National Grilling Month: More Cookbook Recommendations
Green Fire by Francis Mallmann
Green Fire is an extraordinary vegetarian cookbook, as Mallmann brings his techniques, creativity, instinct for bold flavors, and decades of experience to the idea of cooking vegetables and fruits over live fire. Blistered tomatoes reinvigorate a classic Caprese salad. Eggplants are buried whole in the coals—a technique called rescoldo—then dance that fine line between burned and incinerated until they yield an ineffable creaminess made irresistible with a slather of parsley, chile, and aioli. Brussels sprout leaves are scorched and served with walnuts; whole cabbages are sliced thick, grilled like steaks, and rubbed with spice for a mustard-fennel crust. Corn, fennel, artichokes, beets, squash, even beans—this is the vegetable kingdom, on fire.
The celebrated Patagonian chef, known for his mastery of flame and meat, the chef who romanced the food world with an iconic image of a whole cow dressed and splayed out over licking flames, is returning to the place where his storied career began—the garden and all its bounty. It’s his new the transformation wrought by flame, coals, and smoke on a carrot or peach is nothing short of alchemy.
And just as he’s discovered that a smoky, crackling-crusted potato cooked on the plancha is as sublime as the rib-eye he used to serve it next to, Mallmann’s also inspired by another we all need to cut down on consuming animals to ensure a healthier future for both people and the planet. Time to turn the fire “green.”

Cookbooks I’m Excited to Dive into in 2019
Cravings: Recipes for All the Food You Want to Eat & Cravings: Hungry for More
BY CHRISSY TEIGEN
I used to be indifferent to Chrissy Teigen. She was that lady married to John Legend and a television personality (what exactly does she do on Lip Sync Battle anways?)... but that that was about it. I didn’t even know or remember her as a model.
Then her cookbooks came out. I don’t know what it is about her recipes, but I think everyone was just as surprised as me at the success of Chrissy’s cookbooks. And naturally, their popularity piqued my interest. While many ingredients and meal ideas are day-to-day staples (like pork chops or mac+cheese), the spicy twists and Thai turns on various foods truly are recipes for food you want to eat. Paging through both books, I’m fairly certain I said “Yum” or “I want to try that” for just about every recipe. Not to mention, her humor makes her so incredibly personable.
Pull Up a Chair: Recipes from My Family to Yours
BY TIFFANI THIESSEN
I’ve mentioned Tiffani before, but let me do it again.
The first recipe of hers that I tried in my own kitchen was the Blackberry Jam portrayed on her show, and it became an instant hit (I even gave small jars away as parting gifts for a family get together; it is amazing on vanilla ice cream). As simple as making jam may be, I knew then that I wanted to try more of her recipes. I immediately ordered her cookbook when it was released.
Some of her recipes I might consider slightly posh, but trust me when I say they still easily doable and sound absolutely delicious. Just remind me to try her Grilled Artichokes again, now that I actually know how to properly eat them. *facepalm* Also, her hostess flair comes through in the last section of the book called “Picture Perfect Parties” – which has menu, decor ideas, and other such notes for hosting various types of get-togethers (i.e. tailgates, brunches, family campouts, etc.)
The Home Cook: Recipes to Know by Heart
BY ALEX GUARNASCHELLI
Over the years watching Food Network and Cooking Channel, I’ve really become a fan of Alex Guarnaschelli. She’s a fellow Italian (Italians have an unspoken bond lol), the first female to win Iron Chef and the second overall female Iron Chef (after Cat Cora), but really... the lady just knows her stuff. When I heard that she was releasing a cookbook, I was super excited to get my hands on it. Yes, me being excited about books of any form is a recurring theme for me.
One thing I look forward to in Alex’s cookbook – as well as with Giada’s down below – is experiencing how a fellow Italian does Italian food (although that is merely a portion of The Home Chef). We all have our own interpretations of Italian dishes based on our individual backgrounds. But I suppose that could be true of many cultures and many dishes.
