Chile Pizza Market: Exploring Flavorful Varieties, Cultural Significance, and Emerging Trends
Tumblr media
The pizza market in Chile represents a significant segment within the country's culinary landscape, reflecting the nation's diverse gastronomic preferences and cultural influences. This article provides an in-depth analysis of the Chile pizza market, including its historical background, popular varieties, consumption patterns, major players, and emerging trends.
History
The introduction of pizza to Chile dates back to the mid-20th century, with Italian immigrants bringing their culinary traditions to the country. Initially perceived as a foreign delicacy, pizza gradually gained popularity among Chileans, evolving to incorporate local ingredients and flavors. Over the years, pizza has become a ubiquitous dish in Chilean cuisine, enjoyed by people of all ages and backgrounds.
Popular Varieties
Chileans have developed a taste for a wide variety of pizza styles, ranging from traditional Neapolitan and Margherita pizzas to innovative creations that reflect local ingredients and cultural influences. Some popular pizza varieties in Chile include:
Pizza Napolitana: Featuring a thin crust topped with tomato sauce, mozzarella cheese, oregano, and anchovies, Pizza Napolitana pays homage to its Italian roots while incorporating local flavors.
Chilean-style Pizza: This variation often includes unique toppings such as pebre (a Chilean salsa), avocado, seafood, and Chilean meats like chorizo or longaniza.
Vegetarian Pizza: Reflecting the growing trend towards plant-based eating, vegetarian pizzas featuring an assortment of fresh vegetables and herbs are increasingly popular among health-conscious Chilean consumers.
Gourmet Pizza: Upscale pizzerias in Chile offer gourmet pizza options, showcasing premium ingredients such as prosciutto, arugula, truffle oil, and artisanal cheeses.
Consumption Patterns
Pizza consumption in Chile is widespread, with pizzerias, fast-food chains, and casual dining restaurants catering to a diverse customer base. Pizza is commonly enjoyed as a convenient and affordable meal option for families, students, and professionals alike.
Moreover, pizza has become a popular choice for social gatherings, parties, and celebrations in Chile. Its versatility and ability to accommodate various dietary preferences make it a crowd-pleaser, ensuring its continued popularity across different demographics.
Major Players
The Chilean pizza market is characterized by a mix of local pizzerias, international fast-food chains, and upscale restaurants competing for market share. Some of the major players in the Chile pizza market include:
Domino's Pizza: An international pizza delivery chain with a significant presence in Chile, offering a wide range of pizza varieties and side dishes.
Pizza Hut: Another global pizza chain operating in Chile, known for its diverse menu options, including stuffed crust pizzas, pasta dishes, and desserts.
Tiramisú: A popular Chilean pizza chain specializing in traditional and gourmet pizza varieties, as well as pasta dishes and desserts.
Papa John's: Yet another international pizza franchise with a presence in Chile, known for its signature "Better Ingredients, Better Pizza" slogan and quality offerings.
Emerging Trends
The Chile pizza market continues to evolve in response to changing consumer preferences and culinary trends. Some emerging trends in the Chile pizza market include:
Artisanal Pizza: A growing number of independent pizzerias in Chile are focusing on artisanal pizza-making techniques, using high-quality ingredients and traditional methods to create authentic and flavorful pies.
Healthy Options: With an increasing emphasis on health and wellness, many pizzerias in Chile are offering healthier pizza options, including whole wheat crusts, gluten-free pizzas, and vegan cheese alternatives.
Online Ordering and Delivery: The rise of digital technology has transformed the way Chileans order and consume pizza, with online ordering platforms and delivery services becoming increasingly popular among consumers.
Pizza Festivals and Events: Pizza-themed festivals and events are gaining popularity in Chile, offering food enthusiasts the opportunity to sample a wide variety of pizza styles and flavors from different vendors.
Government Regulations and Food Safety
The Chilean government plays a significant role in regulating the pizza market to ensure food safety and compliance with sanitary standards. The Ministry of Health oversees regulations related to food handling, storage, and preparation in restaurants and food establishments, including pizzerias.
Furthermore, the government implements measures to enforce labeling requirements, allergen declarations, and hygiene practices to safeguard public health and prevent foodborne illnesses. Regular inspections and audits are conducted to assess compliance with regulatory standards and promote best practices in food safety.
Cultural Significance and Culinary Heritage
Pizza has become more than just a food item in Chile; it has embedded itself into the cultural fabric of the nation. Families often gather around a pizza to share stories, celebrate special occasions, and enjoy quality time together. Additionally, pizza has become a staple at social events, ranging from casual get-togethers to formal gatherings, reflecting its universal appeal and ability to bring people together.
Moreover, the culinary fusion of Italian pizza-making techniques with Chilean ingredients and flavors reflects the country's rich cultural heritage and culinary diversity. This blending of culinary traditions highlights Chile's openness to embracing global influences while maintaining a strong sense of national identity.
Community Engagement and Corporate Social Responsibility
Many pizzerias in Chile actively engage with their local communities through various corporate social responsibility (CSR) initiatives. These initiatives may include donations to charitable organizations, sponsorship of community events, and participation in environmental conservation efforts.
Furthermore, some pizzerias collaborate with local suppliers and producers to source ingredients sustainably and support small-scale agriculture. By prioritizing ethical sourcing practices and community engagement, these pizzerias contribute to the socio-economic development and well-being of local communities.

I saw on your twitter you live in SF, I just moved to Berkeley a couple months ago and was wondering if you could give me some recs in the area for bookstores and restaurants (sorry I know this isn’t related to fics or Pedro)
omg no please don’t apologize i love the Bay Area so much i’d love to give you recommendations!!
i know sf much better as i’ve lived here for like (oh god) 12 years, so most of my recommendations will be on this side of the bay—
bookstores:
- Green Apple Books (Inner Sunset & Inner Richmond) — the one in the Richmond is far larger, but both are amazing used bookstores with incredible selections. The one in the sunset has readings occasionally which is really cool.
