A heads up:
I been noticing a change in trajectory in the past three months. This started when I elected to see a counselor. For months I searched for one and I was going nowhere. By that, I mean other counselors who returned your calls only to leave me high and dry with no callback. One counselor I did see for four weeks rehashed our conversations and asked the same questions over and over with no results, only to show disinterest in me and ultimately abandoned me when I called her out on it. A great help when people are suffering in the era of COVID- and political toxicity. I did find one who stuck with me and she’s pushed me to get stuff done. She understands about the personal turmoil I’ve been going through. And by learning to trust the environment around me and understand what she’s saying, I’ve learned with my own eyes to accept what’s on the surface.
That’s not all. Since my dad passed away, I revamped my diet to the best I could. He’s no longer here to pump me with free burgers, Chinese, sushi, fried chicken, and steak. So why not spend the money on more white meat, fruits, vegetables, and juices? This year I also elected to see a dietitian. Take dairy-free. Take gluten-free. Take hummus. Take almond milk. She has done more for me in two visits than any doctor had done for me in ten years. When you eat like shit, you’ll be it and feel like it. No more.
I’ve also been on a tear at work. Every month it seems that some of our top performers leave the company, so there goes my competition. Now I’ve been obliterating my daily and monthly goals with nothing or no one stopping me. Thanks to sales restructuring, I’m not only selling computers but everything else under the one roof. Four-piece kitchen sets, stackable washer-and-dryer combos-, $4,000 home theater tickets, and I just sold my very first 8K TV to a gamer who wanted to use his graphics card to the fullest potential. Who am I to argue? I’m projected to win the store in revenue, credit card applications, tech support memberships, hours worked, and transactions made if this keeps up. There’s even a very small chance I could cross the $2,000,000 finish line. Holy Godiva on a winged pegasus riding down a crowded Times Square if I do.
I have double or even triple the energy than that of the average person. No caffeine, no hard drugs, no magical force-fields or pixie bestowments. I been feeling unbeatable. My drive to get stuff done is insatiable. Believe it or not, I was fed up dealing with the surprise artists / apologists who sneak up behind me and cut into my sales (they’re not sorry for interrupting you), the adult-children who wave their arms and yell at me from the other end of the store to get my attention (those little ones are ignored anyway), or the Italian Joeys who act like they’ve known me forever (most I never met in my life) who put their arms around me and act buddy-buddy with me to get a discount. No dice. Now I see them coming and quash it before they irritate me. They’re still a nuisance who need to be swatted away like wasps but no one day or town can do 100%. With the anti-anxiety scripts kicking in, I don’t feel as edgy as I used to.
With this streak I’m having, learning to stay in touch with myself, and still coming off of seeing Uniform in New York City, I ask myself if I ever want to go back to feeling like garbage? Of course not. I had it with waiting for some random to upend my day, to feel constant panic or walking around being ill. I can’t even imagine feeling like that again now that I’ve become more self-aware. There’s still a ways to go, however. I still plan on leaving retail and either do back-end tech support, web-building, or even more graphic design. Working at home would be ideal. With sound editing out of the way, I’ll be able to digitally archive more tapes and finally tackle that backlog of albums I’ve been meaning to listen to.
Off to the gym I go.

[ insp by @whiskydeputy‘s post about mercy cabin. yours was amazing so i wanted to make up michael’s cabin and where it is in game! ]
russo residence:
michael’s cabin wasn’t purchased until after he was given his mission of infiltration. he didn’t even show his face in hope county until he moved to his cabin, he literally spent 24/7 inside the veteran's center. he got lucky that it was for sale when he was trying to find his own place in the whitetail mountains. there were a few places he was looking at but ultimately decided on the cedar lake cabin for a few reasons. the first reason was because of it’s location to jacob’s bunker, it is incredibly close. michael wanted to be close to the bunker so that when the world started burning he’d be able to reach the safe hold in time. the second reason wasn’t really realized until later. it’s not exactly close to the jefferson lookout tower but that is the next reason. it was one of the places that michael uses as a dead drop, wher ehe leaves some information, it helps that it’s close to the wolf’s den. the third reason was because of it’s closeness to the veteran’s center. even though he can’t be fighting next to jacob throughout the coming months and including the war so he’ll just try to be close to him through location.
