52 Recipes in '25 - #1

My resolution this year, like last year, is to cook at least one new recipe every week. This year I also plan to document it, so I actually remember what I made and what's worth going back to.

Anyway shoutout to the Richmond DPU for the week we didn't have water and the hassle of getting back to normal, but I'm finally starting this year's 52 new recipe goal with the 9 Layer Scallion Pancake from Woks of Life!

I followed the recipe pretty much to a T, omitting the 5 spice powder and subbing a drop of honey when I realized I was out of sugar for the dough.

Definitely should have rolled the dough out thinner, they came out less crispy, more chewy, but I think my house is too cold for me to be working with dough at all so I might try starting it with warm water rather than room temp next time. Some googling says that can help the gluten development.

But there probably won't be a next time. I'm glad I made it once, but the effort-to-payoff rate says this'll probably just be a learning experience.
