Breakfast Quiche with Coconut Milk
Today, I made a quiche for my daughter. It was one of those quick and put something together kind of a dish.
It had onions, eggs ( of course), bacon, sausage, ( because I had a little bit left of each, and thought, Why not? ), and lastly, coconut milk, because I had no cream, and had no milk. Leftovers can be a life saver.

When I was a kid, my sister and I watched sometimes watched our mom make tea from the common tea bags. Who remembers Lipton, or Red Rose? that is a memory deeply engrained, and could never pass a box in the store and not have fond memories flood in. I liked tea. My Dad did too. It was a fancy and exotic drink, that I always associated with fancy tea parties I saw on TV or in books. It was all the same to me, and thought tea bags were the only means to have tea.
Fast forward some quite a few years…
I started working at my local tea shop, and there, my whole perspective of tea changed. For the better.
It was there I learned and still learning in fact, that drinking tea brewed from the whole leaf has a unique flavor quite different from the tea bags. What I mean by that is the tea leaf is intact and relatively whole:

This is how the tea looks like after it has been made into the tea it was intended for. Don’t they look nice? (The Earl Grey has Bergamot flowers added to it). Most tea bags don’t have leaves like this, but rather the much smaller , broken up version of this. Is this a bad thing? no, am I knocking tea bags? certainly not. They have their place of course, but if you ever tried a cup of tea brewed in these leaves, I guarantee you will taste a marked difference. A richer, more full bodied flavor from it’s counterpart.
So, how do you brew it if there is no tea bag?
You will need water, a cup or teapot, tea and an infuser
Easier brewing starts with an infuser.

The infusers tough not essential, makes brewing your tea easier, and a lot less mess!
Nobody wants to be fishing loose wet leaves out of their brew.
Start with these steps: ( the tea portions, water temps and brewing times vary by tea variety, but here is a basic guideline to follow) Here they are using the Dragon Well.
1 TSP – 1TBSP of tea
Pour your water until leaves are well covered
Brew 3-5 minutes. Cover your leaves as they infuse. Here is what they look like.
Remove the infuser before pouring