floor plans:
michael’s cabin is only one floor. it’s simply and really bare. there’s almost zero personal touch aside from two pictures. one of which is michael fishing at cedar lake and michael with his pickup truck ( both of which were taken by people in the whitetail militia that’d he become ‘friends’ with ). his bed is the nicest thing in the cabin, it’s a king size with soft sheets and memory foam pillows. it’s ironic that it’s his nicest piece of furniture because he hardly ever actually sleeps in it. just a few feet from his bed is a weapon’s locker. the only thing in it is a standard rifle with some extra ammo and a pistol with some extra ammo and an extended magazine for the pistol. the main room is also where his chimney and fire place which heat the cabin. the only other two rooms are a bathroom and a kitchen that’s slightly bigger than the bathroom. the bathroom has a shower/bath combination, a toilet and sink. it also has a small washer and dryer as well. the kitchen has a refrigerator in the corner with counters directly next to it. the counters have a built in sink that lead to his stove/oven at the end. the kitchen also has a wall shelf of spices/herbs, dried fruits, jarred fruits, and vegetables. the main room also hides the entrance to michael’s underground bunker, which is hidden under his only table and a thick rug. the outside the cabin is a slight wrap around porch, which is where his hunting/fishing gear is usually stored.
the bunker is only accessible if you find the entrance and get the key card from michael. and the only way to get the key card is to loot it from michael after he’s dead. michael would never allow anyone to gain entrance to his bunker save for someone he absolutely trusts. inside his bunker is a safe which actually holds his important information. the safe has all of his military service records, medals, medical information and service pistol. in this weapon’s locker, which also requires a key from michael, is a silenced assault rifle with an extended magazine and a silenced .50 cal sniper rifle, both of which he used during his time in the military. there are also some extra clips of ammo in the weapon’s locker. next to the locker is the normal stash that comes with entering bunkers ( cash and hunting magazines ), but with this stash comes extra stuff special only to michael. on the table holding the stash is a photograph of michael and jacob in the military. there are also copies of dossier's that michael was given to by jacob ( eli, tammy etc ). he has several ceiling to floor racks of food and water that will ensure that he survives years after the world turns to shit. the rack in the middle of the floor also has an extra storage of ammunition and clothes. the bunker has a very small bathroom, with access to an underground well which will ensure his access to water no matter what. the bunker has several ventilation/air shafts which only uses recycled air/an air filtration system. the bunker has a bunk bed instead of just a singular bed because michael designed it for his bunker to house two people instead of just himself. michael also has a table a few feet from his bed that holds a good amount of medical supplies. michael is absolutely the kind of person that would rather prepare for the worst than not be ready for anything.

ncfan listens to Welcome to Night Vale: EP004 (’PTA Meeting’), EP005 (’The Shape in Grove Park’)
In which suburbia is pilloried.
No spoilers, please!
EP 004: ‘PTA Meeting’
- I guess we’re not getting any follow-up about station management.
- What exactly was the PTA doing to open a rift in space-time in their meeting room? And let out a bunch of Pteranodons, too.
- “Mostly attacked women with glasses.” Pteranodons have very particular tastes, don’t you know?
- Well, maybe the name-calling escalated to dark magic incantations.
- “No one was injured or killed in the incident.” Sure.
- I’d make a crack about voting policy in Night Vale, but I just feel sick. I can’t enjoy it, not even the part about accommodations in the abandoned mine shafts being quite luxurious.
- “Write your own news story program.” So they’re gonna go work for Fox?