Also mildly prevalent in Alex’s cookbook is the sort of... “upscale” demeanor that I might associate with professionally educated chefs. It’s not many cookbooks you find recipes for bouillabaisse, unless they trained went to culinary school or studied in France – or in Alex’s case, the two combined (she attended La Varenne Cooking School in Burgundy, France).
Magnolia Table: A Collection of Recipes for Gathering
BY JOANNA GAINES
I always try to resist the charm of Chip and Joanna Gaines... but guys, it’s really hard. And, not gonna lie, a lot of the merchandise from their line at Target is SO PRETTY and on my wishlist 😍 Damn you, Gaines’s.
While I am not entirely into the modern farmhouse aesthetic showcased on Fixer Upper or loosely included in their Target line, I am really feeling the down-to-earth homey recipes that Joanna shares in Magnolia Table. Many have that “fresh from the farm” Southern feel (based on her childhood in Kansas), where a handful of others include her Korean and Lebanese heritage.
Eat What You Watch: A Cookbook for Movie Lovers
BY ANDREW REA
I discovered this book at work and I absolutely LOVE the concept! In fact, I’ve been plotting a project for myself with a similar concept (more on this later).
Eat What You Watch encompasses 40 recipes to help recreate the amazing food moments in film – butterbeer from Harry Potter, the apple strudel from Inglorious Basterds, the titular ratatouille from Ratatouille. Essentially, this cookbook is the PERFECT way to combine my two favorite things. And I’ll get to watch some new movies in the process 😋
Giada’s Italy: My Recipes for La Dolce Vita
BY GIADA DE LAURENTIIS
I have an... interesting connection to Giada de Laurentiis.
Noooo, no it’s not just because of our shared Italian heritage (she was born in Rome!), but rather a foodie experience I had a few years ago.
In late 2016, I traveled to Las Vegas with my aunt for her birthday. As a special birthday meal, we dined at Giada’s namesake restaurant on Vegas Strip. Sparing you the details, I think this was actually the first fancy-ish and refined dining experience I’ve ever really had. I spared no expense and splurged as much as I could, from appetizer to dessert. I really don’t know how to explain it properly but Giada just holds a special place in my and my aunt’s hearts thanks to this experience we shared. Later on, I even planned and together we cooked an entire meal inspired by our experience, utilizing Giada’s own recipes from her website Giadzy.
Unlike her other books, however, I felt that this one was more authentic. There are the people that want “everyday” and “weeknight” recipes for oversimplified meals, but Giada’s Italy to me just felt more... real. More Giada than her other titles. And, as I mentioned along with Alex Guarnaschelli’s book, I look forward to tasting Giada’s interpretation of Italian food, especially knowing that Giada’s recipes incorporate a Californian flare, spawning by her childhood in Los Angeles.
Bread Illustrated BY AMERICA'S TEST KITCHEN
This cookbook is part of my ever-evolving desire to cook more items from scratch. As an Italian (I know I know, I’ve already mentioned this too much in this post), there are two things we (or at least I) really love as eaters: pasta and bread. It seems only natural for me to be excited to utilize this book. And, of course, it makes the house smell amazing! There’s nothing like the aroma of baked goods. I am always so fascinated by how varying measurements of flour, yeast, and wet ingredients can create beautifully diverse loaves of bread.
Mediterranean Cookbook
EDITED BY MARIE-PIERRE MOINE
A final repetition of this concept – Mediterranean Cookbook is another way I want to discover Italian food interpretation. However, this title is also much, much more than that. The Greek, Spanish, Andalusian, etc. foods within Mediterranean Cookbook allow me to uncover the flavors of the entire region, flavors that go well beyond Italy. I just might have to get over my distaste for olives to tackle this one.
Equally as entertaining will be trying to understand and use the titles of dishes – most, if not all of them, are not in English. But, if anything, I consider it a way to immerse myself into the culture of each dish.
Regions include (listed in the index): Middle East, North Africa, Morocco, Portugal, Spain, France, Italy, Sicily, Greece, and Turkey.
