I have long promised this list, so perfect timing! Thank you very much for this question! Allow me to introduce you to:
Cale Henituse's Crime List
(Just for the fun of it, I tried to give a different example for every single one of these. Some events repeat, but not the crimes!)
1) Accessibility of Records for Tax Department
Cale looted significant amounts of money from the Magic Tower and many other places, without leaving any legal trace.
2) Affray
Multiple occasions, like pretty much everything that happened in the Molden Kingdom.
3) Aggravated Assault
Cale rarely gets physically involved in a fight, but I think suddenly strangling Prince Adin qualifies.
4) Aggravated Burglary
Every single time "Real Arm" is in business.
5) Allowing Dog or Cat To Be a Nuisance
How else would you call encouraging your animal shape-shifting kids to be involved in criminal activity? Also Fluffy the Puppy was under Cale's command even if he technically belonged to Princess Jopis, I say it totally counts.
6) Ammunition – Possessing, Acquiring or Carrying
Cale intentionally pocketed magic bombs from the Plaza Terror Incident and used them later on.
7) Animal Cruelty
...Does Cale subjecting On to his "nice act" in front of Litana counts? Oh it definitely counts. That poor child.
8) Armed Robbery
That time Cale & co. robbed the Mercenary Guilds in Leeb-An City, for instance.
9) Arson
Setting the Wind Island on fire.
10) Assaulting or Resisting Police
That time Cale & co. went to Sez Kingdom. Pretty sure the knights trying to stop them from kidnapping the king counts as "resisting law enforcement".
11) Being Disguised With Unlawful Intent
Priest Cale in a nutshell.
12) Blackmail
That time Cale talked to Antonio Gyerre.
13) Breaking and Entering
Cale coming to the Sekka Estate.
14) Careless Driving
Debatable since a fantasy world doesn't own cars – but. I count Cale breaking through walls of a maze on a mother-effing Stone Imugi as "irresponsible driving". Just think of what kind of example you're setting for the kids, Cale!
15) Carrying a Loaded Firearm in Public
Cale has Raon following him everywhere, so.....?
16) Carrying Out Plumbing Work Without License or Registration
Cale has an underground villa in the Forest of Darkness. I'm pretty sure whatever construction work they did there would count as illegal.
17) Carrying Out Work Without a Building Permit
Cale had Dragons teleport an entire castle into the Forest of Darkness. Yet again, involves a building with no legal paperwork.
18) Causing Injury Intentionally
Obviously. Like making fiery lightning bolt strike in the middle of an Elf Village attack. Or hitting a radish with a rock.
19) Collecting or Making Documents Likely to Facilitate Terrorist Acts
Everything involving Knight Rex after he became a terrorist.

Cale and Alberu talking about anything.

After reading it up, I decided that mana disruption device ABSOLUTELY falls into this category.

Cale adopting pretty much everyone on his team.

Cale using Alberu's golden plaque to trap the White Star with Embrace. I mean, if being infected with that clown doesn't count as corruption, I don't know what does.

Cale letting Choi Han beat up Adin. ...Well, Choi Han COULD be counted as a Guard Dog, but. They never formalized the paperwork? I say it counts since Choi Han isn't legally registered!

