 Ingredients
Broccoli florets
Olive oil
Salt
Pepper
Preheat oven to 425°
Toss broccoli on baking sheet with drizzle of oil, salt, and pepper.
Roast for 15-20 mins.

Really F*cking Good Rice
 Ingredients
1 tbsp butter
2 scallions
1/2 inch ginger root
1/4 cup jasmine rice
3/4 cup water
Big pinch of salt
Melt butter in small pot over medium-high heat.
Add sliced scallion whites and grated or minced ginger. Cook until fragrant (1 min).
Add water, rice, and salt. Stir.
Bring to boil then reduce to low.
Cover and cook for 15-18 mins.

Spicy Buffalo Tofu Wings
Ingredients
Super firm tofu
Cornstarch
Almond milk
Panko style bread crumbs
Hot sauce
Cayenne seasoning
Salt
Preheat oven to 425°
Slice tofu into (14) strips
Roll slices in cornstarch then dip in milk
Cover slices in hot sauce
Roll slices in bread crumbs
Season with cayenne and salt
Place on baking sheet
Bake for 25 mins then flip slices over and bake for additional 10 mins
Serve with ranch dip
(Wings can be reheated/recrisped in the oven)

Ingredients
4-5 avocados
1/2 an onion
1/2 a tomato
1 jalapeño
1-1 1/2 limes
Salt
Pepper
Dice vegetables
Add avocado
Add lime juice
Mix
Season to taste

Acorn Squash Soup
Ingredients
1 skinned and cut acorn squash
2 onions
5-6 cups of water
1/2 pint of heavy cream
1 tbs of cooking oil
2-4 cubes of bouillon
Salt
Preheat stove to medium heat
Add cooking oil and diced onions
Stirfry for 3-5 mins
Add water, squash, and bouillon
Mix and boil
Remove foam that starts to accumulate at the top
Turn off stove, cover with lid and wait 25-30 mins
Blend then cook on high
Add heavy cream and stir
Season to taste

List O’ Tips
Remember that vegetables covered in butter, salt, pepper, cheese, etc. are still better than nothing. Hate the taste of vegetables? Me too. So bathe those brussel sprouts in butter and coat them with salt and pepper; better than nothing. If you’re too depressed to eat healthy and want to order pizza, get one with vegetable toppings.
Add chia seeds to almost anything to make it more filling. Very helpful if you’re trying to cut down on over eating.

Ingredients
1/2 cup of Oatmeal
1/2 cup of water
2 tbs of milk
1 tbs of honey
2 tsp of cinnamon
Pour water and oats into bowl
Microwave for 1 1/2-2 mins
Add milk, honey and cinnamon
Mix
(Optional: Butter, apples, strawberries, bananas, blueberries, chia seeds)

Lemon Pepper Fish
Ingredients
Tilapia or salmon
Mayo
Lemon pepper
Lemon
Preheat oven to 350°
Thaw fish and place on baking sheet
Spread thin, even layer of mayo on fish
Squeeze on lemon juice
Season with lemon pepper
Bake for 25-30 mins or until fish flakes with fork

Ingredients
1 box of rotini pasta
Cooking oil
Water
1 1/2 jars of roasted garlic alfredo sauce
Steamed broccoli
Salt
Pepper
Boil water
Add oil and rotini and cook for 10 mins
Add steamed broccoli
Heat up sauce and pour on pasta
Mix
Season to taste

1 can of red kidney beans
1 can of white kidney beans
30 oz of tomato sauce
1 onion
2 jalapeños
1 zuccini
1 cup of vegetable stock
3 cloves of garlic
2 bell peppers
Cayenne
Cumin
Papricka
Oregano
Salt
Ground pepper
Preheat stove to medium-high heat and add oil
Dice vegetables and put in pot
Stirfry 3-5 mins
Add vegetable stock and canned goods
Mix
Season to taste
Simmer for 5-10 mins
(Optional: Chives, sourcream, saltine crackers)
