BIG NATURALS BOBA (inspired by @wizardsorbet)
5 servings, vegetarian
WHAT YOU'LL NEED:
simple syrup:
1 cup sugar
1 cup water
milk:
1 13 oz. can coconut milk (shake it)
2/3 cup sweetened condensed milk
butterfly pea tea:
1 cup dried butterfly pea flower buds
OR 5 tbsp butterfly pea flower powder (blue matcha)
2 cups water
boba:
1 cup instant boba pearls
8 cups boiling water
as much lychee jellies as your heart desires (this is personal preference. i love lychee jellies but they're kinda hard to get, so if you can get your hands on em put them in EVERYTHING)
WHAT YOU NEED TO DO:
simple syrup:
over medium heat, add sugar and water into a pan or small saucepot.
heat until just boiling, then immediately take off the heat and let cool to room temperature. set aside
milk:
whisk coconut cream and condensed milk together until smooth
set aside, you'll want this room temperature so that the condensed milk dissolves easily
butterfly pea tea:
bring the 2 cups of water to a boil in a pot
add the pea flower buds/powder and let steep, covered, for 15 minutes
strain and put it in the fridge to cool
you can do this with a kettle, which just means to put the buds/powder in a bowl, pour boiling water over it, steep, then strain
booba:
bring water to a boil in a medium sized pot
add your boba, stir once to make sure they don't stick to the bottom
wait for all the boba to start floating
let boil for one minute, then cover and let boil for 2 more minutes
ASSEMBLE!
add boba and/or jellies to the bottom of your glass
add the milk
add as much simple syrup as desired, there's already condensed milk in there so i would only add a tablespoon or two
add the butterfly pea tea, stir if you want, that's what i would do
finish with a big ol straw and
BAM you've got some delicious boba

If you crave bubble tea and wish you could have it anytime you want, you can. Its easy to make the tapioca pearls at home and the rest of the drink is typically a mixture of fairly standard beverages and sweeteners.
Bubble tea, famous for those pea to marble sized balls of tapioca known as pearls or boba, was invented in Taiwan in the 1980s. Originally a blend of black tea, sweetened milk and small tapioca balls like those normally used in pudding; most bubble teas today blend together a recipe of black or green tea along with fruit or milk and the larger boba diameters which have become the preferred pearl size.
Because of the huge range of color and taste combinations, bubble teas can quench your thirst, theme your party and if you choose to spike your sip, they become cool cocktails like these spotted cheetah, jaguar and leopard drinks. Perfect for tailgate parties where you want to match sports team colors because similar to using colored ice cubes in your drink, tapioca pearls come in a rainbow of colors as well.
Where Can You Buy Tapioca Balls?

You can buy tapioca pearls online or find a local Asian market that specializes in Chinese food products that carries them. Depending on the popularity of bubble tea in your area, boba balls may be more widely available and at a variety of sources other than just ethnic specialty stores.
Black tapioca pearls are arguably the most popular, but white boba and a variety of other colors including assorted are available. The ones used for this tutorial were the large dark brown marble sized boba with a whitish surface shown to the right which blacken up when cooked.

How To Cook Tapioca Pearls
Ingredients:
1 cup uncooked tapioca pearls
10 cups water
Preparation:
Add the water to a 3 quart or larger pot and bring to a boil. Pour the tapioca balls into the water slowly and stir gently. The boba pearls will initially sink to the bottom of the pan and then begin to float on the top after a few minutes. Once the tapioca pearls are floating, turn down the heat to a medium setting, cover the pot with a lid, and let simmer for five more minutes.
When done, carefully scoop out or pour into a colander to avoid cutting or tearing the spheres and rinse in cold water to stop them from cooking any further. Recommend adding some simple syrup, which most home bar owners will already have on hand, to help keep them fresh and soft a little longer. Honey works well too. Whether sweetened or not, tapioca pearls are best served within several hours after cooking.
Storage Tips:
Most bubble tea recipes call for some sugar or other sweetener like condensed milk or fruit juice to be added anyway, so this will not normally detract from any drink recipe. If you prefer not to add any though, keep the cooked tapioca pearls stored in a bowl of enough water to cover so they don't dry out.
The boba should last a couple days stored in the refrigerator this way, but will gradually harden well past the point of being the consistency of soft gummy bears and start to become crunchy. To soften again, at least partially, add hot water or microwave briefly until chewy.
Tapioca cooking times may vary depending on ball size, brand, style, etc. Preparation is generally the same though. Be sure to follow any specific instructions accordingly.
How To Make Bubble Tea
Classic Bubble Tea Recipe:
2 oz cooked tapioca pearls
4 oz strong black tea (chilled)
4 oz milk
sugar to taste
Add the milk and tea to a cocktail shaker with ice cubes. Shake well and pour into a parfait, collins or other large glass with the tapioca balls already inside. If you soaked your boba in simple syrup additional sugar may not be needed or at least not as much anyway.
Can You Substitute Sago For Tapioca In Bubble Tea?
Sago, also known as sabudana in India, is a starch typically made from tropical palm stems and is similar in appearance to white tapioca pearls when the flour is balled into a paste and boiled. Many bubble tea vendors offer sago pearls as an option in their drinks, so it can be substituted. Sabudana has a different texture though that is not quite as springy when chewed and has more of a pasta taste than tapioca pearls (recommended) which are fairly neutral in flavor.
Other variations include jelly cubes, mung bean paste, taro balls and many more. Although not quite a meal like these Sandwich Cocktails and some Bloody Marys are, there is normally more to eat with bubble tea drinks than just a garnish.