- I’d make a crack about the handball players’ insurance not covering the mental devastation associated with sticking their heads in a time portal, but again, I just feel sick.
- And of course they’re still reporting zero injuries.
- The city council has chosen to remove a large, lead door from a part of Radon Canyon behind which there is pulsing green light and a sort of humming (Sorry, I didn’t catch what Cecil said there). I’m sure this will end wonderfully, with no death or demonic possessions of any kind. Poor Carlos. It must be hard to be the only person in town talking sense.
- The angels have taken an interest in the lead door. Interesting.
- I suppose they may have just followed Old Woman Josie. But probably not.
- Cecil’s impersonation of Josie’s voice is hilarious, because that’s probably not what she sounded like at all.
- Cecil, keep your head in the game. Think more about why Carlos ran away than what he smelled like, please.
- And the secret police have graciously told us that the pteranodons are actually pterodactyls, and that there were actually 38 (roughly) deaths. I feel like that should have been the first thing said.
- Gotta admit, if amputation was the penalty for overdue library books in the real world, libraries might have an easier time getting their books back. I think it would be better to just stick with late fees, though.
- I assume the Night Vale vs. Desert Bluff rivalry is gonna go somewhere.
- I know when water came pouring out of our light fixtures in the dorm I lived in senior year, it was an annoyance. It wasn’t ooze from some failed black magic ritual, though; the washer machine in the empty dorm upstairs had stopped working right.
- Yeah, I don’t think the mysterious hooded figure is here for an interview.
- Well, judging from the noises the mysterious hooded figure is making, it’s either not human, or its vocal cords are set to pick up static from that television in Poltergeist.
- I do like this weather song. A little.
- Whatever’s happening in the dog park, it was enough to deflesh a pterodactyl. When they focus more on the dog park, they’d better focus a lot.
- I’d make a crack about the “whether or not [backpacks are] causing autism” line, but I’m just pissed.
EP 005: ‘The Shape in Grove Park’
- I suspect the local historians protesting the removal of the shape in Grove Park, despite not caring for it at all, is supposed to be satire. Satire of how trying to remove even the most unsightly eyesore can provoke a furor if enough people think it has “historical” value (Even if it doesn’t).
- Oh, yes, every park needs a bloodstone circle.
- Yes, Green Market, selling fruits and vegetables might indeed do good things for your sales.
- Nice to know your source in the secret police is just as big a creep as their coworkers.
- Yeah, I don’t think Sandero wants to talk about how he’s gone down in his mother’s estimation.
- Hmm, is the sponsor for the ad today by any chance Huddle House?
- And now the shape no one talks about has been relocated to the front of the radio station. I’m sure that will end wonderfully.
- Oh, look, Cecil’s having an existential crisis. Don’t worry, man, I have those every once in a while. It goes away. Eventually.
- “In response to parent feedback, history class will focus more heavily on textbook readings and traditional exams, rather than live ammo drills.” Doesn’t sound too far off from some classes I took.
- Geology class just created a fake rock. …Again, not too far off from my own experiences.
- Math class teaching English wouldn’t be any less bewildering than the Algebra II class I took in 9th grade. Probably a lot less traumatic, too.
- Well, students would probably be learning more in Weird Spanish and Coptic Spanish than I did in my high school Spanish classes.
- I wonder how the interns take to Cecil’s existential crisis (Or crises, if this isn’t the first one). I like to think they handle it with benign indulgence.
- And there is apparently a reason people don’t talk about the shape.
- And Intern Leland just got vaporized by the shape. Bye, Leland!
- Don’t care for this weather song, either.
- So is it just the custom for radio employees to be buried in the radio station break room, or is this just a thing with workplaces in general in Night Vale?

Outdoor Spring Cleaning Areas
It’s Spring cleaning time and what better time to do this then when we are all stuck at home.
See below NINE outside areas you should think about cleaning this spring time.
