These Bacon Brunch Enchiladas are a delightful twist on classic breakfast enchiladas, filled with a savory combination of bacon, ham, peppers, and cheese. Perfect for a weekend brunch or any morning when you want something hearty and flavorful.
Ingredients: 6 large flour tortillas. 1 cup diced cooked ham. 1 cup diced red bell pepper. 1 cup diced green bell pepper. 1 cup shredded cheddar cheese. 1 cup cooked and crumbled bacon. 1/2 cup diced onion. 1/2 cup sour cream. 1/2 cup salsa. 4 large eggs. Salt and pepper to taste. Chopped fresh cilantro for garnish optional.
Instructions: Preheat your oven to 350F 175C. In a large skillet, cook the diced bacon until it becomes crispy. Remove from the skillet and drain on paper towels. In the same skillet, saut the diced onion, red bell pepper, and green bell pepper until they become tender. In a mixing bowl, whisk together the eggs, sour cream, and salsa. Season with salt and pepper to taste. Place a flour tortilla on a clean surface and spoon some of the sauted vegetable mixture onto it. Add a portion of diced ham, shredded cheddar cheese, and crumbled bacon on top. Roll up the tortilla and place it seam-side down in a greased baking dish. Repeat this process with the remaining tortillas and fillings. Pour the egg mixture evenly over the rolled enchiladas in the baking dish. Bake in the preheated oven for 25-30 minutes, or until the enchiladas are set and the tops are golden brown. Remove from the oven and let it cool slightly before serving. Garnish with chopped fresh cilantro if desired. Serve your delicious Bacon Brunch Enchiladas hot and enjoy!

Instructions: Put flour, sugar, baking powder, and salt in a bowl and mix them together with a whisk. Put vegan ricotta cheese, vegetable oil, lemon juice, lemon zest, and vanilla extract in a different bowl. Add the wet ingredients to the dry ones and mix them together just until they are mixed. There should be some lumps, but not too many. Put a griddle or nonstick pan over medium-low heat and lightly coat it with cooking spray or oil. For each pancake, put 1/4 cup of batter on the pan. Start cooking when the top starts to bubble. Then turn it over and cook until both sides are golden brown. Do it again with the rest of the batter, changing the heat as needed to keep it from burning. You can top the pancakes with your favorite things, like fresh fruit, maple syrup, or other things you like.

Ingredients: 4 slices of thick bread. 2 large eggs. 1/2 cup milk. 1 tsp vanilla extract. Zest of 1 lemon. 1/4 cup granulated sugar. 1/4 tsp salt. 4 waffles. Butter for frying. Maple syrup for serving. Fresh berries for garnish optional.
Instructions: Whisk the eggs, milk, vanilla extract, lemon zest, granulated sugar, and salt together in a shallow bowl until everything is well mixed. Warm up a nonstick skillet over medium-high heat. Add a piece of butter and melt it. Take a piece of bread and coat it well on both sides with the egg mixture. Then put it in the skillet. It should take about two to three minutes per side to make both sides of the bread golden brown. Do it again with the rest of the bread slices. While the French toast is cooking, heat up the waffles according to the directions on the package or with a waffle iron if you made them yourself. After the waffles and French toast are done, put a piece of French toast on top of each one. If you want, you can drizzle it with maple syrup and top it off with fresh berries.
