Take it off the heat and let it sit for 30 minutes. Pour the milk with mint into a bowl and strain it. Press on the mint leaves to get all the flavor out. Put the mixture in the fridge for at least 4 hours, or until it is completely cold. Put the chilled mixture into an ice cream maker and churn it as directed by the maker's maker. Baste the brisket with the bourbon-peach glaze every three to four hours, or until it is tender.