"Yuu-Yuu hurt." Part 8
Part 1 | Part 7 | Part 9
Malleus vaguely registers screaming and yelling.
He doesn't look at the sources; it was all white noise.
His eyes are only on Yuu. He almost fools himself into thinking that Yuu caught Silver's condition and was sleeping, but he knows better than to lie to himself. It would only twist the thorns further into his heart.
Overblot. A dangerous phenomena like that shouldn't be happening, especially not to someone so precious.
". . . aren't they supposed to be magicless?" Malleus whips his head around. The mad kidnapper is still passed out in the corner. He begins marching towards him.
"Malleus, where are you going?" Lilia steps into his line of sight.
"I'm going to make him pay."
Jamil's body reacted sooner than his mind. His hands shoot out to grab Kalim's arm before Kalim could begin to sprint. Uneven breathing from being on the verge of panic makes Kalim stutter.
"Jamil, we-we have to-we have to help them--"
"We can't, Kalim." It was painful to say those words, yet Jamil managed and somehow kept his voice steady at the same time. He holds Kalim by the upper arms and forces him to look at him. "That ink monster is still there. We can't just put ourselves in danger like that."
He keeps Kalim from looking at the ink monster and the body beside it after a few failed attempts, and this keeps him from doing the same thing.
Leona's grip remained firm as Deuce and Ace tried to free their arms. They were failing to keep their tears from falling, but regardless, stubbornness and spirit shown through. Ruggie held Grim by the back of his neck after catching him using Laugh With Me. "Are you three serious? Look at the thing next to them!" Ruggie yells.
"Are you kidding? We were fighting it second ago!" Grim yells back, still squirming and trying to reach behind.
"Exactly! And you were trying to get near it."
"We need to know if they're okay," Deuce protests. "We might have time before the monster starts moving again."
"Look, I get it's dangerous, but we can't just leave them like that," Ace says.
Ruggie growls in frustration. "Leona, help me out here!"
". . ."
"Leona?"
He was glaring at the Overblotter's frozen monster. No shifting, no twitching, no rhythmic movement that mimicked breathing. Was it in some sort of cocoon phase, preparing itself into a higher form, now that the Overblotter was…?
"Leona!"
"We can't get close to them without knowing what the ink monster is about to do. Radish sprout and his brother might be able to read it."
Riddle breathed in slowly through his nose and let it out through his mouth. Trey holds his shoulders from behind, providing assurance, as Sebek's voice instructs him on his breathing. Silver had to tell Sebek to lower his voice, and it was unusual hearing the loud Diasomnia student speak gently and quietly, but it had good effect. After what seemed like a long time, Riddle's breathing evened out and his heart no longer galloped.
"Are you okay now?" Trey asks.
"Yes, thank you. And thank you, Sebek," Riddle says. "I'm a little surprised that you know this breathing technique."
"Sir Lilia recommended I learn it. He said it would benefit my wellbeing and advised that I do it during breaks and the evening. He also said it can be useful for calming myself."
Even if you weren't the one using the technique, it's calmed you down as well. Silver decides to keep the observation to himself. He noticed Sebek trembling after Yuu collapsed and tried talking to him. He became worried when Sebek suddenly walked away, and it extended to Riddle upon seeing him having a panic attack. Now, though, he was glad the both of them were calmed down. Trey too; even though the Heartslabyul vice dorm leader had a grounded facade, he noticed Trey following the breathing technique.
They're dead.
The magicless Prefect with hidden gusto. The little shrimp that went up against Azul to unbind their friends and others from contracts. One of the most interesting people on campus with an equally interesting companion.
Floyd suddenly growls and raises his wand above his head. Jade grabs his forearm before he could throw it down, telling him to stop or he'll break it. "It's not fair!" Floyd yells. "They shouldn't have died!"
The twins weren't strangers to death and people suddenly disappearing; it was something they were used to. Jade agreed with his brother, though, and was surprised by the outcome too. Each Overblot incident ended with the victim alive, and the students who handled each one were safe. Surely with 22 magicians--which included a particularly talented few--and a monster handling this strange case, the magicless victim would come out alive too? What went wrong, besides not having enough time?
Azul stands silently to the side. Gears were turning in his head and he was no doubt wondering the same thing. Perhaps if he didn't hold back and advised the others to do the same initially, Yuu would not have collapsed. If only there had been information about these situations; if only Ortho reached him sooner.
He hates leaving things up to chance and this was the absolute worst scenario.
"Damn it. There must've been somethin' we coulda done!"
Epel fumed, clenched hands trembling. He wanted to check on Yuu, but Rook kept him back and warned that the ink monster might suddenly grab him if he got close. Vil was having what seemed to be a tense discussion with Idia and Ortho not too far away and Cater was standing by, listening with a serious expression.
"Dear Epel, don't be too harsh on yourself and everyone else. We gave our best and have no control over the outcome," Rook says, putting a hand on his shoulder.
Epel wretches away. "Our best weren't enough!"
"But it was all we had," Jack says, standing beside Rook. "We came with our skills and without a plan or knowledge of what would happen. It's no use blaming ourselves or others for limits, and we can't change what has already happened. Still, I know what you're feeling."
Rook notices Jack's eyes wandering towards the body and quickly speaks. "It's just as Jack says. The only thing we can do now is wait--"
The ink monster suddenly jolts.