Windows: Clean off those windows by doing it yourself or hiring a professional. For those easy to reach windows, you can use glass-cleaning spray and a microfiber cloth or squeegee to clean. If you have windows that are too tall to reach, consider hiring a professional. You’ll even notice how much more natural sunlight comes into your home after getting those windows sparkly and clean.
Outside leaves: Get rid of all those leaves (or flower petals) that have been building up on your front lawn or backyard. If you have a large lawn, it would be a smart idea to mulch the leaves with your lawnmower in order to remove it faster.
Home exterior: Hire a professional to come pressure wash the exterior of your home. Your home exterior can have contaminants like algae, mold or dirt that tends to build up over the winter months that you will want to get rid of.
Sidewalks and patios/decks: Hire a pressure washer, or do it yourself, either way you should have your sidewalks and patio/decks cleaned to ensure all the dirt and grim is washed away. This will also help ensure no future slips or falls happen on your grounds.
Gutters: After the winter season, now is the time to clean off all that build up debris. Make sure to check and see if there are any “clogged” areas that need attention, and have them cleaned right away. You can do this on your own (make sure to have someone there with you as a “spotter”) or you can hire a professional.
Rooftop: If you see any black streaking or moss on your roof, you will want to get that cleaned as soon as possible. If you let this sit, it can eat away and cause deterioration of your roof. This could be done CAREFULLY by yourself or we highly recommend hiring a professional.
Outdoor furniture / kitchen: Before inviting friends and family over, you should get your outdoor furniture and kitchen areas cleaned to ensure all dirt, grime and bugs are out of sight.
Garden beds: Start raking your leaves, pulling weeds, and trimming past planted items to get your garden ready for any summer blooms. For food planting beds, you’ll want to get rid of any weeds and prepare the soil to plant some new vegetables/fruits for your summer/fall seasons.
Garage: Before you decide to get your garage floors pressure washed, you’ll want to go through your garage and donate unwanted items or have a garage sale. Once everything is cleared out, clean up those spider webs and other debris by doing it yourself or hiring a pressure washer.
If you currently reside in Utah, consider hiring our sister company, Aqua Jet for your pressure washing and cleaning needs!

What grocery store do you shop at the most?
Martin's or Trader Joe's.
Which stovetop burner do you use the most?
Either of the two large ones, I guess. But it really depends on which pot/pan I'm using.

I wash most things in the dishwasher. The only things I wash by hand are my ceramic cookware and bakeware, and the Vitamix.
What color is your favorite laundry basket?
White.
What color was your first car?
Beige.
What was your first job?
Produce prep at a small fruit and vegetable farm.
What is the best job you've had?
My favorite job I've had was my first airport operations job. The best that I've had in terms of pay and benefits was the charter jet operations job.
What is the best pharmacy near you?
Walgreens.
Do you use public transportation?
Only while traveling. Mostly if I'm in a big city that has a good subway/train system like NYC or London.

Cleaning the toilets.
What is your favorite shampoo to use?
Nature's Gate moisturizing aloe.

Here it is at 6am in the morning and the temperature is 28 degrees……..brrrrrrrrrr………We are just 9 days away from leaving. This cold snap horrible. It is even chilly in Harlingen. 58 degrees….lol….but we can handle that. Were just hoping the snow doesn’t fly before we leave. lol. Were having our family Thanksgiving at Scott and Brandys, on the 22. It will be our last family gathering till next summer. Then we plan on leaving on Sunday 23. That gives us a week to get to Harlingen Texas. We can take out time and enjoy the trip. But if it is bad weather and snowing….OH NO….we will head straight south. To the Sunshine and warmer weather and then turn west.