Key Lime Pie Ice Cream
I knew I was doing my job right at MilkMade when I could make a recipe for a flavor of ice cream that I didn’t like, but I still knew it was good. That’s what Key Lime Pie was for me. Though not MY favorite flavor, it definitely was one of yours. It’s one of the most lauded Seasonal ‘Screams we had and the second most requested recipe. 
The secret to our key lime pie ice cream is simple: Steve’s Authentic Key Lime Pies. If you know, you know. Steve’s is a Brooklyn-based producer of truly authentic key lime pies. Steve and his wife Victoria run a small operation at the very end of Van Dyke street, right on the water in Red Hook, Brooklyn. In front of their bakery they have a small (smaller than MilkMade small) take-out counter where you’re transported to the Florida Keys the moment you walk through the door. The decor is as authentic as their pies, which they make using only fresh squeezed key limes they source from Mexico (where most key limes are grown now, but Steve is trying to put some key limes back in the Keys). Since 2011, when I first released this flavor for Members, we’ve partnered with Steve’s to source not only their amazing pies, but also their fresh squeezed juice. They made it easy for us. 
Steve’s is open for takeout and soon will resume it’s online shipping across the US. Because I’ve just relocated to California to be near family, I couldn't get my hands on a pie so I made this flavor without the mix-in (but the recipe for Steve’s Key Lime Pie is included below). 
Definitely use key limes if you can get your hands on them - they are less acidic, a bit sweeter, and more aromatic than regular limes. And DEFINITELY juice your own limes either way (as annoying as it is with the tiny key limes!). As Steve says, “no bottled mystery juice.”  Here we go:

Ingredients:  2 c cream 1 c milk 1 c sugar 4 egg yolks ⅛ tsp salt ¼ c lime juice 2 tsp lime zest
Instructions:  1. Cook ¼ c of the sugar, the lime juice and zest over medium heat. Bring to a boil, stirring until sugar has dissolved. Transfer to a bowl and allow to cool.
2. In a separate medium saucepan, heat milk, cream, remaining sugar (¾ c), and salt over medium heat, stirring regularly until sugar is dissolved. 
3. Separately, whisk together the egg yolks in a small bowl. Once the cream mixture begins to simmer, gradually pour some (like ¼ cup) of the mixture into the egg yolks, whisking the yolks constantly as you pour. Then scrape the warmed yolks back into the saucepan, whisking constantly.
4. Cook over low heat, stirring constantly and scraping the bottom until the custard thickens enough to coat the spatula or it reaches 160°F.
5. Pour the custard through a strainer into the bowl of lime simple syrup. Pour a little at a time and whisk thoroughly until incorporated. Place bowl over an ice bath and stir until cool. Refrigerate to chill thoroughly (8 hrs or preferably overnight). 
6. Whisk then strain the custard to remove lime zest. Push the zest with your spatula to remove any excess liquid. Freeze the base in your ice cream maker according to manufacturer’s instructions. 
7. Scoop ice cream into a freezer-safe container, adding chunks of frozen key lime pie (about 5 pieces per pint). Place in freezer to set (about 4 hours).

