1
Perilla  ( Aoshiso ) Or water celery is fine too I used this too and it really is good.
in some white fish soup water celeries are on it.            5  Perilla / 20 ~ 30 water celery
Green onion                                         1
                                                  (for taste of soup)
Anchovy for soup                                10
root of green onion                                2
                                  20g radish
( You don’t eat them. They are for taste of soup)
garlic                                                    2~3
salt                                                         1tsp
soy sauce                                                 1sp
Tumblr media
1. put water and all ingredients for soup taste at once and boiling.
2. Trimming rockfish guts, guts and scales.
3.  Cut radish flat (1~1.5cm) cube shape.
4. Cut crown daisy, green pepper, green onion, water celery just two times.
5. cut other ingredients thinner. and remove all ingredients in pot.
6. Put radish first with rockfish head. (It helps taste better)
7. when radish ripen so its easy to steb with chopsticks without many strength put rockfish with garlic.
8. When rockfish cooked add soy sauce and salt.
Then others next.
Boil a little more then tada~ enjoy
I just realized I uploaded all soup kind foods until now.
Tumblr media
well it taste all good though but I’ll upload not soup kind next time haha.
P.s. Do not use salmon or something like that! they deserve better. Like roast or steak or some other things. I guess other fishes are fine. even Northern Chinese softshell turtle and turtles okay ;)
taste diaty
I put tofu and some potatoes in a pot too. and that was even better. taste of soup was clean and  ㅜnutty but at the same time little biting and spicy taste  by peppers. rock fish boiled well enough. Fish was small but flesh was enough for me. Water celery is my favorite, and distinctive smell of it was so good.  crunchy(idk its right for vegetables but this is close)
I  take a meal of rice and soup mixed together. if it was red soup that could be ramen instead. that was perfecr for lunch at home.   Soju fits well with this too
I’ll upload red fish soup too next time if I have chance see ya :)

pork spine kimchi soup
Hello guys this time I'll show you pork spine kimchi soup.
Basicly its kimchi soup. up to what you add it change. Usually there are kimchi soup and pork spine kimchi soup and tuna kimchi soup.
You guys may think "why is this guy introduce hot soup in this weather?"
That's right. Previous one and this one, all hot soup. But
hot food on hot weather cold food on cold weather can help you live longer.
I also learn and study about Korean meditation in uni. The way we can keep healthy and live longer than you want is make it as part of your life. Let yourself whatever you do on as usual and just care only when you sick, going hospital never can cure you. medicines on world is temporary.  never can cure 100%. When you got your health back then need to change not to get sick again.
Four things you should know to not to get cold on summer.
1. do not eat cool down food.
2. do not sleep in the room all doors and windows closed
3. do not eat cold fruit and ice.
4. eat warm food and keep your stomach warm.
"Do I keep them?"
NOPE. How can I keep them all always. I live in 21c too.
But I try not to take many cold things and ice. Cause my body usually cold.
Tumblr media
Then lets begin.
You'll need
- pork spine
- kimchi                        200g
- Red Chili Paste             2t
- onion                         half
- potato                       2
- carrot                         1
- Soybean Paste (miso, but different with japanese miso)                                      2t
- siraegi (drying Korean radish greens)
the dried radish leaves. But you can use any herbs like big leaf basil. I used other Korean herb too actually. Cause I didn't have dried radish leaves too.
- perilla powder or sesame
Tumblr media
How to make.
- put the pork spine in the water 20 min to remove blood
- pour the water and refill little over than half in the pot.
- start boiling low heat
while it boiling you can trim other ingredients
- cut kimchi, potato, carrot, onion for a good size to eat
- put them boil together.
                                        now you need pastes
- add two table spoon of  Red Chili Paste but if you can't eat spicy just one will be enough.
-stiring until all change red. then time to put soybean paste.
But this paste has salty taste. kimchi, red chili paste, soybean paste they all salty so taste before add then you judge put or not.
- It's done. boil in the middle high heat for about 40 minutes.
                                                Enjoy :)
p.s. you need rice with this soup. As I said this soup can be a bit salty so rice is needed to neutralize salty taste. and pretty good with this soup
Taste diary.
First I break an egg and put it in bowl. By the heat inside it start ripen.
stab the eggyork, the yellow york spread like lava. I tasted york with soup.
soup's kimchi taste was good with savory york.
then I grab the spine and had a bite. Pork with kimchi soup inside flavor good and also taste. I choose to cut spine small pieces. Then I put a bowl of rice.
in a spoon I can taste soup, kimchi, rice, and pork.
potato and carrots taste good too. Boiled long enough in a pot so carrot tatses soft by the herb I can't smell smell of pork.  only with this one meal solved.
I thought put a slice of cheese will be good too.

Roasted kimchi pork
I'm Korean and i live in Korea. its about 20 years now.
I want to show you about food in Korea. The taste, various kind, recipes, and health.
Some may not like it cause of its smell. BUT I saw more of case that people find the Korean foods they had.
Now you may wonder "Does he chef?"
Me? if I am I don't post here. Maybe on instagram and twiter post my dishes and sowing salt with sunglasses haha.
Am I a cook? naah. well I was. But not now. Anyway you may think my blog can't be helpful to you. I'm not a chef or cook but I'm living in Korea for 20 years and I cook in my kitchen. So I promise this will be helpful.
There are many channels and magazines about Korean food you can see in America and other countries. Not only Korean but people who had try to spread how good it is.
You may heard about kimchi, bibimbad, Korean barbecue lalala
Today I'll gonna tell you how to make    'kimchi pork fry'
It's rainny and misty outside. Rains drop like hundred sprinkler scattering water at the same time. Thanks to leg injuries I had to stay in home. How perfect. so for my dinner I choose to have Roasted kimchi pork.
on a little bit cold day, little bit hot pork with slightly souring and spicy kimchi taste amazing.
first you need
- kimchi
- pork (ant part you want but I recommand belly or neck and leg is good too)
- onion         half
- spicy pepper
- garlic
- chwinamul (you may can't find there but spinach is fine too)
-green onion
for sauce
- red chili paste (named gochujang)            1t
- red pepper powder                               2t
- soy sauce                                            2t
- sugar                                                 1t
- chopped garlic                                     1t
First we will make sauce.
Mix all the sauce ingredients in a bowl.
then chop pork for good size to eat and put them mix with sauce.
Second. Roast green onion and garlic in a pan without oil.
Third. Add kimchi (with some kimchi soup in it) when you can smell of garlic roasting.
Next. Put spinach and onion keep roasting.
It's almost done now!
Last. Put a sauce and pork
Keep roasting until it boil then put a cup of water.
keep roast until it look like stew (means until less water)
when it coloured all nice red its done!
Ready sunglasses curve your arm front and soating sesames as many as you want.
you can eat now as side dish.
But you can eat it as main dish too.
Ready rice and cover it up with roasted kimchi pork.
Now this is roasted kimchi pork rice bowl.
it will be amazing if you put half baked fried egg on this bowl.
It's done and lets enjoy ;)
Tumblr media
Taste Diary
chill day, grabbing steaming out bowl makes feel cozy.
stab a half baked egg york, yellow york flood like lava and cover the surface.
crush it and mix them all.
Now all in this bowl become red. start to enjoy.
kimchi is little fermented so it tastes little souring but that makes me want more bites.
By these hot sauces pork gravy got spicy but much better. even fat is not taste oily.
it could taste  unfresh but spinach and little crisp onion got all oils so it taste more fresher. Only thing I need is a glass of rice wine.