We’ve made a few more trips to Goodwill and Lily Pads. Sold more stuff on Facebook Garage Sale sights. Gave more stuff away. Yesterday, I went through the cabinets in the kitchen. All those bowls and lids. I seen on Facebook recently, a funny post. “Did you know that all those socks that go missing in the dryer, turn into Tupperware Lids”? ……Hahahaah…….That’s why I found all those lids in the cabinet. Now I know where they come from. I guess I am never to old to gain more knowledge. But still have lots of stuff……Will it never end?….
When I was a little girl, I lived with my Grandma for 2 years when my parents split up. I was in 4th and 5th grade. I have so many memories. She lived in an old 2 story house. I loved it. It seemed so big but I bet it wasn’t. Seems like when your a little kid everything is so HUGE!!!….When you grow up everything becomes much smaller.
My Grandmothers House in Kewanee….Drawn by my sister Anna
I have so many memories of this house. Waking up in the morning, (of course had to tryout every bedroom in the house, up stairs or down) smelling fresh percolated coffee filtering the air. Sitting on the front porch whether, I was swinging or just sitting on the wooden steps. I would love to watch the cars go by. She lived on Main St. in Kewanee. I can still see her cutting her grass with the push mower, hanging her laundry on Monday, wash day. The whole back yard was full of sheets and clothes hanging with the poles holding the lines up. She did her laundry down basement in the wringer washer and the old washtubs. She had a sistern with a hand pump for water and huge crocks of water. She also had a coal bin down basement. In the winter she would have to get up in the middle of the nite to stoke the furnace with coal and corn cobs.
These are 2 pics that I found quickly to add. The first one is in 1960. It was probably a Sunday. We always dressed up to walk to church on Sunday. She didn’t have a car, so we walked everywhere. The second is taken in the back yard facing the back porch. I must have been around 2 or 3. I spent many hours playing on the back porch and the sidewalk with my neighbor friend Sue Ann. We would play jacks, hopscotch and roller skate with those old dangerous skates that clipped on the shoes…You would be skating along and they would come off the shoe and dangle from the ankles. Well you know what that would mean…..CRASH….OUCHHHH…..Cryyyy…..Bandaids…..I’m dying…………lol…
1960 standing by the old garage
My Grandma and me in her back yard around 1952
She had a beautiful garden in the backyard. It was full of fruit trees, bushes, flowers, and vegetables. She grew all kinds of veggies in her garden and canned them. She also had cherry trees, apple trees, and peach trees. Raspberry bushes, red and black, and currant bushes. She even had a grape arbor. Flowers were everywhere. I remember her beautiful red poppies that came back every year. I would come home from playing and I would go to the back yard behind the garage and find her picking the berries. Of course they were all sticker bushes, so she had long sleeves and a net on her hair. She canned everything she grew. Ohhh How she could cook. She had around 11 brothers and sisters, so when they came to visit, everyone had to go see the garden, and what wonderful aromas and food came from her kitchen. Ohhhh the jams and Jellies she could make. Grandma had the old stove with the cast iron lids on the top. On the left side was the area to put in coal or wood to fuel the stove and on the right was the oven. Extending up on the back was the warming area and a shelve for salt and pepper. the cast iron lids had a removable handle that you interchanged from lid to lid to open the stove area. This is where she would brew her coffee. (So what happened to me? lol I love the smell of coffee…..Brings back these memories….But can’t stand to drink it.) But the one thing I remember most is her ……OLD FASHIONED ROSE BUSH…..
It was planted against the back of the old garage. It bloomed only once a year at the end of May. It was just covered with beautiful Pink flowers. It would get so big that she would tie it up. The branches would grown long and arch out and bend to the ground from the weight of the flowers . This picture is from the 1940s. I also have a picture of my Grandfather standing beside it. He died in 1949 before I was even born. When my mom was married, she took a piece of the rose bush everywhere she moved. Burlington, little town of Cameron, country house in Cameron, and finally Toluca. All the bushes I believe are now gone. When Rich and I were married and moved here to this house, I took a piece from my childhood house in Toluca. It just flourished on the north side of the house. When we added on to the back I had to replant it again on the west side of the front porch. Their it is today. Growing like crazy.