- City Lights (North Beach) — perhaps one of the most famous bookstores in the country. they even have their own publishing company. literally three stories of books. the third floor is entirely poetry with a cute little reading nook.
- Dog Eared Books (Mission) — cozy bookstore on Valencia, they sell used and new books.
- Half Price Book (Downtown Berkeley) — omg this place is huge. it’s family owned and also sells music and movies. i once found a city lights beat poetry collection from the late 50’s here for like 15$
- Pegasus Books (Thousand Oaks, Berkeley) — huge selection of used and new books. they also do readings here occasionally.
BIZARRE WILDCARD OPTION: Bound Together Bookstore (Haight-Ashbury) — this place is weird af but worth at least one visit. they sell a lot of local zines which is cool, but also have a lot of conspiracy literature, anarchist and counterculture books.
restaurants (i’ve been vegetarian for fourteen years so keep that in mind, i also have a real affinity for Central and South American food):
Rooh (Mission Bay) — elevated Indian food. sooooo good. best naan i’ve ever had in my life.
Pancho Villa (Misson) — great, affordable Mexican food.
El Farolito (Mission) — best burritos in the city, don’t let anyone else tell you differently. it is cash only, though, so be prepared for that.
Panchita’s Pupuseria (Mission) — real Salvadoran pupusas. cheap and sooo fucking good.
Burma Superstar (Richmond) — incredible Burmese food. best tea leaf salad i’ve ever had in my life. good cocktails too, if you’re into that.
Chile Lindo Empanadas (Mission) — only real Chilean empanadas in the city. so incredibly good that they’re only open Thursday-Saturday and they sell out FAST.
Fiorella (Sunset & Richmond) — great Italian. the one in the Richmond has a larger menu and cocktails, but books up fast. sunset location is just as good, easy to get a table.
Greens (Marina) — INCREDIBLE vegan food. pretty expensive, but worth the buck as it is right on the bay and the food is divine even for those who don’t normally eat vegan. good place for a date or anniversary.
feel free to message me off anon (or again on anon if you’re more comfy that way) for more recs or tips on bay stuff. my whole family is from here (specifically South Bay and sf) and i love talking about this place. i hope you’re enjoying your time here so far <3

Day 3!
Our stary in Trinidad and Tobago has been truly amazing. We’ve had so much fun and have learnt quite a lot!
Yesterday, after our tour, we were so tired that we got back to the hotel and just  fell asleep as soon as we touched our beds. As soon as we woke up, we were starving and just ordered some food from a pizza place that was nearby. When we were eating that pizza, we started laughing! We couldn’t believe we were eating such a basic thing when we were visiting such an incredible and exotic place! So we made a deal: We were going to have some traditional “Trini” food the next day.
So, on our third day, we went out to look for some traditional cuisine. We decided to go back to the tourism center and look for our dear friend Tamika so she could recommend us the best place to eat real food from her country. She told us not to look for fancy restaurants and to go to Queen’s Park Savannah to look for street food being sold on food trucks! So, because we were already familiar with the park from our visit on our first day there, we went to look for some good food by ourselves!
Tumblr media Tumblr media Tumblr media
We were quite impressed by everything as you can see! :)
Once we got there, we got to see a lot of food trucks and small shops that seemed to have recurrent costumers because some of them had really long lines of people waiting to order some food! We actually spent quite a while looking for something to eat, but we didn’t really know what was on the food and we didn’t want to buy something that we wouldn’t enjoy!
Tumblr media Tumblr media
We’re sure that we had such a lost expression on our faces with all these new food items that we had never heard before, that a couple approached us and asked if we needed help! We told them that we had travelled all the way from Chile and you wouldn’t believe this, but they turned out to be from Chile too! It is always such a nice feeling to find people from your own country when you’re visiting such a remote place like this one.
Tumblr media
Turns out they had been living there for 2 years now because they met at University of Trinidad and Tobago! So we asked them for some food recommendations and they told us to try two dishes: corn soup and something called “Bake and Shark”.
The day was a surpisingly chilly afternoon, and because we spent so long looking for food, the sun was already setting and we hadn’t brought anything warm to wear! So the corn soup was actually a blessing. When we recieved our bowls whit the corn soup, we immediately thought “This is just like a Chilean Cazuela!” just by the looks of it, but when we got to try it, it wasn’t the same flavour as our favorite chilean soup. For starters, corn soup is actually vegan! It does not include any type of meat or animal products of any type, is just made up of an exquisite mix of various vegetables and what we thought was meat were in fact dumplings! Even though we love ourselves some cazuela, corn soup deffinetely was a huge surprise and delicious! Our new friends, Carlos and Alejandra, tolds us this soup was usually consumed when you knew you were going out partying and wanted to have a strong stomach or for the day after partying as a nourishing dish!
Tumblr media
This is Trinidadian Corn Soup!
Tumblr media
And this is a Chilean Cazuela! They look so similar!
We were finishing our corn soup when we went to pick up our “Bake and Shark”. And yes, just as the name says, it is real shark meat! We were a little worried about trying something so exotic. You would certainly not find shark meat that easily were we come from! But if you’re visiting new places, you should try to embrace it fully and food is a really important cultural aspect that no one should miss out on when going abroad. So we went for it.
Tumblr media
Bake and Shark consists of fried flatbread with fried shark meat and other various ingredients and sauces. In this case, our bake and shark had lettuce, pineapple, coleslaw and tomatoes. We were told that we could put some ketchup or mustard on it! But we decided to try it as it was. The best way to describe shark meat is to compare it to chicken! At least when it comes to the texture, because as far as the flavour, neither of us could come up with a similar food item to compare it to, so we think the best way to expierence this is to travel all the way to Trinidad and Tobago and try it yourself! We were a bit scared of trying such a foreign type of meat, specially when we hadn’t even seen a real shark in person before because they are not a common sea animal in Chile. But after all, Bake and Shark is quite a tasty and unique dish!