Somewhere in an urban community, on the second floor of an apartment building, a man suddenly bolts out of bed. He runs out of his bedroom, avoiding tripping on his slippers, and catches himself against the adjacent wall. The cool feeling on his palms brings him a little out of his half-conscious state, but he continues what he is doing and opens a door.
"Yuu!"
The bedroom is empty. The man stands in the doorway for a couple of minutes, heavy breathing becoming quieter, and he finally realizes that he is in the waking world, where his child is missing. The familiar ache in his heart returns and he drags himself to their bed.
Yuu didn't make their bed the morning they disappeared. He hasn't fixed it since and doesn't dare touch their desk either, except to put things back in place after the police searched around. He sits on the bed, his weight making the bed groan, and he looks around the dark room.
His eyes fall on a teddy bear lying next to the pillow. He picks it up and examines it in the dim white light of the nightlight and the yellow streetlights from the window. He gifted it to Yuu when they were younger, so they wouldn't be lonely when he left for work. He is glad it has done its purpose and that Yuu loved it enough to keep it by their bed throughout the years.
Maybe it was his mind attempting to ease his fatherly heart, but in his dreams, the teddy bear was alive and with Yuu. He watched it protect Yuu from danger and from nightmares, cheer them up alongside their newfound friends when they felt low, and help them however it can. In the last dream, however, the teddy bear was put in the background and watched in horror as Yuu collapsed, struck with an illness that caused black liquid to spill out of their mouth.
The man hugs the teddy bear to his shoulder. He always thanked the teddy by petting its head after those strange but reassuring dreams. Now, though, he makes a heartful request.
"Please, bring them home safe."

The boys quickly gather together to discuss what to do next. It was only a matter of time before the ink monster wakes up, and there was no telling what new things it would have in store. Working together in duos worked better than individually, but it was also noticed that trios worked even better.
In the middle of dividing groups, the ink monster makes a squelching sound, like stepping in a thick pile of mud still wet from a downpour. The boys quickly spread out. Appendages sprout from its back and it springs upward to its full height. It roars, pushing some of the students back, and flaps what are clearly now wings. Thin globs of ink shoot out like throwing knives and shields are immediately thrown up.
Something short and furry rushes past Epel. "[Teddy's name]?!" he yells. "Wait, come back here!"
He gives chase. The others notice and yells erupt for the teddy bear to stop. Attention goes back to the ink monster when it suddenly takes flight. It circles around the ceiling like an eagle and dodges magical projectiles, then takes a dramatic dive.
"Epel, look out!"
"Oh crap!" Epel shoots out ice magic, hitting the monster in the face. It swerves, and those in its new path jump out of its way. When Epel turns around, he finds the teddy on the ground, Grim having tackled it. He hurries over as Ace and Deuce catch up.
"You need to go back outside!" Grim yells as he helps the teddy bear to its feet.
"[Teddy's name] can't! Yuu-Yuu is hurt badly!"
"Hang on, did you say they're hurting? Does that mean they're still alive?"
When the teddy bear nods, the small group look at each other with hope. "We need to get them out of here!" Deuce says.
"You guys cover for me and [teddy's name]! We'll get there faster if I'm with it. Let's go!" Grim doesn't wait for any protests and neither does the teddy bear. The two are off sprinting as the ink monster descends once more.
"How does he think he can get them out of here if he's just a tanuki?" Ace wonders.
"We'll catch up with him. Right now, he needs cover!" Deuce says, lifting his wand.

