Blueberry Muffins

Honestly, this is a good recipe to just have on hand. Muffins are a delicious and easy weekend (breakfast?) make, and they make your space smell amazing!

It's an easy recipe, and the ingredients either keep well in the pantry or freezer, or you'll probably just have them anyway!

1. Grease or line your muffin tins

2. Preheat oven to 400°F

3. Dry Ingredients (whisk together)

2 cups of Flour, whole wheat is tasty but white works fine too (spoon flour into the measuring cup, then level)

2 teaspoons baking powder

1/2 teaspoon of salt

1/2 cup white sugar

4. Wet Ingredients (add to dry ingredients, then stir until only a little bit of flour is visible)

3/4 cup milk

1/4 cup neutral cooking oil

1 egg

1 teaspoon vanilla extract and or lemon zest (it's optional... but is it really?)

5. Fold/stir in 1 1/2 cups of blueberries (frozen is great)

6. Crumble (use a pastry cutter or a fork to mush together until crumbly)

This is optional, when I'm lazy I just sprinkle a little sugar or sliced almonds on top.

1/4 cup of flour

1/4 brown sugar

2 tablespoons of butter or margerine

1/2 teaspoon of powdered cinnamon

7. Fill muffin tins (it should make 12 muffins), sprinkle crumble on top, and bake for 20-25 minutes.

This recipe is from a Betty Crocker red cookbook, the front page of my family's copy fell right off so I dont know the exact name - but it's a very reliable cookbook if you are interested.