HONORABLE MENTIONS: The Book of Greens: A Cook's Compendium by Jenn Louis with Kathleen Squires In a strange turn of events, I've taken an interest in *gasp* salads and vegetables and healthier foods 😝 And while I also purchased The Vegetable Butcher by Cara Mangini a couple years ago, I knew it couldn't hurt to get my hands on a book just about greens; how to select, break down, cook them AND what flavors pair well with them. Let's be real, I just love any book that is essentially an encyclopedia for chefs. Instant Pot Electric Pressure Cooker Cookbook by Sara Quessenberry & Kate Merker Now that I have two Instant Pots in my possession (a 3-quart and an 8-quart), it is now a matter of actually using them. My first meal from the Pot was butternut squash soup, and I have since experimented with hard boiled eggs, a pot roast, and chicken breast (both from frozen!) that all turned out wonderfully... but I would definitely love to add more to my Instant Pot reportoire. I may still enjoy cooking the old fashioned way, but you can't deny how well the Instant Pot works. The Kinfolk Table: Recipes for Small Gatherings by Nathan Williams I got this book as an absolute steal at a garage sale; I think I literally only paid 10 cents. I may not read Kinfolk Magazine, but I was immediately drawn to the beautiful composition and cultural aspects of it. Not only does the cookbook encompass recipes from around the world, but also the stories that inspired them from the people who shared them. Although The Kinfolk Table is divided into Brooklyn, Copenhagen, The English Countryside, Portland (Oregon), and "The Wandering Table," the book's contributors span the entire globe.

I made chef Alex Guarnaschelli’s ‘accidentally vegan’ dish, and it’s my new favorite recipe
Summary List Placement It’s tempting to order take-out or make a frozen pizza for dinner, but making a restaurant-quality dish at home isn’t as much of a hassle as you might think. While promoting her recent ZENB pasta partnership, chef and Food Network star Alex Guarnaschelli told Insider that cauliflower “steak” — a dish that’s popular at her New York City restaurant Butter — is one of her…

I wanted to make sure I represent Armenian tolma in the best way possible: Louisa Sharamatyan ...
New Post has been published on https://armenia.in-the.news/culture/i-wanted-to-make-sure-i-represent-armenian-tolma-in-the-best-way-possible-louisa-sharamatyan-42297-22-07-2020/
I wanted to make sure I represent Armenian tolma in the best way possible: Louisa Sharamatyan ...
Armenian-American TV personality Louisa Sharamatyan is now participating in Food Network’s famous The Worst Cooks in America TV show. Louisa, who is also known for her participation in the Worst Bakers in America, confesses that the most responsible episode for her was cooking Armenian tolma, because she knows how important this traditional food is for Armenian culture. In her interview with NEWS.am STYLE the Food Network star also talks on her Armenian roots, favorite dishes and expectations from the show.
Louisa, how did you decide to take part in The Worst Cooks in America? Did you really want to improve your cooking skills, or just wanted to be a part of the famous TV show?
I was previously on Worst Bakers in America last year, so the network was already familiar with my “skills” in the kitchen. When the opportunity came up for Worst Cooks in America, I was very excited. For me it was more about improving my skills in the kitchen and making my mom proud. I wanted to make a strong comeback and prove, that I can succeed in the kitchen. I am so grateful for the opportunities the Food Network has given me. They truly embraced and welcomed my love for the Armenian food and culture. Strong comeback after Worst Bakers in America and this was my chance.
How often were you spending your time on cooking before participating in the show, and has something changed now?
Before the show I would shadow my mom in the kitchen but not fully prepare meals by myself. I think my mom is so used to cooking everything for me. That is very common if you live in an Armenian household (laughs). A lot has changed now, this show has opened up a new world of cooking for me. I cook at least once a week now. I am much more confident in the kitchen. Now, I feel so satisfied and responsible after I make dinner from start to finish. I am currently practicing the art of chopping an onion. I really want to make Chef Alex Guarnaschelli proud. She inspires me so much!
