danish advice:
for a long time i was confused as to why puff pastries from the grocery store bakery are good but the texture is all chewy and a little tough.
but then i put it in the oven for a few minutes and it was fluffy and flaky and light again! and i didnt know why, because it seems counterintuitive that something would start to taste more moist after being exposed to heat.
but then i remembered! puff pastry dough is characterized by having LAYERS OF BUTTER BAKED INTO THE DOUGH. without reheating it im biting into firm butter dough!!! what a silly thing to do.
to counteract this, i place it into my shitty little convection oven for 3 minutes and it instantly becomes yummier.
never suffer through a mediocre danish again.

Treats (1/1) (jegulus)
Regulus was baking. He loved baking. And he had a free morning so what better way to spend it then by making the house smell of sweetness.
Maybe Regulus has always loved the way he can turn simple ingredients into fresh treats. Fluffy and moist, sweet and savoury, crisp and soft - he likes making it all. It's helps him quiet his mind to knead dough, and it's much easier to focus on weighing and measuring flour and sugar and spices, than it is to weigh and measure others' expressions and words.
But more recently he loves baking because without a doubt it draws his family to him. They don't interrupt him or talk to him, but they do watch quietly. His son comes in and either steps up on his little stool to watch or when Regulus has a moment he will pick Harry up to sit on the counter. James will come in and wrap his arms around a Regulus' waist, and rest his head on Regulus' shoulder moving with him but not getting in the way.
His favourite part is when it's done and everything is cooling on the table he will watch as his son and am husband "sneak" cookies off the rack, but can't help to contain the compliments that come from "yummy noises" as Harry calls them.
Today, that's exactly what happens. "Papa these are so good! You should make them everyday!" Harry says as he takes another bite of mini muffin James handed him behind his back.
"Seriously Reg these are magical," James replies after he pops a second one in his mouth.
"I love you both, but you'll spoil your lunch if you keep eating those," Regulus laughs.
"No Papa! The muffins are for lunch," Harry says.

Trillionaire Bars Time: 1 hour Yield: 12 servings
Ingredients
For the brownie layer: 1/2 cup butter, melted 1 cup sugar 1 cup unsweetened cocoa powder 1/4 teaspoon salt 1/2 teaspoon vanilla 2 eggs 1/2 cup flour
For the caramel layer: 1 cup soft caramels 2 tablespoons heavy cream
For the cookie dough layer: 3/4 cup flour, heat-treated (see directions) 1/2 cup butter, softened 1/4 cup sugar 1/2 cup brown sugar 1/2 teaspoon vanilla 2 tablespoons heavy cream 1/8 teaspoon salt 1/4 cup mini semi-sweet chocolate chips 1/4 cup regular-size semi-sweet chocolate chips 1/4 cup old-fashioned oats
For the chocolate glaze: 1 cup regular-size semi-sweet chocolate chips
Directions
Step 1 -Preheat the oven to 325 degrees F. Step 2 -Line an 8x8-inch square pan with foil and spray it with cooking spray. Step 3 -Cream 1/2 cup of the butter and 1 cup of the sugar in a large bowl. Step 4 -Mix the cocoa powder and 1/4 teaspoon of the salt into the butter mixture. Step 5 -Add 1/2 teaspoon of the vanilla and the eggs, mixing until smooth. Step 6 -Mix 1/2 cup of the flour until incorporated. Step 7 -Spread the brownie batter in the prepared pan. Step 8 -Bake the brownie layer until the center is set and a tester comes out with a few moist crumbs clinging to it, about 15-28 minutes. Step 9 -In a small saucepan, combine the caramels and 2 tablespoons of the heavy cream. Step 10 -Heat the saucepan over medium-high heat, stirring constantly until melted and smooth. Step 11 -Pour the caramel mixture over the brownie layer in the pan. Step 12 -Place the pan in the fridge to chill until the cookie layer is done. Step 13 -Increase the oven temperature to 350 degrees F. Step 14 -Spread the remaining 3/4 cup of the flour on a baking sheet. Step 15 -Bake the flour until it reaches 160 degrees F, about 5 minutes. This should kill any potential bacteria in the flour and ensure the cookie dough layer is safe to eat. Step 16 -Cream together the remaining butter, the remaining sugar, and the brown sugar until light and fluffy. Step 17 -Mix in the remaining vanilla and the remaining heavy cream. Step 18 -Add the heat-treated flour and the remaining salt and mix until incorporated. Step 19 -Stir in 1/4 cup of the mini semi-sweet chocolate chips, 1/4 cup of the regular-size semi-sweet chocolate chips, and the oats. Step 20 -Test the caramel to make sure it can support the next layer; if you gently push your finger across the caramel without it moving too much, it's ready. Step 21 -Spread the cookie dough over the caramel layer. Step 22 -In a microwave safe bowl, pour the remaining chocolate chips. Step 23 -Microwave the chocolate chips on medium power, stirring every 20 seconds, until the chocolate is melted and smooth, about 1-2 minutes. Step 24 -Spread the ganache over the cookie dough layer. Step 25 -Refrigerate until firm, about 15-30 minutes. You may want to cut them into bars first before refrigerating. Step 26 -Cut into bars and serve.