Overhead, a funnel of fire connects with and engulfs the ink monster. It lands hard on the ground, a squelching sound accompanying, and lies motionless for a couple of seconds before getting up and shaking off the attack. It notices Grim and the teddy bear getting closer to Yuu and growls.
Each pounding step shakes the floor and the teddy bear stumbles, but Grim makes sure it doesn't fall.
"HEY!" A strike of lightning from behind causes the ink monster to falter. "OVER HERE!"
It only takes a glance before continuing its charge. "Wha--hey!"
"Grim! Behind you!"
The two of them are so close to Yuu. Grim skids to a stop anyway, turning around. Panic flashes across his face when he sees how short the distance is becoming, but he readies himself and sends a fireball. To his horror, it barely slows the ink monster down. He shuts his eyes, bracing for the impact.
"Yuu-Yuu!"
There's an explosive-like sound as a bright light flashes from where Yuu and their teddy are. There's a thud and a squelch, and Grim opens his eyes. The ink monster is shaking its head, dazed. He turns his head when he hears Yuu moan and is by their side in a moment.
Their eyes open partially, just enough to see what is in front of them. "[Teddy's name]. . . Grim. . ." Their voice is quiet and weak. The corner of their mouth barely pulls, but the two of them can tell they want to smile. ". . . Happy. . . to see. . ."
They languidly blink and start to lose consciousness. "Yuu!" Grim yells, shaking them and begging for them to not close their eyes. Tears dribble from his eyes and he clutches their arm when they don't respond.
A furry arm rubs his back and he looks up. It's the teddy bear. "Yuu-Yuu will be okay."
Multiple thuds cause them to turn around. The ink monster is trying to get to them, but a barrier keeps it out, each swipe and pounce revealing a white translucent dome. Grim wipes the tears away and marches with determination to the edge.
"Get away from my henchman, you gross pile of goop!"
In one deep breath, Grim releases an explosion of blue flames. The ink monster screeches and recoils, the walls shaking from the volume.

After the bright flash, the ink monster's wings drooped like melted candle wax and eventually sunk to the floor as a pile of thick ink. It seemed to be heaving too.
"I have a theory," Jade says while watching the monster pound on the barrier. "Overblots occur because a magician uses too much magic and at the same time, becomes overwhelmed by negative emotions. Yuu may have passively gathered magic from their classmates. . ."
". . . not to mention, the kidnapper probably did some sort of experiment that enabled them to become an SSR problem child and maybe something else to throw them over the edge. Before I lost signal, he said he was looking into 'the usefulness of negative emotions'. Really, a classic mad scientist trope. . ."
". . . but then what happens to a magicless person when they run out of residual magic? Their life force may be taken instead. The barrier the teddy bear has put up might have cut them off from the ink monster."
"That's hard to wrap my head around."
"I slightly agree, but this gives us more time to defeat the ink monster. Not to mention, now that the barrier is up, we don't have to worry about hurting Yuu."
"Let's do it!"

Here’s the full recipe, which we’ll call ‘Auntie Em’s Shredded Slaw:’
Always start with at least 2 kinds of cabbage, like white and purple, cut thinly on a mandolin, or shredded into thin strips with a knife. Usually at least a few other cruciferous veggies too, like Brussels sprouts, broccoli, kale, etc, also cut small.
Add some other crunchy veggies: shredded or matchstick-cut carrots, radishes, celery, jicama, beets, whatever you’ve got. Bonus points if it makes things colorful.
Add little oil/fat
Add whatever vinegar or acid goes with the rest of the meal (IE balsamic, red wine, apple cider, or rice vinegar, harissa, or lemon/lime juice, even hot sauce)
Optional: If you want a creamy coleslaw, add a spoonful or two of Greek yogurt or sour cream
Season LIBERALLY, with whatever spices or fresh herbs go with the meal. Always include salt, pepper, a little chili powder, and garlic & onion powders, but everything is optional.
STIR AGGRESSIVELY UNTIL THE LIQUIDS AND SPICES HAVE EMULSIFIED AND COATED THE VEGGIES. TASTE AS YOU GO AND ADD SEASONING IF NECESSARY.
(Examples: an Italian meal might mean: olive oil, balsamic vinegar, lemon juice, fresh basil, fresh parsley, fresh minced garlic, a few spoonfuls of pesto, dried oregano or rosemary, etc. A stir-fry might get peanut oil, rice vinegar, soy sauce, fresh Thai basil, green onions, cilantro/coriander leaves, star anise, cloves, etc. Mexican food might get lime juice, fresh cilantro, cumin, cayenne, ancho, chipotle, hot sauce or Tajin.)
Also optional: add-ins like tomatoes, olives, peppers, artichoke hearts, capers, cucumbers: things that are juicy or more delicate. They get mixed in now, more gently.
Finish by sprinkling something crunchy on top: toasted nuts or seeds, croutons, fried noodles/onions, etc. Et voila. Auntie Em’s Shredded Slaw.
(Which stores brilliantly, btw, because the flavors only get better as they all marinate together and because the base is hearty and crunchy things, it doesn’t get soggy and gross like most leftover salad.)
One more tip: you can do a lot of veggie prep ahead of times and then just store the already-cut ones in your vegetable bin to make it go even faster.

