Vegan Tofu "SPAM" Musubi Recipe

This is My stab at Vegan "Spam" Musubi. I marinated sliced extra firm tofu in a mixture of gluten free shoyu, maple syrup, mesquite liquid smoke, garlic, ginger and a hint of tomato sauce over night. Then I drained my marinated "spam" on some paper towels and pan fried in coconut oil until crispy around the edges. Put in in a rice ball&wrapped with a strip of nori.The Teri sauce I made to glaze over my vegan"spam" is what really made it all come together. :) my inner island girl is happy.