After eating alongside our new friends, we went out for some drinks nearby! We had the best time 😀

Our first days in Patagonia
When I first read about trekking in Torres Del Paine national park months ago, I knew it was something we had to do. We wouldn't really call ourselves hikers, we love walking but haven't done much in the mountains after living in London for 6 years. But we like to think we are reasonably fit, even compared to when we went to South East Asia, despite being a bit older.
Getting to the mountains isn't super easy though, there are a few options, all of which involve some bus rides. But as you may have read in the last post we were flying to Punta Arenas which seemed the best option for us. It is surprisingly far, a 3.5 hour flight. We arrived there at night and ended up sharing a taxi with a nice Spanish couple who talked the taxi driver into giving us a good deal. Still had some time to get some lovely dinner out, I had some savory crepes and Dan had basically a bowl of 3 meats with no veg. He described it as very rich.
As a vegetarian I was a little worried about the food here. But so far in chile I've found lots of options, even lots of vegan places. Which I guess is down to the youth. Apparently it will all change once we get to Argentina, but we will see!
Oh, also there's a time difference here. It's 1 hour ahead of Santiago. So there's been a lot of time changing and confusion during this part of the trip with the clocks going back when we were in Valparisio! 😄
We were only in town for one night, we had a bus to catch the next day but had some time in the morning to wander around. It's the capital of Chilean Patagonia and has a lot of European influence in the architecture due to its history as a port town between the Pacific and Atlantic ocean. Just like Valparaiso, it was affected by the opening of the Panama Canal.
Tourism wise, it's used as a base for trips to Antarctica or visits to Penguin Island (which we didn't have time for) and for Torres Del Paine. But we just walked around, visiting the city center and the waterfront.
We then took a 3hr bus to Puerto Natales, getting closer to the hike now!
We were staying in a little b&b near the bus station, they had the heating on full whack. No energy crisis here in Chile! The weather is much different here in the south to when we were in Santiago, we went from 30 degrees heat to about 6, much more like home.
We had time to go shopping for food for our trek and to hire some gear that would come in very useful. The next day we would be taking the bus to the national park, it was an early start, 7am bus! More on that in the next post though….

vegan chilean street food inspired burritos with summer fruit salad
preface
this is a fully vegan recipe; if there is ever any doubt that an ingredient i call for in this recipe for may not be vegan, do assume that i am calling for a vegan version of said ingredient. to make this fact additionally clear, i will use the denotion "v. 'ingredient'" throughout the recipe for more potentially uncertain products (i.e. 'v. cheese' refers to a product such as violife, which i used in making this recipe). regardless of all syntax and formatting, this recipe is fully vegan.
v. chorizo anticucho
ingredients:
> one package of soyrizo (v. chorizo).
> anticucho spice blend (mix to your taste):
goat horn chili flake
salt
pepper
oregano (need to buy oregano)
umami mushroom seasoning
v. chicken bouillon powder
balsamic vinegar
white wine vinegar
msg
> one hash brown patty.
> one half of a small onion, diced.
> canola oil.
directions:
> preheat a large pan over medium - high heat.
> prepare the hash brown by baking or frying until lightly golden, then cool, dice, and set aside.
> in a large bowl, mix the spice blend into the soyrizo until well combined. adjust seasoning as desired.
> oil the pan once hot, and then cook soyrizo until just browning.
push the soyrizo off to one side of the pan, and then add in the prepared hash-brown and onion to the pan, cooking separately from the soyrizo until browned to your ilk. mix together until combined, keep warm until assembly.

black salt
turmeric
paprika
smoked paprika
cumin
salt
pepper
v. chicken bouillon powder
directions:

crumble block into a few large pieces, then squeeze water out of tofu with as much force as it takes to fracture the tofu without causing it to crumble entirely. repeat with the rest of the tofu, then set aside onto a paper towel. let sit until ready to add to pan.
> in a hot pan with shallow oil, cook the onion until soft and light brown.
> add in garlic and cook until golden.
add in the prepared tofu and seasoning blend, and then working in batches, top yhe scramble with handfuls of the v. shreds, allowing it to slowly melt on top before incorporating. continue to cook on lowered heat until desired eggy flavor and consistency are reached. keep warm until assembly.

roll the burrito using a final layer of v. cheese to seal the burrito like an envelop as you finish rolling. place the burrito seam side down in a still-hot pan and grill until the tortilla is browned to your liking. serve immediately with chilled fruit salad, and enjoy!
about
i had originally gone to the store with the intention of making crunchwraps later that night, but once home i changed course. i switched from crunchwrap to burrito, chose the cuisine i would try to emulate (chilean street food, as inspired by my lovely fiance) and, on a whim, decided to incorporate locally forged blackberries into a ripe summer fruit salad. it turned out far better than expected, with the anticucho and blackberries being the standout stars of the show.

Chilean vegetables
The italianos in the picture are big courgettes/zucchini - almost the size of a small marrow. The granados are beans. They are most popular in Porotos granados, a Chilean squash and bean stew. It’s a savoury mix of onion, garlic, squash and corn, with two kinds of beans: French and these red skinned ones.
Tumblr media
My host in Chile would be surprised to know that you can find a recipe for this here in the UK. It’s by Hugh Fearnley Whittingstall and seems eminently suitable for the snowy, wintry conditions we have been having recently. So I made it.
(You  can also add a bit more liquid and turn it into soup, as I did for the photo above).