Ingredients:  Crust:  8 oz graham crackers, crushed 4 oz butter, melted
Filling:  1 c canned sweetened condensed milk, chilled 4 egg yolks*, cold ½ c key lime juice, cold
Instructions:  1. Preheat oven to 325 degrees F. 
2. To make the crust, combine the ingredients in a bowl and mix well for 2 minutes. Mold the mixture into a greased, 10-inch pie shell and bake for 8 minutes or until golden brown. Remove the crust from the oven and allow to cool. 
3. To make the filling, combine the milk and the egg yolks and mix well. Slowly add the key lime juice and mix just until incorporated. Do not overmix or the pie will not set-up in the refrigerator. Pour the mix into the pre-baked pie shell and refrigerate until set. 
4. For the ice cream mix-in, place pie in freezer for at least an hour until hardened. Remove from freezer and cut into 1” cubes. Place in freezer until ready to mix-into ice cream.
*Consumption of raw or undercooked eggs, shellfish and meat may increase the risk of foodborne illness.
Some notes (and pics) from Diana:  * With my very old school juicer, it took about 15 key limes to yield 1/4c of juice (I ended up hand-squeezing them, check out this juicer). It took just shy of 3 key limes to yield 2 tsp of zest.

* To zest your key limes, you’ll want to use a very fine grater - a microplane is perfect. Make sure you do not zest too hard to get to the rind. You want just the lime skin, the green part. Example of the right (left) and wrong (right) way is below.

* Making ice cream with fruit can be difficult because there is so much variability with every piece of fruit. When I made this recipe at home, I tasted the base after combining the lime simple syrup with the custard. It didn’t taste quite there (and I knew it wouldn’t get there - I’ve tasted lots of key lime bases!). So I ended up adding whatever zest I had left from my three zested key limes (an additional ~1/2 tsp whisked right into the base). It worked out great though was very close to being too bitter (because of too much zest). With fruity flavors, I recommend tasting as you go and adjusting your recipe based on taste. Keep in mind the base should always taste a little too sweet and a little too strong in flavor. Once frozen, the sweetness and the flavor will not be as strong.

Hi i really like your tea posts! You make them sound so delicious and now I'm really curious how they taste. We're not particular at all about our tea here and in my household we mostly buy those lipton tea bags to make milk tea with. We'd just steep 6 tea bags in 5 cups of boiled water that was let cool for around 1-2 mins in a teapot (serves around 4 to 5 people) and add in 5 tablespoons of condensed milk from a can. And we don't take out the bags, we'd usually just leave them in the pot. We don't add any additional sugar either since the condensed milk is already incredibly sweet. Anyway, how would you rate our milk tea? Some people call them Thai Tea bc I'm guessing thai people drink them that way? Idk we're not even thai though lol. Oh and traditionally (or per your preference) how are teas consumed? Do you drink them plain or do you add sugar, milk, or any other sweetener? Bc i can't really drink unsweetened tea but i do want to start drinking them bc i need to cut back on my sugar orz. What type of tea would you suggest to a total newb? Oof sorry for the long ask tho! i’ve never had your milk tea! if you like it, i’m sure it’s fine. tea is about fancy schmancy terroir and processing and storage and science as much as it is about culture and comfort and love and tradition. it wouldn’t be right or fair for me to apply snobby metrics to something comforting, if that makes sense. now, if you DISLIKE tea, i will happily point you to a direction to explore because tea is so diverse! but that doesn’t seem like the case. 
i associate thai tea with a certain spice profile and bright orange color. but i’m not thai and it’s not my tradition so i don’t know much about it. definitely condensed milk helps make it yummy though!
do i drink my teas plain or with stuff? depends on the tea and my mood. i drink a LOT of tea without cream or sugar. i brew my tea in brew baskets or teapots, in a gaiwan, or in a mug. in brew baskets or a teapot, i’m going for large volume shorter infusions. in gaiwan i’m going for short controlled infusions and small volume. i’m usually paying more attention to the tea when drinking out of a gaiwan. i also tend to drink all my most expensive teas by brewing in gaiwan to really get to know them. and some teas are really good and solid but not TOO expensive so i’ll add  4-6 g to the bottom of a mug, add a bit of cold water, add boiling on top and drink it out of the mug. when the liquid gets to about 1/2 to 1/3 of full, i’ll add more water. my friends and i call this lazy ‘leave the leaves in the mug’ method “Grandpa style.” i also brew tea in a pot or a basket and then add milk and sugar. usually only to black teas and usually only to blended/flavored black teas (i’m looking at my lychee blend or some sort of fruity blend from harney or earl grey). if i’m feeling particularly sweet-toothed i’ll steam the milk and make a latte. i’ll even add simple syrup! it’s yummy! it’s like dessert!
as for what’s good for a n00b? hm... 
if you’ve been drinking black tea all your life, try gaowen from hugo teas. it’s earthy and chocolatey in flavor  https://www.hugotea.com/collections/tea-tisanes/products/gao-wen
if you like flowery things, find a good jasmine tea. i think harney & son’s is passable. and hugo tea (same company as the gaowen) has one i’m eyeing. 
if you like light refreshing teas, i would give a taiwanese oolong a try. my go-tos are https://floatingleaves.com/ and https://beautifultaiwantea.com/ 
i also recommend the baozhong from both floating leaves and bttc. and bttc’s twisted green is really good too. it’s a slightly sweet green tea. taiwan sourced in the style of biluochun.
i drink all of these without milk or sugar. 
if you find the teas are too bitter or astringent, brew with cooler water. sometimes adding a bit of room temp water to some tea leaves for 30 seconds before adding the boiling water helps.