As you have mentioned, you’ve also taken part in Worst Bakers in America. What can you say about your experience?
Yes, you are correct. Last year, I had the honor of joining the cast of Worst Bakers in America, Season 2. It was a pleasure to meet and work with world-renowned bakers like Chef Lorraine Pascale and Chef Jason Smith. The experience was incredible and eye-opening. I was drastically out of my comfort zone. Baking is hard and leaves no room for mistakes. If you miss one step and rush, you have to start all over again. I was eliminated very early on. I mixed in baking soda instead of baking powder and my cake was ruined. I enjoy cooking much more than baking. Keeping track of measurements for someone like me, who doesn’t bake is difficult. Also, some deserts require stuffing and glazing which is a whole different level of difficulty including food thermometers. That’s not to say that I’ll just give up on baking. I sometimes experiment in the kitchen and teach myself while watching youtube videos. I’ve also purchased a variety of cookbooks…two of them are by my mentor, Chef Alex Guarnaschelli… Old-School Comfort Food and The Home Cook. She is also releasing a new cookbook in October called, ”Cook with me: 150 Recipes For The Home Cook”.
Returning to The Worst Cooks in America, let’s remember the first episode of the show, when you made Armenian dolma. Was it your first time cooking it?
At home, I usually film my mom rolling the grape leaves. My followers love to see what my mom is making in the kitchen. I love to document how she cooks and bakes. It was definitely my first time making tolma alone with no assistance from anyone. I was very nervous. As you know, being Armenian yourself, food plays a big part in our cultural and heritage. I wanted to make sure I represent Armenian tolma in the best way possible. I was proud about the presentation of the tolma, but not the taste. I ran out of time and the stuffing was undercooked. After the show, my tolma cooking skills have gotten so much better. I enjoy all the steps of preparation now. I taste my food as I go, and I am much more relaxed in the kitchen. I also experiment a lot with stuffed bell peppers and tomatoes.
What’s your favorite Armenian dish, besides tolma, which you would like to cook for the TV viewers?
I have so many favorites. There are several dishes I would love the non-Armenian viewers to experience. I would love to make traditional Armenian barbeque (khorovats) with shish kabobs and traditional skewers on the grill. It would be nice for the viewers to see how we marinate before grilling. Also, we have so much range when it comes to be Armenian BBQ… lamb, pork, beef, chicken, veal, etc. That would be a wonderful experience. Throughout history, Armenian cuisine has fallen under the Middle Eastern cuisine umbrella. We share similar dishes with the Persians, Arabs, and Greeks counterparts. My family and I love lahmajun, hummus, tabbouleh Cheekfuta as well.
What’s the most important thing/skill, you’ve learnt during this show?
I learned so many things, it’s hard to just say one. Chef Alex always says “Clean as you go”, and that was difficult to do at first. I then realized how important it is to be clean and organized while cooking and not just after when you actually clean and throw away the trash. She also told me not to overthink so much while cooking and to just do it and some dishes are meant to look messy and full of life. Seasoning, Seasoning, Seasoning! Never underestimate the power of salt. I also learned the power of “Mise en place” which is basically preparing and gathering all the ingredients, utensils needed for your dish.
Louisa, what cooking show will be the next? Do you think one day to appear at Master Chef?
Wow, it would be an honor to appear on Master Chef. For now, I am working on perfecting my cooking skills. I am excited to see what the future holds.
How do you estimate your chances of winning the competition?
To be honest, each episode that I was not eliminated was very surprising for me. I had NO idea I had it in me to cook and focus like that. You have to wait and see….