Tumblr media
It goes without saying that I had neither dried beans or fresh red skinned ones at home.  The version I produced - with tinned cannellini beans - was good and it only took about 20 minutes.

rating latin american countries based only on the people ive known from them and maybe also food. in your inbox.
mexico (ive known the most ppl from mexico n have lots of mexican friends so i cant really put them lower. lots of cool ppl, good vibes)
el salvador (good food also)
uruguay (not weird and bad like argentinos, buena onda n everything, still don't understand when they talk)
argentina (i have known a few cool ppl from argentina, despite the vibe there being bad. did meet a borderline incel with mommy issues who had a huge crush on me, p cringe)
perú (ppl make fun of it a lot but at least one of the peruvians I've met is rly nice [despite being a J.W. :/]. the other two were weird. It seems like it would be nice to visit)
venezuela (weird but cool person, haven't talked in a while tho)
honorable mention for P.R., D.R. and cuba. (ik pr isnt a country) I've barely talked to anyone from these places which is why they've this position but the food is so good from all, I really like the accents, and the ppl seem cool from what I've seen. I think. Vibes on cuban-americans are kinda stinky sometimes tho
chile. i only met one chilean and I couldn't understand her when she talked and she won't stop talking about veganism. i like the chaotic vibes tho.

genre(s) : fluff , strangers to friends!au , law of the jungle!au , celebrity!au
pairing(s) : reader x bang chan, reader x a turkey and some trout lmao (also featuring the chief himself kim byungman, as well as kangnam, yoon park, heo kyunghwan, and hong jinyoung because they’re some celebrities that have been on law of the jungle that i really like haha)
w.c. : ≈ 950
desc. : bang chan comforts you when you start to feel guilty about your dinner on law of the jungle
warning(s) : animal death , mentions of blood and uhh animal body parts :/
a/n : i really don’t know why i’m writing this because i’m vegetarian HAHAHA (fellow vegetarians or vegans i’m so sorry) but i thought of it while watching the show law of the jungle! it’s a korean tv show where different celebrities (a mix of idols, actors, athletes, models, etc) go somewhere in the world with the “chief” kim byungman and survive however they can by battling the environment, building their own shelters, and catching their own food. this specific scenario is inspired by law of the jungle in patagonia! the show is really fun, i highly recommend if you are interested in survival in the wild. also, reader is a celebrity, obviously, but it’s up to you what kind of celebrity you are!

“oh no…” you whined. after eating nothing but wild berries and wild berry jam the whole time you were in patagonia with the tribe, you were exhausted, discouraged, and absolutely starving. you were sitting next to the fire, making more jam with the wild strawberries you picked when the hunting team came back. the chief and kangnam held a net in their hands, most likely holding some type of fish or sea creatures, while jinyoung held some sort of bird in her hands and bravely led the other three men towards your shelter.
being crazy hungry, you thought you’d have to wet your lips and stop yourself from drooling if the hunting team did come back with your next meal. but instead of drool, all you got were shivers down your spine. your heart broke when you saw the bird flapping around in jinyoung’s grasp. it had probably come from the trap you helped the chief and the others set up earlier that morning. the poor thing…
“(name), you’re hungry, aren’t you?” yoon park asked you.
“yes, i really am,” you replied with a nervous laugh. you didn’t want to show that you were upset after all the hard work the tribe had gone through to catch food to feed each other. you were unbelievably grateful, but the bird just looked so scared.
the whole tribe erupted into cheers. “hey, (name), you can continue making the jam and we can eat it with the turkey!” jinyoung said. you nodded and smiled. everyone looked so excited, and you didn’t wanna bring the mood down by expressing your sadness over an animal’s life being taken. you never felt this way when you ordered chicken at home, but having to be a witness to the actual killing part made you feel sick.
the chief and the others went off to start gutting the turkey and the trout to get them ready for your meal. you continued cooking the jam and winced as you tried your hardest to ignore the turkey’s cries for help. you made eye contact with the law of the jungle staff, and they chuckled at your distressed expression. you couldn’t help but chuckle back. why were you acting like this?
“it’s gruesome,” you said, making eye contact with one of the camera directors. he nodded in response, sympathizing with your feelings.
you felt a presence near you, and looked up to see bang chan from stray kids watching you make the jam. he had a fish skewered through a stick and you tried not to look at it as you patted the spot next to you, inviting him to sit. you were on good terms with everyone in the tribe, but you had the least chances to speak with bang chan out of all 6 of your tribe members, so you were still curious about him. especially since he was the youngest out of all the men in the tribe.
“i have a dog named berry,” he told you with a smile as he pointed at the jam you were making. “do you have any pets?”
“i have a fish,” you said with a blank expression, looking at the dead chilean trout on the stick he was holding.
“ohhhh…” chan said awkwardly, glancing down at the fish he was holding. “i’m sorry.”
“no, no, it’s fine.” you grinned.
“oH MY GOSH IT’S SO BLOODY-“ you heard kyunghwan shout. chan laughed next to you.
“kyunghwan sunbaenim looked so funny trying to get the turkey out of the trap, you should’ve seen-“ chan turned towards you and saw how disturbed you looked. “hey, (name), are you okay?” he saw your eyes get watery and a worried expression appeared on his face immediately. why were you acting like this? you kept asking yourself why you had to ruin the mood like this.
“i’m sorry, i was excited to finally get some food other than berries, and i feel bad being upset when everyone is so happy. i guess i just didn’t expect the real thing to be this… sad to me,” you explained. chan nodded understandingly, which you appreciated. you made eye contact with the dead fish and shuddered as he placed the small trout on the makeshift grill that the chief had made, being nice and tactless enough to move the grill as far away from you as possible.
“WHY DOES THIS TURKEY HAVE FAT RAMEN NOODLES FOR INTESTINES?” kyunghwan shouted again and you groaned, making chan giggle cutely.
