Ya. The original story said they learned the FORMS from those animals, not literally how to bend the energy.
And that IS what benders do, bend energy related to a specific element. If that wasnt how it worked then the blocking technique Aang and the one what's his face in Korra s1 wouldn't have worked.
But, if i remember right, what's his face used blood bending right? THAT I'll say was kinda broken. I mean, Katara was the best water bender in the world, right? And even she could only do it at the full moon. WHF could do it whenever.
"in the days before the Avatar, we bent not the elements, but the energy within ourselves". Korra shows us the days before the Avatar, and they're bending the elements. Further, it is very, VERY clear in Avatar that learning bending FROM the Badgermoles or Dragons was what gave firebending, not what taught a new method of doing it. It's a retcon at best. You can like and justify it, but it's changing what was established and forcing it to mean something other than what was initially meant.
1.  He’s referring to the Lion Turtles.  The Lion Turtles bent energy, which is what allowed them to impart bending to humans.  This is not a retcon.
2.  It did not show this.  If watching dragons or badgermoles allowed bending, then Appa is the key to a new Air Nation.  Literally you could train hundreds, if not thousands, of new airbenders.  Sokka could’ve become an airbender by watching Appa, rather than becoming a swordsman.
Aang explicitly said “Hey, buddy, maybe you can give me a lesson one day”.  This indicates that the source of bending was not the animals, but rather they were the original benders and people were inspired by these animals, who were the original users of their respective bending techniques.  Again, this is not a retcon.
3.  It is slotting in new lore that does not contradict the previous lore.  Just because you don’t like it doesn’t mean it is a lore break.
