I've done a lot of cooking the past two weeks. For my parents--and my siblings when we were all staying with my mom while my dad was in the hospital--I made a creamy chicken pot pie soup, a brothy chicken orzo soup, and a very basic spaghetti meat sauce. I also brought my mom some taco soup from my freezer on that first horrible night when my dad had emergency surgery, and I brought a Costco lasagna we had in the freezer, as well as a hunk of Costco rustic sourdough that Dominic buys, cuts in half, and then vacuum seals. The last time I saw my parents I brought them a frozen casserole that I got from a specialty foods market in Montgomery. All of this made me feel better, and most of it was, I think, helpful.
For my own family, I've struggled a little more making meals, but I've been persevering because what else can I do? I made balsamic mushroom chicken thighs with rice (a banger of a recipe I make often), chicken piccata (which my big kid calls spaghetti with invisible sauce), pan-seared salmon with sweet potatoes, Ina Garten's skillet roasted chicken thighs and potatoes, and cheesy baked pasta with ground sausage. I served everything with vegetables obviously. Mostly, these are all just comforting foods that I've made before and that most of us mostly like.
(I also ate a turkey sub from Subway that ignited some sort of nostalgia/junk food part of my brain that immediately made me want to eat 100 more Subway subs??? I find this suspicious because normally I don't like Subway very much. I think it's that I hadn't had it in so long that my brain forgot I don't like it.)
Tonight I made a new recipe, this creamy tortellini soup, even though it's in the 70s here. And it was very, very good. I mostly made it as written, though I didn't put in all the chicken broth it called for, and I used regular kale, and only half the bunch because there was A LOT of kale. I find stripping and chopping up greens to be extremely tedious, so I rarely ever use them, but I had the bright idea to ask Dominic to vacuum seal the other half of the kale, as well as the leftover (uncooked obviously) tortellini, and the next time I make this soup it's going to be soooo easy to just grab them from the freezer. It's also just a really good recipe base for whatever you have on hand, so I could see myself using baby spinach and white beans in the future, and it still being super delicious.
Anyway, everything is intolerably awful, but food is helpful. Food makes things better. I hope you all are eating comforting nourishing things too.

Ok, so I promised that last week, but I want to hit on Vacuum Sealers first.

Looked like a darn nice Steak, or two, at one time to me. There is absolutely zero reason to lose a beautiful Steak like this: NONE whatsoever.

OK, So…… I usually buy 1/2 beef at a time and I try to find a Butcher that has the capability to Vacuum Seal everything, ALL of the meat. Also, I have actually seen people buy meats at a grocery store in those stupid little foam tray things with a piece of plastic covering them and just toss them in the freezer…… I just shake my head. Yes, I got back to Food…. Again. Think about that every time you buy something that you can or need to re-package, are you going to wrap it in some paper? Or maybe stuff it in a plastic bag that has air still trapped inside with the food? If so and you plan on it keeping for 3-5 years, do yourself a favor, just toss it out now and save yourself the effort. Well, there ya go, fairly simple machine there. Heck if I can operate it, I’m sure y’all can. I always make sure to mark the Date on the Bag and simply toss them in the freezer, organized of course… HAHAHA Sure they are. Jar Sealer Attachment: I store a lot of things in 1/2 gallon Jars, I have come to the habit of Vacuuming everything, it only takes a few moments and adds a lot of storage time for most foods.