My sister from Albuquerque came for a visit, a number of years ago and took a piece home with her. Then she gave a piece to her son in Santa Fe New Mexico. It is still growing at both homes. Now in the spring, when we return, I will be starting more pieces of it at both the girls homes and my sister in law, Connie is anxiously waiting for a piece also. Connie has a beautiful yard. She has put so much time and energy into it. She has a green thumb. Connie and Brian bought her dads home, and I know she spends her time sitting on the back porch and reminiscing also. Leo put a lot of time into his garden. So a Rose bush in her yard will make a Beautiful addition. So this little Rose Bush is still growing and flourishing in Albuquerque and Santa Fe New Mexico and McNabb Ill. Next spring it will also be growing in Spring Valley, Granville and little Mt. Palatine. All since the 1940s. What a history. It may be much older as my Grandma moved to her home in the early 1920s after she was married. The picture that I have of my Grandpa is how I am giving the Rose Bush its age. My Grandpa died the year before I was born, 1949. Hopefully the Bush will live on and the kids will all follow tradition and keeping passing a little piece of this bush on………What a Great Legacy…..
Some more pics of the Rose Bush and some other flowers in my yard.
more

Of Course , I have to end this blog with a pic of Kitty in the window…..Hes been around for a long time….
Ps…….The sun is up……….will not really…its just daylight…….OMG…Their is a Dusting of SNOW ON THE GROUND…………..
Grandma’s Rose Bush….1940’s to Now…..Living Forever… Here it is at 6am in the morning and the temperature is 28 degrees........brrrrrrrrrr.........We are just 9 days away from leaving.

CSA WEEK 9
P I C K L I S T
Tomatoes (red + heirloom) - Carmen Sweet Pepper - Hungarian hot wax pepper -
Patty Pan - Thai Basil - Soy Beans (EDAMAME) - Corn - Cauliflower -
Eggplant- Asian Eggplant - Red Onion - Yellow Onion - Potatoes
Yall. It’s real hot and your cauliflower is a big indicator of the weather.
It was our intention to pick the cauliflower crop for you all on Saturday to avoid the 90 degree days ahead but we got distracted by blueberries, weeds as big as tiny horses, the daily pick, etc… On Monday Ray headed down the road to pick 265 heads of cauliflower for you all- hoping the crop had not fully bolted. He came back mostly successful, but I am sure you will find some damage and bolt on your cauliflower- this is inevitable as cauliflower is not a fan of humid heat waves (but what New Englander is?).
In other crop news, our blueberries are beginning to slow down. While there is plenty of good fruit to pick it’s not as fast picking as it has been the past three weeks, the berries are starting to soften which makes it a little difficult to fill a flat. As a result we had to make a last minute call to pull blueberries from the CSA this week because we just don’t have enough. HOWEVER, there are still blueberries for sale at our farmstand, COOP food stores, and BB&P. Hopefully you will be so thrown off by Thai Basil and Soy Beans that you won’t even notice the loss of everyone’s favorite berry.
TIPS - TRICKS - RECIPES:
ON THAI BASIL
https://www.bonappetit.com/test-kitchen/ingredients/article/thai-basil
Perfect for Southeast Asian dishes, the purple-stemmed Thai basil has a bright mint and citrus flavor.
HOW TO USE: Basil should be added to dishes at the last minute. It is not the kind of herb you should simmer or saute, because it loses its flavor quickly.
JENNY’S NOTE: I LOVE THIS HERB! Freshens up any sandwich, salad, rice bowl, spring roll, cocktail, etc…
HOW TO STORE
Store basil for up to 1 week in the refrigerator. Leave it in its original plastic container or rinse the leaves, roll them up in paper towels, and place them in a resealable plastic bag for up to about 4 days. Sometimes basil will keep longer if you trim the stems and put them in a glass of water-like you would with fresh flowers, then put a plastic bag over them and refrigerate.