“i feel so guilty…” you pouted.
“it’s okay,” he reassured you. “it’s nothing to feel guilty about. it’s not easy to handle, no matter how hungry you are.” chan placed a comforting hand on your parka-covered shoulder, and you thanked him as you took the pot of jam off the fire and placed it on the ground. “circle of life, right?”
“circle of life,” you repeated back to him, starting to feel a little better.
“(name), does your pet fish have a name?”
you and chan talked for a few minutes, getting to know each other until the rest of the tribe came over with the freshly gutted turkey and the other trout. you winced again.
“the jam is ready, so (name) and i are gonna go get more sticks for the fire if that’s okay,” chan said. the chief nodded, immediately realizing that you were uncomfortable watching the animals, and sat down to cook them. “don’t worry, i gotchu.” chan smiled as he patted your back, standing up and offering you his hand.
you felt extremely grateful for the kind boy, and got up to go collect more sticks with your new friend, starting to actually look forward to your first real meal in days.

Live! From New York -- A Brittana Fanfic (Part 3)
Look. Just look, okay? I can’t have a Glee fanfiction without a musical number. I’m pretty sure it’s required by law. Also, things are not always what they seem. remember that. Catch up here on Tumblr, on FF.net and AO3.
‘You’re such a dork, Lopez’ Santana thought to herself, pushing herself to maintain her pace on the elliptical machine.
She had been working out for nearly an hour, but had yet to really get going. Cardio was pretty important for stage performances, and so Emma made sure that they had at least two hours for that a day. Santana liked working out anyway, so it wasn’t a problem, her colleagues however, tended to chafe at the directive a bit more.
For example, Mercedes was on a treadmill next to her, going at nearly the minimum speed, reading a script that someone had sent her. She tended to think that she did most of her exercising on stage, and didn’t really need to work beyond that. Mike Chang, one of the lead male characters, and head of the ensemble dancers, felt he’d done enough, and was lounging on a weight bench nearby, flipping through the channels on the TV. Rachel had declined to join them, she usually chose to work out in her own personal gym because of her “particular sensitivities to unpleasant odors’. Normally Santana would have argued, but it meant not having Rachel around for a few hours, so she was all for it.
Today, she was going at full tilt, desperate to do something with her mind and body that didn’t include worrying about hosting Saturday Night Live, and that day was fast approaching. Her agent had spent the better part of the last weekend (on Emma’s direction) making sure that this engagement would in no way affect her Broadway performance, and then convincing Emma (on Santana’s direction) to give her an entire week off from the show. This had been less successful, and Santana was looking at five full days off (her longest vacation in a while) that would take her from the end of the Wednesday matinee until Sunday, and then Monday she’d always had off.
And she would need it. The day of the host dinner had finally arrived, and she only had one more show, and then it was on to Saturday Night Live glory. In only a few short hours, she would be wining and dining with the cast that made her laugh every Saturday. She felt like she might vibrate right out of her skin, she was so excited, but she obviously couldn’t tell anybody that. She was Santana Lopez after all.
“All you’ve gotta do is play it cool. Don’t think about how this is all you’ve wanted since you were 16. They  should be happy to meet you! You’re Santana Lopez, Star of stage and the small screen. They’re going to be be eating out of your hand.”
Santana had been talking under her breath, but she heard a chuckle beside her.
“Giving yourself one of your patented Santana Lopez pep talks, huh? I remember that from opening night of West Side. I thought you were going to pass out.”
Santana laughed in spite of herself. Her very first show (one that Mercedes had worked on as well), was a roller coaster ride from funding to production. It was then that she found out how invaluable her working relationship with Quinn was, and how amazing a person like Emma could be when it came to keeping the trains running on time. As much as she bristled against the constant pull from the two of them, she had nothing but respect for their insights.
“Yeah, well, there’s nothing nearly that serious going on. That night was the start of my entire Broadway career. This is just another day.”
“Oh, you can fool everybody else, San, but you can’t fool me. I’ve known you too long for that.”
“Yeah, well, I mean, I guess I’m a little excited. Don’t get me wrong, I’m not going to lose it or anything, but yeah, I mean, it’ll be pretty cool.”
Mercedes laughed again. “Fine, I think that might be all I’m going to get from you.” She turned off the treadmill, folding up her magazine, and tucking it into her gym bag. “Well, I’m going to go get freshened up for the show, I’ll see you later?”
Santana nodded quickly, jumping down from her own machine. “I think I’ll head out too. There’s something about being the last in the gym that just makes it super creepy. I’d rather be in the theater all alone than here.”
“Well, that’s no surprise, you love that drafty old building, even though I’m always telling you that it’s awful.”
“Hey, the Edgar has personality! You don’t get that in a lot of the new places. Too slick.”
“Less ghosts, you mean.”
Mercedes dodged Santana’s swat, laughing.
“Don’t even joke about that, Mercedes! We do not need some vengeful spirit getting us into trouble. Especially when I’m about to start getting ready for SNL this week.”
Santana had just dropped her water bottle into her bag when the door to the gym slammed shut, startling her. She looked up and saw Rachel sprinting towards them.
“And just like that, the bad luck has started.”
Rachel gave Santana a look, but couldn’t wipe the worry from her brow. She held up her phone insistently.
“You don’t know how right you are, Santana. Look at this! As soon as I saw it, I had to get down here right away. I know how terrible the reception is, and I couldn’t risk a text.”
Santana peered closely, taking the phone from Rachel’s hands. “Berry, you’re freaking me out, okay? What the hell- Holy shit.”
Mercedes walked closer to them, while Santana stared at the phone screen intently.
Rachel could barely contain herself. “It’s Hapa. Blaine Anderson’s place? Apparently, last night it got shut down for a health code violation, and it’s expected to be closed until the end of the month!”
