These Bacon Brunch Enchiladas are a delightful twist on classic breakfast enchiladas, filled with a savory combination of bacon, ham, peppers, and cheese. Perfect for a weekend brunch or any morning when you want something hearty and flavorful.
Ingredients: 6 large flour tortillas. 1 cup diced cooked ham. 1 cup diced red bell pepper. 1 cup diced green bell pepper. 1 cup shredded cheddar cheese. 1 cup cooked and crumbled bacon. 1/2 cup diced onion. 1/2 cup sour cream. 1/2 cup salsa. 4 large eggs. Salt and pepper to taste. Chopped fresh cilantro for garnish optional.
Instructions: Preheat your oven to 350F 175C. In a large skillet, cook the diced bacon until it becomes crispy. Remove from the skillet and drain on paper towels. In the same skillet, saut the diced onion, red bell pepper, and green bell pepper until they become tender. In a mixing bowl, whisk together the eggs, sour cream, and salsa. Season with salt and pepper to taste. Place a flour tortilla on a clean surface and spoon some of the sauted vegetable mixture onto it. Add a portion of diced ham, shredded cheddar cheese, and crumbled bacon on top. Roll up the tortilla and place it seam-side down in a greased baking dish. Repeat this process with the remaining tortillas and fillings. Pour the egg mixture evenly over the rolled enchiladas in the baking dish. Bake in the preheated oven for 25-30 minutes, or until the enchiladas are set and the tops are golden brown. Remove from the oven and let it cool slightly before serving. Garnish with chopped fresh cilantro if desired. Serve your delicious Bacon Brunch Enchiladas hot and enjoy!

Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1/2 teaspoon salt. 2 large eggs. 1 1/4 cups milk. 2 tablespoons melted butter. 1/2 teaspoon vanilla extract. Cooking spray or extra butter for the pan.
Instructions: Whisk the flour, sugar, and salt together in a bowl. Put the eggs in a different bowl and beat them. Then add the milk, melted butter, and vanilla extract. Combine well. Add the wet ingredients to the dry ones and mix them together until both are well mixed. Put a nonstick skillet or frying pan over medium-high heat and use cooking spray or butter to lightly coat it. Put a little batter into the pan and tilt it to spread it out thinly. This will make a pancake. If the bottom is golden brown and the edges start to lift, it's done cooking. The pancake should be cooked for one to two more minutes, or until the other side is golden brown. If you need to, add more cooking spray or butter to the pan and do it again with the rest of the batter. You can top the thin pancakes with syrup, fresh berries, or whipped cream while they are still warm.
