Estonian baking includes a large variety of pastries (which the influences of you could see being from Scandinavia, but I'm sure also Germany and other places)
This in the image though is not a Estonian answer to pączki (I looked it up, that would be moosipall, aka jam ball in direct translation)
No, that in the image is vastlakukkel, which is most famously known as semla which is Swedish origin.
Just a little correction there!!!
Vastlakukkel is special for Vastlapäev, in which only on that day (or around that day nowadays too) you eat this pastry alongside pea soup, and you go sledding!

So you know how in like every Soviet era fic it's always Liet that is in charge of cooking and baking meanwhile Eduard being Eduard is good with numbers and stuff so he gets a job along those lines? Now i am just picturing him being somewhat disappointed that he wasn't assigned to that job and Tolys was. Eduard secretly envies Liet being tasked with making 10 dozen pastries for an important dinner because for Eduard, he just sees it as a logistic problem he's ready to tackle.
Edit i looked and Estonia has a really unique baking tradition.
This is somewhat like the Estonian answer to pączki but it's quite different

On the day following Vastlapäev it was costumary in Estonian farms to construct a "kada" out of old rags. "Kada", seen as an embodiment of evil, misfortune and possible illness that may befall the family, was then chased with stick into the forest (or the manorhouse) and as far away as possible from the home. Here women sing a Kada spell in front of the Russian Embassy in Tallinn

Lihavõtted tähistasid seda, et sai uuesti liha süüa - Vastlapäeval söödi talveks varutud lihast viimased seajalad hernesupi sees ära ning siis kuni Lihavõteteni oli paast. Pidupäeva puhul tapeti söögiks uus loom ja sai jälle liha. Nii et jah, tähendus oli sõna-sõnalt liha võtmise püha. (Vähemalt nii on mulle kusagilt meelde jäänud.)