JENNY’S NOTE: the yogurt sauce, while delicious, is not necessary. My bottomline here: get outside, and grill your eggplant- its soooooo good. Some recipes call for salting your eggplant first, this one does not. However, if you let your eggplant sit too long before use, you may want to salt. For reference this stuff was picked on Tuesday. Also, head’s up, eggplant loves heat- do not put your eggplant in the fridge, the fruit prefers being left out on any given countertop. AND LASTLY, Since your grill is on, you might as well cook your patty pan squash, cauliflower, and onions the same way. We all need to cook more outside as long as possible because October and down jackets are not that far away people!
1 cup plain yogurt
3 tablespoons chopped fresh mint
2 tablespoons fresh lemon juice
1 teaspoon curry powder
1 teaspoon dried crushed red pepper
2 eggplants (each about 1 pound), cut crosswise into 1-inch-thick rounds
1/4 cup sesame oil
2 tablespoons coriander seeds, cracked
Mix first 5 ingredients in medium bowl; season with salt and pepper.
DO AHEAD Can be made 1 day ahead. Cover and refrigerate.
Prepare barbecue (medium-high heat). Rub eggplant rounds on both sides with sesame oil. Sprinkle it with coriander, salt, and pepper. Grill until slightly charred, about 6 minutes per side.
Arrange eggplant rounds on platter. Serve with yogurt-mint sauce.
(or not? I say, take your Thai basil, and chop and sprinkle on top)
Soy beans
When eaten at this young stage they are called Edamame (perhaps you are familiar? )
To eat:
Wash your plants (i tried to run the plants through our washer, but it is not obvious, and many of the plants are still pretty dirty- or you can consider the dirt as a necessary micro-biome protective barrier, so in that case, you’re welcome).
Pick bean pods off plant
Boil in water for 7ish minutes
Drain water, salt pods, devour immediately
This classic potato-and-cauliflower dish, ubiquitous on Indian restaurant menus, makes for a great make-ahead party dish. You can pre-roast the vegetables, and then whenever you’re ready, throw them in the pan with your spices and onions to finish the dish in 15 minutes.
INGREDIENTS
2 medium russet potatoes, cut into 2"-long sticks
1 medium head of cauliflower, cut into small florets
5 Tbsp. extra-virgin olive oil, divided
1 tsp. cumin seeds
½ tsp. ground turmeric
1 small onion, finely chopped
1 Tbsp. thinly sliced ginger
Pinch of asafetida (optional, but really great)
Pinch of red chili powder
1 tsp. (or more) kosher salt
1 Tbsp. (or more) fresh lime juice
½ cup chopped cilantro leaves with tender stems
RECIPE PREPARATION
Preheat the oven to 400°. Line a rimmed baking sheet with foil. Toss potatoes and cauliflower with 3 Tbsp. oil on prepared sheet. Spread in an even layer and roast, tossing once halfway through, until cauliflower and potatoes are browned and slightly crisped, about 30 minutes. Let cool.
Meanwhile, heat remaining 2 Tbsp. oil in a large skillet over medium-high until it begins to shimmer. Add cumin and cook, stirring frequently, until they turn a medium shade of brown, about 1 minute. Reduce heat to medium and swirl in turmeric. Add onion and cook, stirring frequently, until translucent, 4–6 minutes. Add ginger, asafetida (if using), and chili powder and cook, stirring, until heated through and well combined, about 1 minute longer.
Stir in roasted potatoes and cauliflower, including any charred bits from the foil, and gently mix (don’t overmix, or the cauliflower will fall apart). Add salt and cook, tossing occasionally, until potatoes and cauliflower are tender (but not soggy!), 5–6 minutes. Remove from heat and add lime juice. Taste and add more lime juice or salt, if needed.
Transfer potatoes and cauliflower to a platter. Top with cilantro.
