Cheers to another Wine Wednesday! Yes, yes, I am still sharing with you my tasting experiences with Villa Parens because these wines are delicious!⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Todaqy's pick is the Gran Rosé traditional method sparkling from 2015 made with 100% Pinot noir grapes. Dosage zero means that the wine is as dry as it has been after the second fermentation, no extra sugar added with the dosage just after the degorgement. (Don't worry if there are some expressions that you don't understand, I will help you out this week to know your sparklings better!)⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This rosé has a medium orangy color with salmon hue and very fine bubbles. On the nose raspberry, blackberry and wild strawberry dominates with roses and violets.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Dry wine as I already mentioned with high acidity, medium plus alcohol and medium body with creamy perlage and flavours of raspberry, orange and grapefruit in the medium plus lenght finish.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Very good quality sparkling which best to drink in the next 5-10 years when it is chilled to 8-10°C. We are still discovering a few wines from Bordeaux🇫🇷, I hope you don't mind! In today's episode we are going to stay on the left bank just traveling down a little bit souther near Pauillac to taste a wine from the Chateau Hourtin-Ducasse @hourtinducasse 🍷. ______ This is a 2016 vintage (which was a very hot☀️ one!) and they have blended 51% Merlot🍇, 38% Cabernet Sauvignon🍇, 10% Cabernet Franc🍇 and only 1% Petit Verdot🍇 in this cuvée. As per usual, please check out the most important things from the winery and this wine🍷in my stories🔝 and highlights🔝, now let's jump on to the tasting notes✍! ______ This 🍷 has a lovely medium deep ruby colour with a medium plus viscosity💧, thanks to its 13,5% ABV. On the 👃 I can smell aromas of ripe fruits, such as cherries🍒, plums🍑, cassis, blueberries with violets and mushrooms🍄. Lots of spices like vanilla, smoke, tobacco and thym. ______ On the 👅 the wine is dry with high acidity, medium plus tannins, well-integrated medium plus alcohol. It has a full body with flavours of ripe cassis, blueberry, plums🍑, coffee☕, liquorice and a smoky character in the long finish. ______ In my opinion, this is a very good quality wine, drinks well now if you like big tannins, but I would wait📈 for the tannins to better integrate in the next 5-10 years at least. Best served at 15-18°C. ______ I would pair it with grilled meats🍖 and rare beef🥩, carré d'agneu and with some soft cheeses🧀. ______ Do you prefer big tannins or would you cellar a wine🍷 longer to soften them a little bit?
