Mediterranean Quinoa Jars- vegan, gf, & dorm room ready!
It’s back to school time and you asked for a dorm friendly meal so here’s my favorite! All you need is a microwave & cutting surface. I recommend checking out the local farmer’s market for the cheapest (and freshest!) produce then making these the same day. They should last about a week in the fridge! Of course you can customize them to have your own favorite veggies- this is ESPECIALLY good with oven roasted veggies if you have access to an oven! Best of all these jars are vegan, gluten free, and taste great at any temperature so go ahead and grab it on the run!
MAKE SURE you put the dressing at the bottom and quinoa on top so that it doesn’t absorb the dressing! Using less absorbent ingredients like peppers, onions, & tomatoes at the bottom will help prevent this. Typed out ingredients & directions are on the youtube page here. MAKES 3 SERVINGS (this will change based on the cheese you use! I use My Fitness Pal to calculate the recipe) 353 calories, 13g fat, 48 carbs, 14g protein

HOMEMADE ALMOND MILK! #vegan #glutenfree #recipe #vegubc // by @nirel4peace Soak 1 cup raw almonds in 1.5-2 cups water overnight. The next day, drain & rinse almonds and blend with 4 cups fresh water. For a thicker consistency, use 3 cups water. Using a nut milk bag, cheese bag, cheap stockings or a thin strainer, separate almond pulp from milk. Save pulp in a container in the freezer for use in future treats if desired. Enjoy! 💚👍

Homemade ginger shots! #vegubc // by @nirel4peace // Instructions: Peel & thinly slice fresh ginger. If you have a crappy blender: [Cover ginger slices with water in a pot, bring to a boil until soft-ish. Remove ginger slices and blend with a little bit of water from the pot. Strain blended ginger using a very fine strainer or nut milk bag.] If you have a good blender: [Blend and strain ginger slices without boiling, and just add a bit of fresh water to blend.] This comes out really strong, so I recommend adding agave nectar or other sweetener to taste...or adding a small shot to a cup of tea or with lemon. 😊✌