Louisa. I would like also to speak about your Armenian roots…
I was born here in America, specifically in Los Angeles. I live in Glendale, where there is a very large Armenian community. I have been raised with traditional Armenian values and my parents tried to preserve the Armenian culture as much as they can. My parents made sure I know how to read and write in Armenian. My parents are proud owners of a child daycare called “Hayastan Daycare” and my whole life I have been surrounded by the love for Armenian culture. They also used to run an Armenian Saturday day school, which I would attend. I love Armenian literature and cinema. My grandmother and I read literature by Paruyr Sevak, Silva Kaputikian, William Saroyan, Hovhannes Shiraz, and more. It’s important for me not to forget how to read and write in Armenian. We are such a talented and creative race.
Do you come to Armenia frequently?
Unfortunately, I do not, The last time I visited Armenian was in 2005. I am planning on visiting very soon.

Amazon gives away a free year of live and on-demand cooking classes on Food Network Kitchen app
Amazon is bringing a year’s worth of free, live and on-demand cooking classes to tens of millions of Amazon Fire TV and Fire tablet owners across the U.S., thanks to an expanded collaboration with Discovery’s Food Network Kitchen. The subscription service launched last fall as a flagship app for Amazon’s Alexa-powered Echo Show, bringing daily live classes, step-by-step cooking videos, on-demand video, home delivery of ingredients, and more to Echo devices owners.
While the Echo Show was the first smart-speaker-with-screen to gain access to Food Network Kitchen, the app is also available across devices, including Amazon’s Fire TV, Fire tablets, as well as iOS and Android phones and tablets.
The subscription offering combines episodes of popular Food Network Shows like “30 Minute Meals,” “Barefoot Contessa,” and “Brunch @ Bobby’s” with both live and on-demand cooking classes from culinary experts and top chefs, including Bobby Flay, Rachael Ray, Giada De Laurentiis, Guy Fieri, Martha Stewart, Alton Brown, Ina Garten, Andrew Zimmern, Ree Drummond, Daniel Boulud, Valerie Bertinelli, Sunny Anderson, Jonathan Waxman, Molly Yeh, Nancy Silverton, JJ Johnson and others.
In total, there are over 2,300 on-demand classes, hundreds of step-by-step videos, Food Network episodes, and over 80,000 recipes included in the subscription.
However, the live content is the service’s most compelling selling point, as it allows customers to cook with favorite chefs and then ask questions during the live Q&A portion of the show — essentially, it’s interactive TV.
Currently, Food Network Kitchen is selling for $4.99 per month or $39.99 per year, according to its website. (It launched with introductory pricing of $47.99 per year and $4 per month).
But starting today, Amazon will make the service available for free by offering Amazon device owners a one-year subscription to Food Network Kitchen.
The companies are hoping to capitalize on consumers’ increased interest in home cooking during quarantine, when restaurants are shut down and even takeout comes with a set of risks. With endless hours stuck at home, more people than ever are turning to cooking and baking to pass the time, then enjoying meals as a family. There’s no better time to reach this audience of home cooks with a service like this, the companies understand. And when the year is up, they believe many customers will continue to pay as they’ve experienced the value first-hand.
“When Food Network Kitchen came to Fire TV and Alexa last year, we saw how much customers love cooking with, and learning from, their favorite chefs,” said Marc Whitten, VP of Amazon Entertainment Devices and Services, in a statement about the subscription offer. “Many of us are spending more time cooking at home during these challenging times and are in need of a little inspiration. That’s why we are excited to offer all of our new and existing Fire TV and Fire Tablet customers a free year of access to Food Network Kitchen,” he added.
To coincide with the free subscription, Amazon and Discovery are also launching a “We Cook Together” initiative on May 2nd and 3rd, which will bring back-to-back live classes for two days straight, allowing Food Network Kitchen consumers to cook in real-time alongside their favorite chefs.
This feature will include 10 new cooking classes from thhe personal kitchens of Valerie Bertinelli, Scott Conant, Bobby Flay, Tyler Florence, Amanda Freitag, Alex Guarnaschelli, Marc Murphy, Michael Symon and Jet Tila
“During this unprecedented time, I know my first instinct as a chef is to turn to my kitchen, to cook something nourishing for those I care most about,” said Bobby Flay, about his participation in the live-streamed event. “Suddenly being faced with the task of cooking for yourself and family, multiple times a day, can be daunting, and we hope the Food Network Kitchen app and our #WeCookTogether weekend of live classes offer the assistance and motivation needed to plate something delicious for your loved ones,” he said.