Plus, June is of course Pride Month – symbolized by the six-striped rainbow flag that cheerfully adorns flag poles, government buildings, store fronts and many other public spaces throughout the course of this month. Rainbows have risen to become a symbol of good fortune, positivity, diversity and inclusiveness in our popular culture, so it’s no coincidence that the phrase “eat the rainbow” is used by dieticians and other medical professionals to encourage people to put more fresh produce on their plates. In fact, consuming a variety of colorful fruits and veggies is the best way to introduce the most nutrients into your diet, without adding excessive calories. The naturally occurring pigments in these foods indicate different compounds with different properties that have been shown to provide a wide range of unique health benefits. Water and salt as required
Jaggery – 1 tablespoon (optional)
Coriander leaves (optional)
Step-by-step sambar recipe with Suhana sambar masala
Add toor dal and vegetables of your choice to a pressure cooker and cook for four to five whistles.
Meanwhile, peel the shallots. In a kadhai, add oil and fry the shallots. Once cooked, add the tamarind pulp and let it cook for some time until the shallots become soft. Ensure to cook this on simmer mode. If you do this on high flame, the tamarind pulp may become thick in no time, and it might affect the taste of your sambar.
Once your toor dal and vegetables are cooked, add the mashed lentils and vegetables to the tamarind pulp and shallots mix, with Suhana sambar powder and jaggery, with salt and let it boil for 10 minutes.
You can also cook the vegetables directly in the tamarind pulp, but this may take a while. So, if you are on a time crunch, just use a pressure cooker!
Add water if your sambar is thick. If not, add oil and mustard seeds in a small frying pan. After they splutter, add hing, curry leaves and dry red chilly. Add this to your sambar and turn the stove off.

Serving Suggestions

I liiiiiive! Or at least, my writing does. Like I said, I can’t and won’t promise regular updates on this one, but the sweet sweet coffeeshop AU will never let me go for sure.