2.Take a heavy bottomed pan, add the sugar and water to it. Place it on medium heat and bring it to boil. Once the sugar has dissolved completely, turn the heat down and allow the mixture to boil for a few minutes till it reaches a one-string consistency.
3.To test if it has reached the right consistency, transfer a few drops of the syrup on a clean plate, allow it to cool for 15-20 seconds and test it for the formation of a single thread between your thumb and index finger.
4.If the syrup has reached single thread consistency, transfer the ground cashew nut powder into the syrup and stir continuously for 4-5 minutes. The mix will gradually turn into a thick paste.
5.Take the mixture off the heat and allow it to cool to room temperature. As soon as the mix cools down slightly, grease your palms with a dash of ghee and start kneading the mix. Knead till it is smooth, uniform and like a dough.
6.Next, spread a sheet of butter paper on the counter top. Place the dough on it and roll the dough out with a rolling pin to a thickness of 5-6 mm, evenly.
7.Place a saucepan with water on the heat. Place a heatproof bowl over it and melt the chocolate. The heat generated in the boiling water beneath will melt the chocolate gradually. Ensure that the boiling water does not touch the heatproof bowl.
8.When the chocolate has melted properly, pour it over the rolled kaju katli dough and spread it evenly with the help of a spatula.
9.Allow it to cool for some time and then transfer it to a surface and refrigerate it for 15-20 minutes/

How to Make Anjeer Kaju Roll recipes super suvai tamil
1.Grind 800 grams of cashew nut and add it in a heavy bottom pan or kadhai. Then, add in 250 grams of sugar and cook for about 5 minutes on a slow heat. Take out and keep the mixture aside. It will look like a thick cashew nut paste.

I have always been crazy about cheesecake, especially strawberry and vanilla cheesecake to be exact. Everything comes together to create the perfect treat for your pleasure.
This No bake Strawberry Jelly Cheesecake Slice recipe is perfect for those who like all things sweet that acquire a variation of flavours. I admit, not everyone has the same taste and enjoy the same things but each time I prepare this it’s gone in a flash.
To be honest, I actually prefer baked cheese cake, with passion fruit and caramel being my favourites. During those dreadful winter months those might be a good alternative but for now when we can still enjoy nice weather, I want to share my good old summer fridge cheese cake recipe with you.
The very first time I fell in love with strawberry cheesecake was one evening at one of the functions at our home in Cape Town. My family was big on entertainment and catering but for this event, everyone had brought something along. I can’t exactly remember what the occasion was but I can distinctively remember the moment my eyes fell on the Strawberry Jelly Cheesecake dessert.
What first caught my attention was the presentation of it. It was beautifully decorated with fresh strawberries and heavy cream and it just looked stunning. When I went ahead and helped myself to a slice or two, the first thing I tasted was the firm biscuit base that had a cinnamon flavour and the smooth texture of the creamy filling. It tasted just as good as it looked. What good is something looking  great but tasting terrible, right? Unfortunately, I have no idea who made the cheesecake that day but I can definitely say that whoever it was did a fantastic job.
This Jelly Cheesecake Slice is smooth and velvety in texture, with a sharp, rich taste. I have to say, this recipe is more of a luxurious kind due to the mascarpone being added, but yet so simple as well. Some ingredients can be left out but the recipe as is, is delightful.
Top tips for the best Jelly Cheesecake Slice filling and biscuit base
For this particular Strawberry Jelly Cheesecake recipe, I add a few additional ingredients to enhance the flavour such as vanilla extract/essence, mascarpone cheese, cinnamon and lemon zest. For me, this creates the kind of flavour that I like. The lemon and lemon zest, along with the sugar content of the other ingredients creates a surge of flavour that you simply cannot resist. For the topping, I use only strawberry jelly and or fresh strawberries and serve it in different ways if I’m feeling a bit creative.
Be sure to use the cream cheese and the mascarpone cheese are at room temperature before proceeding to mix as this will also result in clumps.
Be sure to whip all ingredients thoroughly to ensure a smooth outcome. Failing to whip ingredients together properly will result in clumps.
If you want to achieve a sweeter taste it may be better to reduce the amount of lemon juice added.
If you are looking to find a cheaper option than the mascarpone cheese, you may use full fat creamed cottage cheese or full fat cream cheese with the condensed milk will to give you fabulous results as well.
Be sure to add enough melted butter to the biscuit crumbs for the base. Add additional melted butter if needed and thoroughly work it through to avoid a crumbling base.