Details on the offer are here.

The Best Foodie Cities In America You Should Totally Visit
If you’re a foodie and looking to expand your culinary horizons, have you considered what the US has to offer? The States is absolutely jam-packed with diverse cultural food options. The best foodie cities in America won’t disappoint you.
Whether you’re seeking hometown dishes, a gourmet experience or something with a foreign-twist, the US is often described as a ‘foodie’s haven’. It will definitely be a great destination for you.
As such, here is a list of the five top US cities that foodies should visit!
New Orleans
At the top of our list of the best foodie cities in America is New Orleans. It’s well-known for its Cajun and Creole dishes. Some of them have a direct influence from Spanish, Italian or African cooking techniques.
One of the most popular dishes that you will find scattered throughout the city is Gumbo. If you’ve never tried it, then you’re missing out.
Gumbo is a stock-based broth that contains a choice of meat or seafood. It’s packed with peppers, celery, and onions.
If you’re looking for something sweet to compliment your main course, New Orleans is also famous for its Beignets. These beauties are squared pieces of fried dough with a huge coating of sugar.
If you’re after a fine dining experience, the likes of Leah Chase and Susan Spicer both have highly rated restaurants in the city.
San Francisco
While San Francisco is best known for its tech-savvy population, this appetite for innovation also extends to its food industry. For those of you that have a taste for the good living, San Francisco is home to heaps of Michelin-starred restaurants. This includes Quince, the French Laundry, and Atelier Crenn.
If you’re looking for a more casual eating scene, the city has a range of international-themed locations.
If you’re after Mexican food, head over to the Mission. Italian? North Beach is your best bet. The city even has its very own Chinatown for those after an Asian-inspired serving.
Regardless of where you choose to dine, San Francisco has an excellent reputation for sourcing ingredients locally. As such, why not head over to one of the 50+ farmer’s markets scattered around the Bay Area to experience local produce in its purest form?
Berkeley
With the Californian city of Berkeley topping a recent list as the Most Cultural Student City in the world, it will come as no surprise to learn that its foodie scene is just as diverse. The city has everything — from popular street food vendors selling traditional Indian delights, to award-winning Brunch eateries serving up dishes from the South of France.
If you instead fancy grabbing yourself a Burrito, then you’ll want to head over to Cancun restaurant. If tacos are more your thing, then Picante in West Berkeley produces its corn in-house.
Bekerely is also great if you like the sound of washing your evening meal down with some locally produced craft beer. The city is home to a plethora of home-brewers, some of which can be enjoyed while watching a local band.
New York
Ah, New York, New York.
The city is so great that they decided to name it twice! The Big Apple is potentially one of the most diverse cities in the US, especially with respect to its internationally acclaimed food scene. No matter what type of dish you’re after, New York has something to suit all budgets.
If you’re in a rush and want to grab a quick bite, the streets of New York are packed with hotdog vendors and Pizza parlous. The city is also famous for its bagels, so we’d suggest heading over to Tompkins Square if you’re looking for the real deal.
Outside of its more casual scene, New York also has a range of options for the fine diner. Celebrity chefs such as Alex Guarnaschelli and Marc Forgione have highly rated restaurants in the city, so be prepared to splurge!
Los Angeles
Last but certainly not the least in this list of the best foodie cities in America is Los Angeles. While the city is home to some of the most expensive properties in the world, don’t be fooled into thinking that the foodie scene follows suit.
On the contrary, Los Angeles is well known for its top-rated, highly affordable street food eateries. Whether you’re into Mexican, sushi, Lebanese or vegan-inspired dishes, Los Angeles is the place to be.
You’ll also find heaps of boutique-esque food trucks scattered around the city. Some of them serve the best tacos and bagels that Los Angeles has to offer!
