What is the fruit or vegetable you prefer to eat in October? For me it is pumpkin, but this year, even the chestnut! Oh yes! 20 chestnuts boiled in water are low Fodmap! So, I can now think to readjust an old traditional Tuscan recipe. The "CASTAGNACCIO" is a sweet Tuscan cake that is mainly prepared in autumn because its main ingredient are chestnuts. Castagnaccio is a rustic cake with very ancient origins. In the 1500s in Tuscany it was mainly prepared by peasants as a poor dish. In the 1800 the recipe became famous throughout Italy and was enriched by the raisin and pine nuts that originally lacked. No eggs and no butter, the "castagnaccio" is a simple cake made with chestnut flour, water, raisins, and pine nuts. To make low in Fodmap I will customize it like this: 20 boiled chestnuts, pumpkin purée and a tsp of olive oil. Put everything in the oven at 180 ° C for 90 minutes with pine nuts and rosemary on top. For those who have a sweet tooth, I recommend seasoning with maple syrup and adding cinnamon and grapes to the mix, otherwise if you are salty add salt and pepper. If you want to add proteins, this Tuscan cake goes perfectly with crispy turkey bacon or, add a scoop of collagen powder to the mix. - IF YOU SUFFER FROM TREE NUT ALLERGIES, PLEASE NOT THAT: -----> Be careful with chestnuts because they are nuts!