“Oh no, no, no, no.” Santana moaned, running her fingers through her hair in frustration. “This can’t be happening, this can’t be!”
“Well, maybe there’s something else to be done. Just go with your back up place.” Mercedes said, patting Santana gently on the shoulder.
Santana’s eyes went wide. “Back up place? I don’t have back up place.”
“Are you seriously telling me that as important as this whole thing is to you, you didn’t bother coming up with a Plan B?” Rachel asked.
“No, troll, I didn’t, and now isn’t really the time to rub it in my face.” Santana snapped.
“I get it Santana, but that was kind of a bad idea on your part.” Mercedes added. She rolled her eyes at Santana’s glare, and continued. “But, at this point, what can you do? So, what’s the plan?”
“I don’t know, ‘Cedes. There’s no way I’ll be able to get a reservation for like twenty five people at this point in the city at any kind of restaurant that actually is not terrible.”
Santana sank to the floor. “I think I’m going to throw up.”
“Okay, San, just breathe, just breathe. Put your head between your legs.” Rachel cooed, rubbing Santana’s back gently.
“What the hell am I going to do? This whole thing is ruined.” Santana could feel her voice hitch, but the feeling of helplessness was so deep in her chest, she couldn’t help it. She could feel the tears welling up behind her eyes, and a few dropped from her lashes before she could stop them.
There was a moment of hopeless desperation in the air, but after a moment, Mercedes spoke up excitedly.
“We don’t need a restaurant! We have a place that we can use.”
“What do you mean?” Santana sniffled.
“Remember I was telling you about the producer that I’m working with on my new album? Sugar Motta, you’ve heard of her, right?”
“Yeah, a little, Mercedes, but I hardly think this is the time to be name dropping-”
“No, no, Santana, she’s got this gorgeous place on the Upper West Side, and she says she never uses it, and it’s HUGE, and she said if I ever wanted to hang out there, or have friends over, just give her a call! And you should see it Santana, it’s like something out of MTV Cribs. It’s got this incredible foyer, and like a huge fish tank, and an amazing kitchen, and dining room, and even a room for karaoke!”
“Wait, I don’t get it-”
“What Mercedes is saying is that you can hold the dinner there, Santana.”
Santana brightened for a moment, but then faded again. “That’s a great idea, but I don’t have any food. What am I supposed to feed them? Take out?”
Rachel thought for a moment. “Well, unfortunately, I don’t think I can miss this afternoon’s show, otherwise I would treat you to one of my famous vegan masterpieces-”
“Pass.”
“Buuut, I happen to know a couple of people in the crew that can help you.”
-
“The Shining Twins?”
“Be nice, Santana.”
Madison and Mason were twins, and though they were always cheery and upbeat, there was definitely something a little unsettling about them, especially when they were finishing each other’s sentences. Mason was an understudy for one of the ensemble parts, and could sing and dance well enough. Meanwhile, when he wasn’t waiting in the wings, he was helping out Madison who was asn assistant to the lead tech on the production. It was a role with a little more respectability, and Madison seemed to thrive on the tiny bit of seniority that it gave her over her twin.
Luckily for Santana, she was just out of their earshot when she voiced her insult, and tried to put on her best smile as she approached.
“Just hear me out, Santana.” Rachel said, pulling her closer. Santana nodded and Rachel continued, gesturing towards both of the twins in turn.
“I was just talking to Madison and Mason the other day, and they explained that when they first finished high school, they had been exploring their love of fine dining. And that took them to South America for two years learning all about Chilean cuisine.”
Santana perked up. “Really?”
Madison nodded. “Yep, our mom is from Chile, and she taught us everything she knew. We don’t cook that much anymore, but we like to throw dinner parties from time to time, and we get rave reviews.”
“See? You could have them do the cooking, and it’ll be just like a restaurant. I already messaged them, and they said they’d be happy to do it, but they just have a few requests.”
Santana raised an eyebrow. “Such as?”
“Well,” Mason began. “I want to have at least ten shows in the next two months where I get to perform. Our parents are coming from back home, and I want them to see me actually singing and stuff.”
“And what else?”
“Speaking of parents, we’re going to need some tickets, four total, but for whatever shows we want.” Madison added.
“Is that it?” Santana said suspiciously.
“And one more thing.” Madison said sheepishly. “There’s this creepy tech who keeps cornering me, and asking to sniff my hair. I want him on a different schedule or something.”
Santana cocked her head. “That one doesn’t even need to be a request, consider it done.”
“What do you say?” Rachel asked. “I mean, it’s not like you have much of a choice.”
“I guess not.” Santana said with a sigh. “You two are in. Do you need anybody else, or anything else?”
Madison stuck out her hand to shake Santana’s, and shook her head with a smile. “Nope, Mason and I work best when it’s just the two of us. We will also need your credit card, for supplies, and the key of the place where we’re doing the cooking. What’s the budget?”
Santana didn’t hesitate. “It’s got a limit of twenty grand, but I doubt you’ll need that much. Go crazy. Within reason, of course. I’ll get the info about the place from Mercedes.”
“Sounds good to us.”
“And if you really manage to pull it off, I’ll give you twenty shows in four months, and ten tickets to use whenever you want.”
“Seriously?!?”
The twins nearly jumped up in excitement, and each shook Santana’s hand again. She took out her wallet, pulling out a heavy, black credit card, and pointed it at each of them seriously.
“I’m counting on you two. Don’t screw this up.”
They seemed to salute in unison, and Santana nearly did a double take.
“You can count on us boss!”
They took the card, and scuttled off, leaving Rachel and Santana in the hallway.
Santana sighed again. “Okay, now I’ve just got to explain why they’re not here to the rest of the tech staff.”
“Oh, I’m sure it’ll be alright. We’ve learned a valuable lesson here, Santana: never be without a Plan B!”