Why add Mascarpone cheese to the Jelly Cheesecake Slice filling
Well, Mascarpone was used for many things cooking related in our home but I was not a fan of it till my trip to Istanbul in 2017. Whilst in Istanbul, we went on a few fantastic food tours. Our first food tour featured the type of breakfast the Turkish people enjoy and for those who don’t know, you cannot travel to Turkey without enjoying the velvety clotted cream bathed in a sweet sweep of honey known as bal kaymak. I literally could not get enough this stuff while we were in Turkey.

I was a bit obssesed and when I got back to Cape Town I had an unusual craving for it and since we couldn’t find kaymak, I remembered mascarpone. I got me some mascarpone and swooped a bit of honey over it on crispy toast and that got my craving slightly satisfied. It was like Istanbul all over again. I use mascarpone quite a lot and especially in desserts. I use it for waffle topping, fridge tarts, flap-jack toppings and now, cheese cake. In our home you will always find mascarpone. It’s just one of those things that we always have.

This No bake Strawberry Jelly Cheesecake Slice is an uncomplicated recipe that results in a lush creamy dessert that's sets beautifully in the fridge.
Chese cake base
300 grams Tennis biscuits or coconut shortbread biscuits (approximately 1 1/2 packets)
70 grams unsalted butter, melted (approximately 5 tablespoons)
1.25 ml cinnamon powder (approximately 1/4 teaspoon)
Cheese cake filling
140 grams mascarpone cheese (approximately 60 ml or 4 tablespoons)
250 gram full fat cream cheese or smooth cottage cheese (approximately 1 tub)
250 ml sweetened full cream condensed milk (approximately 1 tin)
60 ml lemon juice, freshly squeezed (approximately 4 tablespoons)
5 ml lemon zest, finely grated (approximately 1 teaspoon)
5 ml vanilla extract (approximately 1 teaspoon)
Strawberry cheese cake topping
80 grams strawberry jelly granules (approximately 1 packet)
250 ml boiling water (approximately 1 cup)
How to make a cheesecake base
Finely crush tennis biscuits with a rolling pin or food processed and add the melted butter. Combine the two ingredients until it is like wet sand with no big pieces.
Add the cinnamon powder and mix to combine.
Press the buttery cookie crumbs into the base of a serving dish with the back of a spoon or the flat bottom of a measuring cup and place into the fridge to chill until required.
How to make cheesecake filling
Mix the strawberry jelly granules with 1 cup of boiling water. Set this aside to cool completely at room temperature, until required.
In a medium size mixing bowl, beat the mascarpone and cream cheese for 3-5 minutes until smooth and fluffy.
Add the condensed milk and vanilla extract to the cream cheese mixture and beat for a further 5 minutes until it is combined.
Add the lemon juice and lemon zest and beat for another 5 minutes.
Pour the filling mixture over the chilled biscuit base and smooth the surface.
Place in the refrigerator to set for at least 30 minutes.
Pour over the cooled strawberry jelly and place back in the refrigerator, allow to chill for 4-6 hours to set completely before serving.
When ready to serve cut the cheesecake into squares and serve with a garnish of fruit or whipped fresh cream.
