Confession

I ate chicken wings the other day! They looked so damn good...

In the back of my mind all I could think about was how I made it this far and haven’t eaten any meat...SMH

I am human...I have to display more self control because all I want is to not eat meat anymore...and become a vegan in the near future!

I Am A Vegetarian

So I am coming up on close to 2 months of not eating meat...Feeling myself! I watched the movie “What The Health” and that solidified my decision to become one.  My sister has been a vegetarian for quite some time now...and like her I started the same way.  At first I gave up pork...which by the way was pretty difficult (couldn’t picture my life without griot being that I am Haitian) and what’s life without bacon? Right??? Well it turns out to be a good life so far! I eat pretty clean now...farm to table if it’s not in season I pretty much am not eating it! And found different alternative to get that meat feeling!

Here’s a quick recipe...Spaghetti & Meatless Meatballs

I baked some eggplant drizzled it in olive oil and some salt. Baked for about 30 minutes till it was tender.  I pulled it apart kept the skin on. (put to side)

I purchased some meatless meatballs from Trader Joe’s (soon I will start posting pictures...I promise) sauteed in pan with some garlic, olive oil and some crushed red pepper flakes.

Cut up some peppers and mushrooms while meatless meatballs were cooking.  Put everything together and simmered on low heat till peppers were tender.  I love the spaghetti sauce from Trader Joe’s, threw that into mixture and put about a tablespoon of honey in it...kinda like my sauce to be a little sweet.    

Boiled some pasta.  and bam just like that! Vegetarian Spaghetti & Meatless Meatballs! YUM!