Santana smiled in spite of herself, putting an arm around Rachel’s shoulder.
“Yeah, dwarf, tell me about it.”
\
Brittany had to admit that the abrupt change in venue for Santana Lopez’s inaugural Host Dinner left her wondering about how good of an event this was going to be. But once she had gotten out of her Uber and in front of the building that housed the place, she was quickly gaining confidence.
The place was swanky.
She had ridden with Tina, since they had come from 30 Rock, and could hear a gasp from the other woman as they stepped onto the curb. She pulled down her skirt, and rearranged her jacket, smoothing out the sides.
“You really should stop fussing with that, you look awesome. I mean, literal smoke stack. If I were Santana Lopez, I would start humping you the moment you came through the door.” Tina offered.
Brittany ducked her head to hide the flash of color that flooded her cheeks, closing the car door behind Tina, and offering her arm. While Tina had chosen the tallest heels in her closet, Brittany had opted for the most contour hugging dress she had, paired with a cute half jacket and bright pink Vans. Her hair was curled, and piled in a messy bun on her head. She didn’t want to sound too full of herself, but she agreed with Tina. And, honestly, she’d dressed that way on purpose. She wasn’t necessarily trying to seduce Santana Lopez, but if she saw her and just happened to fall in love, all the better. It would just end up being a happy coincidence.
She approached the door with Tina on her arm, and smiled at the doorman who opened it wide.
“Wow, how’d you know we weren’t just some randos from the street.” Brittany said jokingly.
“Ms. Lopez gave us a detailed list of who to look out for, Ms. Pierce. Straight ahead to the elevator, and up to the penthouse. You’ll know where to go from there.”
Brittany smiled and waved goodbye, leading Tina through the halls.
“The penthouse, holy cow, Brit, this chick is loaded.” Tina said.
“I definitely don’t remember this from any of her interviews. I thought she still lived in the Bronx.”
“I guess she’s moving on up like the Jeffersons.”
They both laughed at that, but once they’d stepped out of the elevator to the penthouse, there really wasn’t else they found very funny. Whatever they were expecting, this wasn’t it. The place was less like an apartment, and more like a castle. Brittany didn’t think she’d ever seen so big a condo in all of New York City. Relaxing music wafted down from the built in sound system, and before they could even blink, there was a class of champagne in their hands. A rather pale young man with strikingly black hair smiled at them, and led them to another room.
“Welcome, Ms. Pierce, and Ms. Cohen-Chang. Ms. Lopez will be with you in just a minute, if you’ll have a seat in the drawing room.”
“Drawing room??” Tina mouthed to Brittany, behind the young man’s back.
Brittany just shrugged, and took a seat on one of the luxurious chairs, sitting primly on the edge.
The man left, and it was just the two of them, so Tina crossed the room, looking closely at the fish tank that seemed to take up most of the space.
“This is incredible. This tank has got to be like two stories high.”
Brittany only mumbled in reply. Her mind was already a few miles away, honestly. The invitation had said arrive at eight o’clock, but she had been worried about arriving on time, so she’d made Tina leave early, and now it was only seven forty-five, and they were the only ones there, and she hated it. If there was one thing Brittany couldn’t stand is when you’re trying to put the finishing touches on an event, and someone shows up early. It was like she was trying to come off as a gigantic dork to Santana.
She looked around the room, and while she had to admit there was definitely an air of impressiveness to it all, it really didn’t strike her as Santana Lopez. They’d never met, and Brittany never claimed to have any special insight into the woman, but she’d read more than enough interviews to have a distinct feeling of her personality, and the garish displays of wealth that were now surrounding her didn’t feel very authentic.
A few moments later, voices from the hallway came towards her, and she stood quickly to greet them.
“If you’ll just wait here, Ms. Lopez will be with you in a moment.”
The man from before led her castmates Alex and Mickey into the room, and Brittany gave them a quick hug before following him out into the hallway.
“Hey, sorry, I didn’t catch your name.”
He turned and smiled. “Ah, that was my fault. I’m Mason, I work on Santana- I mean, Ms. Lopez’s show. I’m just helping out tonight.”
“That’s sweet of you. I was just wondering if you could point me in the direction of the little girl’s room.”
“Sure. It’s right around the corner, first door on the left. I’ll show you.” He went to walk down the hall, but the ding of the elevator indicated more visitors. “Sorry, do you think you can find it? I’m supposed to be showing people in.”
“No problem. I’m sure I can get there. Thanks!”
Mason scurried off and Brittany made her way down the hall. To be honest, she wasn’t at all sure that she could find the bathroom. She had a terrible sense of direction, and the place was huge after all. She turned around the corner that she was pretty sure Mason had indicated, and looked around carefully. There were several doors, and Brittany started opening them all. One seemed like a weird dining room, and she couldn’t resist going around to take a peek. There were several golden records hanging from the walls, and she just had to take a closer look.
She walked towards the records and frowned when she got up close. Instead of mentioning Santana Lopez and all the fantastic work she’d done on Billie the records seemed to be for someone named Sugar Motta. Brittany’s frowned deeper. She knew that name, but she couldn’t remember where. She went to reach for her phone, but cursed to herself remembering that she’d left it on the table beside the couch. She began walking, noting the titles on all of the records. Some of them she’d actually heard of before, they were dance and party songs that got a lot of radio play. But who was Sugar Motta to Santana Lopez? Maybe they lived together? Santana didn’t seem like the kind of person who needed a roommate.
Brittany shook herself. The thought had made her a little sad, and she’d had no right to be. She never even met Santana before to start being jealous of her hypothetical girlfriend. Suddenly, a commotion from a nearby door caught her attention. She walked slowly to the door, pushing it gently open a crack. Inside, a woman who looked almost exactly like Mason was putting the finishing touches on a plate. Beside her was a figure that Brittany would have known anywhere.
