Innovation in the restaurant industry is crucial – with the explosion of culinary greatness, owners and chefs have to create something that is nothing short of incredible. That, however, does not necessarily mean creating dishes that are overly experimental and complicated. And each component of the restaurant from service to the menu to the bar to the atmosphere is equally important as the last.

Moreover, with the rise of technology there is simply no replacement for a restaurant experience. “Restaurants are the stages for all of life’s highs and lows. First dates, last dates, anniversaries, birthday parties, catching up with an old friend, when you have the worst day of your life and you just need to get drunk at the bar.

There’s something very human about restaurants. No machine is going to stand in front of me handing you a hot plate of food asking, ‘can I get you anything else?’”

The primitive shipping containers provide that community feel. Nestled the corner of 25th and Larimer St. nestled between downtown Denver and RiNo house one of the hottest restaurants the city has ever been privileged with – while the goal was not to be everything to everyone, it is something for everyone.

Whether you’re unwinding from a long day at work and a $2 can of Utica is calling your name, or you’re showing your date a little bit of class with a handcrafted cocktail, that’s what it’s all about. Work and class. Simplicity and complexity.

Work & Class (2500 Larimer St.), born and raised by three hard-working entrepreneurs; Tony Maciag, Delores Tronco, and Dana Rodriguez, have created a menu and a space that favors every individual, no matter the occasion, no matter the background. Because, what better way to bring people together than exceptional food and stiff drinks?

Delores Tronco’s drive and tenacity as a young entrepreneur echoes through every crevasse of Work & Class’s small walls and the willingness to leap towards risk helps customers identify with their dining experience – something that is rarely considered in the restaurant industry.

“Work & Class is the story of three people’s lives. Tony, Dana, and myself. We are Work and class. People can relate – I can’t tell you how many people have come up to me and said, ‘it’s so cool you have a Latina woman executive chef’ or, ‘wait, your dad is from New Jersey and your grandparents only have a third and fifth grade education?’ I signed my house to the bank. We all put in our life savings, we laid it all on the line…”

And was it scary? “Absolutely. If you don’t have a stomach for risk, you can’t be an entrepreneur. Risk and entrepreneurship go hand in hand.”

The story of Work & Class is inspiring enough, especially when the sheer success and bustling crowds are considered. But, a story of success in the restaurant industry is nothing without the product. The food (and chefs) at Work & Class is what brings over 500 customers in on a Friday or Saturday night, the drinks (and bartenders) at Work & Class are why their Early Release Program (happy hour) is bustling the moment doors open at 4:00 pm. The service is top notch and with an industry with a high turnover rate, W&C has the same staff that they opened with. “It’s a top priority to retain staff.”

The 10-second spiel of what Work & Class is remains simple – “square meal, stiff drink, fair price.” Start with a simple golden beet and fennel salad, or indulge from the moment you sit down with creamy shrimp and grits. Save room for the main show, though – meat. Lots of it, slow-cooked, braised, and it will all melt in your mouth. With everything from a classic rosemary rotisserie chicken, to roasted goat, and citrus-mustard braised short ribs the choice is nearly impossible. Which is why W&C lets you choose them all – with ¼ lb, ½ lb, and 1 lb options there’s no reason to leave hungry.

Wo(man) cannot live on meat alone (well, that’s debatable) and with over 10 sides ranging from simple sweet potato fries to a sweet and savory brussel sprout, bacon, and apple hash any choice will pair perfectly with the protein you end up with.

It’s all relatively simple food with a creative twist – everything else aside, this could be the solitary point of success for Work & Class.

“My goal is that if someone walks into Work & Class and they have a great time, and they were to tell a friend about it, they could very easily describe their meal in a way that made it real to someone else. If you go to a high-end restaurant with a very experimental menu and the chef serves you something made with octopus, frisee, honeysuckle, or whatever … it’s really hard to describe. Even if it’s amazing.

The reality is, it has to sound amazing. And the actual plate has to be terrific.”

Something happened for the first time today.

After a long day of class and work, I got off the bus and was walking home. For the first time ever, I genuinely considered dropping everything and going away to travel. 

Shit I have no money though.

It's gonna happen, whether it be next summer or maybe a couple years after I graduate, I need to make it happen.