“Hey there, long time no see!” Janus said over the top of his mug. It was the one he brought from home, with a snake for a handle.
“I saw you on Sunday,” Virgil said, slouching his backpack off his shoulder to store in the employee cupboard.
“Yeah, but so much has happened since then,” Janus said, and then sipped his drink loudly. “Did Logan tell you about the birds that were fighting outside on Tuesday?”
“No.”
“See, of course he didn’t, he doesn’t care about the fun stuff. God, you look exhausted, let me get you a pick-me-up, you raccoon.” He began to measure a shot of espresso.
“I’ve already been drinking way too much soda to stay awake,” Virgil said.
“I’m not giving you soda, am I?” Janus asked, turning on the steam wand. “I’m giving you sweet bean juice, it will give you things no other drink can.” The shots pulling from the espresso machine dripped like warm honey, and Virgil had to admit they looked enticing. Janus was the most skilled barista in the cafe, going to local barista competitions three years in a row, and making it to the final round the last two years.
“One of the benefits of working here is all the free coffee you want,” Janus said. “Might as well take advantage of it.” He’d barely looked at the machine while preparing the milk and espresso, but now, with a few seconds of intense focus, he guided his pitcher across the surface of the crema to create a delicate rosetta. “There, my nicest flat white of the day, all for you.”
Virgil took the cup and sipped. Perfect, creamy foam.
Janus picked up his own cup and slurped the last of the coffee inside. “Well, better prepare for the lunchtime rush,” he said, checking his watch. “How was it yesterday?”
“Not too bad.”
“If you want to run register and food the first hour, I’ll run bar and then we can switch,” Janus said, reaching behind himself to tighten his apron strings. “If it slows down I’ll do a restock but I think we should be fine.”
Janus had been the first barista to push Virgil to run the espresso machine solo. When the morning or lunch rush came and there was a line out the door, Janus would watch and speak encouragingly, but never step in to rescue him the way Logan did.
“See these two cups?” Janus had said one day when Virgil could barely hold a milk pitcher without shaking. “These two drinks are the only ones you need to worry about right now. All those other drinks, all those other people, they don’t exist to you. It doesn’t matter if there are three drinks or thirty drinks waiting, you’re always working on these two drinks, and two drinks only.”
Eventually Virgil learned how to fall into a rhythm where he prepped one shot as another one pulled, poured one milk as another one steamed. Janus would flit back and forth from the register to the hand-off, confidently ringing in and handing out drinks as Virgil’s hands shook too hard to stop cups from spilling.
“You don’t need me,” Janus had said. “Someday you’re gonna be stuck up to your elbows in cappuccinos and I’m not going to be here, and you’ll have to haul them out of yourself. If I rescue you now, you won’t be able to do it then.”
Virgil had burned with frustration that Janus wouldn’t help him. But when the line dwindled, Virgil found himself reaching for the next cup in line, and it wasn’t there. He’d done it, he’d seen only two drinks in front of him and had conquered a breakfast rush. The customers had become a blur, and he’d honed in on more lattes and macchiatos than he could count.
“The next challenge,” Janus had said as they shared coffee in the following lull. “Is to bring the customers into focus too. Two things matter in coffeeshops, the coffee, and the people. You can’t let either one distract from the other.”
“You want me to do all that and small talk?”
“It gets easier with time.”
The retrospect that proved Janus right didn’t help Virgil to not feel aghast at the suggestion. It was easy to envy Janus’ ease around customers, asking Wendy how her radishes were doing as he poured her coffee, telling jokes to kids, and showing them the swan he’d drawn in their father’s latte.
Virgil tied his apron and went to the front register. He ran his fingers over the screen. Pretending to type up a long order was his key both to eavesdropping and to looking busy, especially if he furrowed his brow just enough to look focused. Whenever a particularly angry customer started to complain at the other end of the counter, here Virgil would be, tapping like he was crafting a novel and not hitting the button for “doppio” a dozen times in a row. Meanwhile Janus, usually, would be the one at the end, silver-tongued and composed, listening with raised eyebrows and a soft smile. He’d turn around only when the cafe was empty to say “could you believe that jerk?”
A gaggle of college girls in matching volleyball t-shirts approached, and Virgil glanced at Janus, who cracked his knuckles dramatically. “May the coffee gods guide me,” he said as the bell on the door jangled merrily.
“Hi, what can I get for you?”

And so on down the line. Janus remained unfazed, continuing to greet other customers who braved entering the store despite the line. The hum of the espresso machine and hiss of the steam wand filled the cafe, singing along to the piano playing over the speakers. Was this Logan’s playlist?
The line didn’t end, after that. The girls cleared and were replaced by tides of office workers in pressed clothes from the smattering of office buildings that hemmed in the coffee shop on all sides. Friendly receptionists and personal assistants were a favorite of Virgil’s, and were perhaps the only ones who called him by endearments that didn’t feel horribly awkward. Most of them tipped well.
The cafe chairs filled up, representing casual business talks, friendly meet-ups, and solitary breaks from long days. Virgil liked to watch for the people who perked up or relaxed with their first sip. “I bid you adieu and an easy close,” he said, twirling his keychain around his hand as he clocked out. The jingle of his keys was followed by the jangle of the door behind him, and Virgil was alone in the cafe.
He brewed fresh coffee - they’d almost run out during the rush, and pause to sweep the floors and wipe down the counters. Running the store for the last three hours before close, and the chance to close the store by himself was both a responsibility and a chance for peace that Virgil appreciated. He liked helping customers, more spread out then before, and in between them finding little things to clean, extra minutes to practice his latte art - damn, how could Janus draw a rosetta so effortlessly? He aerated the milk gently, and heard the front bell ting.