It was Santana Lopez.
She was standing near the plates, practically wringing the towel she held in her hands to shreds. Brittany smiled softly. At least she felt a little bit better knowing that Santana was as nervous as she was. She tuned in to what they were saying.
“Do you think this is enough, Madison? I can run to the shop down the street and see if they have any finger food or something.”
Madison laughed as she ladled some sauce onto one of the plates. “Nah, I think we’re good. I think you should go out there and meet with your guests, have a glass of wine or something. Relax. We’ve got it.”
“Relax? Yeah, I don’t think so. I’m practically freaking out. Mercedes said she was going to be here after the show was over, and I’m getting the feeling that she’s going to be late. Plus, Sugar’s fish tank is giving me the creeps. I couldn’t relax if I wanted to.”
“You’ve gotta do something, because you pacing back in the kitchen is not helping me finish any of this any faster.”
“Fine.” There was a bit of a whine in Santana’s voice, and Brittany smiled at the sound of it. “I’m going to go splash some cold water on my face, re-apply my foundation, and go kick some ass.”
“There you go! You’ve got it now. Break a leg.”
Brittany was happy Santana had found her confidence, but before she could make any significant decisions about her next move, she realized that Santana was marching towards her with confidence. She only had time to take one step back before her shoes snagged on the ornate Persian rug, and she tumbled ass over tea kettle to the floor.
“Oh my god, Brittany!” Santana yelled, rushing forward.
Brittany was fine, of course, one of the first things she’d learned when she’d studied dance was how to fall, but the familiarity with which Santana had said her name unsteadied her for a moment.
She stood up quickly sticking out her hand. “Santana Lopez, I presume?”
Santana’s smile was wide and tight, and Brittany was worried that she’d screwed up more than she thought, but Santana finally took her head, and shook it delicately.
“Hi, yes, hello. I’m Santana Lopez, and you’re Brittany Pierce, right? I, uh, I recognized you from the show. From Saturday Night Live, I mean, of course. Though, I’m sure you’ve been on other shows too.”
Santana felt the alarm rising in her chest more and more as she pumped Brittany’s  hand. At first she’d been startled. A little weirdness was fine when one was startled. But she felt herself babbling on and on, and she could feel her good first impression slipping away. Thankfully, Brittany disengaged her hand, and gestured towards the wall.
“I was just looking for the bathroom, and I noticed all these gold records. These are amazing!”
Grateful for the change in subject, Santana nodded happily in agreement.
“Yeah, they’re Sugar’s. Sugar Motta. She’s my friend Mercedes’ friend. Well, they’re not really friends, they just know each other. Sugar produced Mercedes last album.”
“Obviously!” Brittany said, smacking her hand to her forehead. “That’s where I know the name Sugar Motta! I just got Mercedes’ last album, and I was going over the production team. Not that I normally do that. I mean, I do normally do that because I’m into, like, knowing who all came together to make an album. Cause it’s really a team effort, you know?”
Brittany wished it were possible to take words that had already been spoken and stuff them back into her mouth. Her normal ability to speak casually with everyone (something that had come in really handy when Hillary Clinton had appeared on the show), seemed to be failing her at the moment, and she wasn’t sure why. It probably had something to do with the slinky  strapless dress that Santana was wearing. One that accentuated all of her best qualities and had a slit nearly up to her hip. Her hand had been straightened, and was curled off to one side, looping into the nape of her neck. Brittany felt her throat become dry all of a sudden, and she cleared it, desperate for something else to talk about.
She noted a flashing light out in the hallway, and pointed with purpose. “Hey, what’s that?” She grabbed Santana arm, and hurried out into the hall, towards the pulsating lights that were glinting off of a nearby wall.
For her part, Santana was just happy to be involved, and getting dragged around by one of her favorite (and let’s be honest, most attractive) SNL castmates was a dream come true. Santana was just figuring out Sugar’s place, herself, so their destination was as much a surprise to her as it was Brittany.
They stepped through the partially open door, and seemed to go to another world.
“It’s a karaoke room!” Brittany said in awe, doing a quick, graceful turn to take it all in. She spotted a console and ran over, pushing a few buttons before Santana had even fully taken it what was happening. “Oh my god, they have so many songs, we have got to do some!”
Santana hesitated. On one hand, she was already having more fun than she’d been having all night. The stress of throwing this party reminded her why she didn’t do it, and her idea of of a nice night out was taking a six pack of wine coolers to Mercedes’ place and watching Drag Race until they passed out on the couch. On the other hand, Mason had ducked in a little while ago and told her the guests were arriving in droves. She had a responsibility to meet them, didn’t she?
As if reading her mind, Brittany reached out a microphone to her, and smiled invitingly. “Don’t worry, we’ll do one song, and then head out. Just one, I promise.”
There was a strange touch of familiarity in her voice, though Brittany tried to hide it. It warmed Santana, and she found herself nodding and smiling before even giving it a second thought. She took the microphone, gripping it in her hand tightly. She felt as nervous as she’d been on opening night of her first high school performance. Like there was so much riding on this, and so much to lose, but also so much to gain. She was on the precipice of a great moment here, she could feel it, if only she could figure out the exact best way to land.
“I’ve found the perfect song, too!” Brittany said, snapping Santana back to reality.
The music started, and Santana could tear her eyes away from the way that Brittany moved.
Oh don't you dare look back
Just keep your eyes on me
I said you're holding back
She said shut up and dance with me
Her voice started strong, and Santana smiled. She loved this song. She was finally able to pull herself out of the trance that she’d been in, and she did a little twirl herself, joining Brittany on the next lines.
This woman is my destiny
She said oh oh oh
Shut up and dance with me
Brittany reached out her hand, and Santana took it, dancing and swaying along with the music.
