If I were to ever become a doctor I would try to make this my main prescription to my patients--simple fruits and vegetables. The people in our society have become increasingly dependent on drugs to find quick fixes for certain health problems, when really they're ignoring the underlying cause of their diseases. This reminds me of Charlotte Gerson, who's father founded the Gerson Therapy, and her thoughts about today's dependence on drugs and prescriptions. She says that you cannot just heal one part of the body--when the body heals, it heals entirely. She gives an example of someone who has both heart disease and cancer....You can't just heal the cancer and keep the heart disease or vice versa. To completely heal and rid the body of one disease, you have to heal the entire body as a whole; you can't just pick and choose diseases to cure.
I suggest everyone go look her up. She is so inspirational and someone I hope to be like when I'm older. She is continuing her father's legacy with the Gerson Therapy and is actually curing patients that have cancer with plant-based nutrition. The sad reality is that her practice is based out of Mexico because it is ILLEGAL in the United States to cure cancer with nutrition. Hopefully one day it will be legal and her practice will be more widely known.

So many people think you can't enjoy desserts or tasty food when you're plant based or vegan....but boy are they wrong. It's not like I only eat vegetables and leaves for every meal, there are so many possibilities to keep it fun and interesting! This one is a perfect example 👌

History Behind Lactose Intolerance
It's Friday, FINALLY! We made it to the weekend tumblrs.
I have some new info I wanted to share with you guys regarding lactose intolerance. First of all, did you know that humans actually aren't designed to digest lactose? We only make the enzyme (lactase) when we are infants in order to digest and receive the nutrients from our mother's milk. After about the age of 2 years old we lose the ability to express that enzyme. But then you ask...so if everyone loses the ability to express lactase at a very young age, why aren't we all lactose intolerant? Well folks, let me give you some more information. Humans have slowly evolved over time to keep lactase around in our body, since dairy has become a large part of our diet. However, I just learned in one of my biochemistry classes that the people that still express the lactase enzyme after 2 years of age actually have a mutation on their second chromosome. HOW WEIRD IS THIS? so this means if you are lactose intolerant you don't have a mutation (and this was historically normal) but if you aren't lactose intolerant you do have a mutation on one of your chromosomes that allows you to continue to digest it!!! This just gives me more proof that humans weren't originally supposed to digest milk and milk products. The fact that humans need a mutation in one of our genes to digest milk products says a lot about what our bodies were originally made to consume.
I think that since the symptoms of being intolerant to lactose are somewhat minimal, such as only getting bloated, getting crams, or some flatulence, people over time continued to eat diary and allowed their body get accustomed to this diet. Also, once your diet changes it also changes the microbiota of the colon, allowing different enzymes and bugs to stay in your gut in order to break down foods you frequently digest. Just crazy to think about!

Time for me to take a study break...and what do I do? GO ON TUMBLR! haha this site has become my obsession in the last couple days and I absolutely love it. It's so fun to see all the support out there surrounding plants and food that not only is good for you but tastes amazing as well!
It's crazy how many of my peers think I'm crazy for following a vegan diet. But hey, it brings me happiness and makes me feel better about my health and longevity. Everyone (many of my friends) thinks eating plant-based is so expensive, and it may seem that way. However, down the road I'll be saving loads of costs by not needing open heart surgery because I have heart disease, or receiving several rounds of chemotherapy for the cancer that spread to somewhere else in my body. It's going to be worth it in the long run--not having to spend countless days in the hospital and instead, actually being able to enjoy and live my life until a very old age. I'm not going to say that it won't be hard because it definitely can get very hard at times, especially being a college student in all. It is quite difficult to find places on campus that support my eating habits and that I actually feel like I'm meeting my nutrition requirements. Thank goodness Whole Foods is only a short car drive away.
Anyways....I'm going to get back to studying! I've got to get a lot done because I'll be celebrating my 21st birthday this weekend and don't want to have to worry about my studies then! WOOHOO

Happy Thursday Tumblrs! Wanted to share my breakfast with you guys since I rarely have time to make one as delicious as this! I'm usually running out the door to class and lucky if I get a coffee in. But this morning I woke up extra early! (only to fall asleep on the couch 2 hours later haha) Here is what I had: --smoothie with kale, banana, almond milk, and pb --oatmeal with cinnamon and vanilla When I don't eat a solid breakfast it leads me to endless snacking and sometimes it isn't vegan or plantbased! My roommates will bake endless amounts of sweets and it's hard to resist when it's the first thing you see when you walk through the door. Gotta stay strong though and remember how good plant strong foods are for me and my health! :)

Kale Salad for lunch today!!! salads are the best and SO EASY... you can add in so many delicious fruits and vegetables to get your nutrients, as well as nuts and seeds and even crumbled veggie burgers! I can get really crazy with my salads (haha) I always tell people the more toppings the better! :) Seriously, I just add in whatever fruits and veggies I have on hand, nuts and seeds leftover from trail mix, veggie protein/tofu...the list goes on! I always want to make sure I'm not skipping out on any of my nutrients for the day--especially now since I'm trying to stray away from depending on supplements to get my daily nutrients--so making these salads really help me out! TASTE THE RAINBOW!
Ingredients in this salad:
kale
sliced apples
white onion
tomato
black beans
red, yellow, & orange bell peppers
ground flax seed
Annie's greek goddess dressing
Absolutely delicious! What did you eat for lunch today?