Virgil looked up and felt his ears get hot. Roman was leaning slightly over the bar (oh wow, he was even taller than Virgil had thought), staring at the cup. “Could you do one like that for me?”
Virgil swallowed. “Yeah uh… yeah, sure.” Nevermind that it was much harder to make oat milk froth properly. Virgil grabbed his non-dairy pitcher.
“Oh, could you make it as an large cinnamon-”
“Yeah, I got it.” Oh no, I cut him off. In too deep now. Virgil felt Roman’s gaze on him as he made the latte. We break up this tiny passage of time into short bursts we call seasons: strawberry season (5ish weeks), blueberry season (3ish weeks), melon season (JUST GETTING STARTED WOOT WOOT!!), etc… These fruit bursts force you to show up and give all you got because the harvest is so fleeting and nothing during any other time of year compares to the season that you are currently in. As we combine melon season with the entrance of tomato season, we simultaneously welcome in the real muscle season: canning season. August is this wild month where everything (all the crops) catch up and suddenly you are hit with this pain in your gut that SUMMER IS SHORT and SUMMER IS ALMOST OVER and holy shit, it's time to savor every bit of it and figure out ways to bottle up the sun. So, I turn to processing veg (can/pickle/ferment/freeze) as a coping mechanism to battle the inevitable change to Fall. Also, canning is pretty fun and deeply satisfying and mostly delicious (however there is the occasional science fair experiment gone wrong). From here on out, with every CSA that comes and goes, I will try my best to provide one item in bulk(ish) that will beg you to be processed, so you too, can take summer with you into the cold dark months ahead (i hate winter).

Yall, Kayleigh season lasted for 9 whole weeks and I am GRATEFUL for every single one. Working alongside Kayleigh is actual magic. Her work ethic is insane, her jokes slap, and while paying attention to every detail of every task, she is constantly looking ahead, reading my mind, and lightening the load. On top of all this, she glows and our convos flowed. My best connections and life changing conversations always happen during a full day outside- sunrise to sun up- in a field, during a harvest with someone great. She is someone great. Kayleigh season ends today. Next week she begins Nursing school and I’m so excited for her… (to take care of me when I'm in need of medical care jkjkjk).
All that said, so long Kayleigh season- a damn good season- all too fleeting, powerful, and so full of joy.

Also you can put the sliced jalapenos in the jar and just pour hot pickling liquid over it.
YIELD: 1 PINT SIZED JAR The BEST recipe for easy homemade pickled jalapenos from scratch! Fresh jalapeños pickled and jarred.
15 to 20 large jalapeños, sliced, stems discarded 2 garlic cloves, smashed and peeled
1 cup distilled white vinegar 1 cup filtered water
4 tablespoons sugar (optional as it is for flavoring) 2 tablespoons kosher salt
In a medium sauce pan combine the garlic, water, vinegar, sugar and salt.
Heat to a boil, stirring to dissolve the sugar and salt. Once at a boil; add the sliced jalapenos pressing them so they are submerged under the pickling liquids. Remove the pot off of the heat and let them sit for 10-15 minutes.
Use tongs to transfer the jalapenos into a clean jar. Ladle the pickling juices over top until you've reached the top of the jar. Let cool at room temperature before securing a lid and popping them into the fridge.
I personally would treat these as I would any opened jar of jalapenos. They should last a long while if kept refrigerated in the airtight jar.
**REVISED: I've found that 20 medium jalapenos will fill a quart size jar. I upped the water and vinegar to 1-1/4 cups each. Sugar and salt stayed the same.
*This is not a canning recipe therefore not shelf stable and will need to be kept refrigerated. With that said, I personally would treat these homemade pickled jalapeños as I would any opened jar of pickled produce in your fridge. They should last a long while if kept refrigerated in the airtight jar. Also, the spicy heat of the peppers should mellow out the longer they are in your fridge. If looking for canning instructions or directions, follow the USDA guidelines.

