#bakingandpastries @tridenttech Last week of “Intro to Pastries” with @charlestonchocolatiers and it was my first time ever practicing cake decorating. As I always say, “It’s not how you start, it’s how you finish”…I started off quite shaky (literally) but ended up feeling way more confident! #lemongarlictilapia Culinary School starts back up tomorrow, and I am excited…and nervous. I have been cooking up a storm in our little RV kitchen this holiday season, trying new recipes out and tweaking most of them. I opened up my syllabus for Classical Cooking this morning and read this quote: “Learn the technique not the recipe. If you learn the recipe, you can cook one dish. If you learn the technique, you can cook thousands!” ~ @tridenttech #culinarystudent Let’s get going… I am READY! Lemon Garlic Tilapia🍋🐟 OVEN BAKED & EASY! Servings: 4 Ingredients:

4 tilapia fillets

Salt & freshly ground black pepper, to taste

½ teaspoon paprika

½ teaspoon dried thyme

½ teaspoon dried oregano

4 tablespoons melted butter or ghee 

4 cloves garlic, minced

2 tablespoons lemon juice

¼ teaspoon lemon zest

1 lemon, sliced into rounds, for garnish

Red pepper flakes, for garnish

Chopped fresh parsley, for garnish

*Lemon slices, for garnish Instructions  * Preheat oven to 400°F. Season tilapia with salt, pepper, paprika, thyme, and oregano; arrange fish in a 9x13 baking dish.
 * In a mixing bowl, whisk together melted butter, garlic, lemon juice, and lemon zest; pour over tilapia.
 * Bake tilapia for 10 to 12 minutes, or until fish flakes and is fork-tender.
 * Garnish with pepper flakes, parsley, and lemon slices. *Serve. #culinarystudent @tridenttech Let the journey begin… As many of you know, I am a HUGE FOODIE! I can remember Nate asking me when we were packing up our house to move after selling it what I wanted him to do with the stack of Culinary School catalogues I had accumulated. 🤣 I was in Thailand at the time teaching yoga and was spending only a few weeks a year in the United States. Most of my teaching time was in Asia, including China, Hong Kong, Bali, Malaysia, Singapore, Thailand, Jakarta, as well as Australia and New Zealand. I liked the warmer climates, and I LOVED the cuisine even more. It was a dream of mine to one day attend culinary school, but with my work schedule being booked years in advance it seemed like it would have to happen in another lifetime. Nate suggested that I start taking advantage of my travels and attend cooking classes wherever I landed. So that is exactly what I started doing. They were usually one day cooking classes, where we learned one or a few traditional dishes, but it became a regular practice. Before the pandemic, I even had a retreat to Italy planned with @cappsized13 so I could literally be with a chef in Italy and experience and learn from the best. Well, as I have said before and I will repeat…”The ghost writer of my life story is far more creative (and powerful) than I could ever hope to be, and surprises me every time!” YES, I started Culinary school this week @tridenttech I am beyond excited (and humbled) to learn from some of the best chefs here in Charleston. Who knows where this journey will lead?