As its name suggests, lemongrass is a grass with botanical origins that stretch across South and Southeast Asia, from India and Sri Lanka to Indonesia and the Philippines. Also called Malabar grass, Cochin grass, or fever grass among many other names, lemongrass (Cymbopogon citratus) grows in large bushy clumps. Its stalks are woody and pale green with bulbous lighter-colored bases that are somewhat reminiscent of green onions. Used whole, chopped, or pummeled into a paste, lemongrass adds a light but complex flavor and aroma—simultaneously lemony (hence the name), gingery, and floral—to sauces, soups, and meats.
In some parts of the world, lemongrass is also treasured for its health benefits. When brewed into a tea, the plant is considered an immunity-boosting treatment for a wide variety of ailments including gastrointestinal distress, fever, and asthma.
How can you use it? In South and Southeast Asian cooking, lemongrass commonly conspires with ingredients like garlic, galangal (and/or ginger), cilantro, Thai basil, shallots, lime leaves, and coconut milk to create bold, complex flavors.
To prepare lemongrass, start by peeling the stiff outer leaves away from the stalk to reveal the slightly softer underlayers. Slice the grass in two spots, about half an inch from the root and approximately three inches up, where the whitish color begins to turn green.
The pale lower section of the lemongrass is the meatiest bit. Even so, it must be sliced thin and then finely chopped, pounded into a paste with a mortar and pestle, grated with a box grater, or tossed in a food processor so that it isn’t too tough to chew. This is frequently how lemongrass is used in Cambodian cooking, Yun says, especially in the preparation of the spice paste kroeung.

Once minced or pounded, lemongrass can be added to marinades or grilled meats for a touch of sweet citrusy flavor or used to brighten curry pastes and simple sauces. Powdered lemongrass works here too. “Start with one teaspoon powder per lemongrass stalk, but be sure to taste as you go to make sure you’re getting that lemony-ginger bite,” Payumo advises.
And despite the fact that lemongrass isn’t traditionally used in recipes of Western origin, adding it to creamy pastas or homemade ice cream is an unexpected delight.
But while only the lower bulb of the lemongrass stem is edible, every portion of the stalk has a role to play in the kitchen. The fibrous upper section of the stalk is full of tons of lemony, gingery goodness. To release the flavorful oils, both Yun and Payumo like to bash or flatten the lemongrass stalk with a cleaver or the side of a large knife. Payumo will also sometimes bend the stalk back and forth a few times instead of smashing it to release the oils.
Fresh lemongrass stalks work best in dishes like soups and slow-roasted meats that simmer for long periods of time. In Filipino cuisine it’s commonly stuffed inside whole pigs or chickens and then roasted, Payumo says. Extensive simmering or roasting is also the best use for dry lemongrass, which rehydrates as it cooks. Like with bay leaves, remove the lemongrass stalks from the dish before serving.
Bruised, oil-rich lemongrass stalks work in the glass too. They not only make a mean cocktail stirrer, but they can also infuse spirits with almost no effort at all. Go ahead, throw a lemongrass stalk or two in a bottle of vodka and let it sit for a week before drinking. You won’t be sorry.
How should you store it? If you store it right, lemongrass will pretty much last forever. Wrapped loosely in a towel, the stalks will stay fresh and flavorful for a few weeks in the fridge. Otherwise, they’ll do just fine in the freezer, either uncut or pre-prepped. Try portioning minced, pounded, or grated grass into an empty ice tray for no-fuss future use. Dried and powdered lemongrass should be kept in sealed containers and out of the light.
Now go smash, slice, and pound away. You may not be getting to South or Southeast Asia this year, but with your new lemongrass skills, at least your culinary skills will permit you to imagine.