Junko's abundant, meaty dough disobeyed her order and surged toward the woman's outstretched arms, rapidly engulfing them up to her elbows before she harshly retraced her arms toward herself with a step backward. Her heart rapidly palpated against her bouncing chest, her palms trembled and perspired as much as her head throbbed, and her breaths rattled her trim torso as a dull haze enveloped Akane's body at the sight of gargantuan, gurgling stomach swallowing the countertop that "divided" the two of them from each other.
Her eyes then trailed up to her bulbous chest, which appeared to push her bra out of her shirt and ooze over it, obscuring the button underneath the flabby wall and ensnaring her tie into its assumedly humid cleavage. As a trail of saliva dripped down her lower lip and her breathes began to heave her entire body downward, Akane's eyes snapped upward only to be halted by the sight of Junko's squinted eyes, her large, light pupils sheltering themselves underneath what she assumed was a heavy layer of mascara and a sharp glare that narrowly grazed across the top of her expansive, malleable landmass to jab themselves right into the sweltering, tremoring athlete's expanded eyesight. Her body remained still as a tide of blubber flowed across her as Junko arched her back to jut her stomach out even further, surging onto her moist chin and, with a gasp and sting across her spine, causing her to slam her palms onto the apron that rested on the counter before she leapt onto it and darted her head toward the standing butterball's narrow eyes.

Brookies are a delectable cross between chocolate chip cookies and brownies, giving you the best of both worlds in one bite. Any sweet tooth will be satisfied by the chewy, chocolatey goodness!
Ingredients: 1 cup 2 sticks unsalted butter, softened. 1 cup granulated sugar. 1 cup light brown sugar, packed. 2 large eggs. 1 teaspoon pure vanilla extract. 2 1/2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 2 cups semisweet chocolate chips. 1/2 cup chopped nuts optional.
Instructions: Preheat your oven to 350F 175C and grease a 9x13-inch baking dish. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, and then add the vanilla extract, mixing until well combined. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips and chopped nuts if using. Spread half of the cookie dough evenly into the prepared baking dish. Prepare your favorite brownie mix according to its instructions. Pour the brownie batter over the cookie dough layer in the baking dish, spreading it out to cover the surface. Take the remaining cookie dough and drop spoonfuls of it onto the brownie layer. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out with moist crumbs. Allow the Brookies to cool in the baking dish before cutting them into squares. Serve and enjoy these delicious Brookies!

Today I thought to post about something a bit more complex. And that is Brioche. The recipe is from Aurelie Bastian.
The website is in german, so if you don't speak it you will need to translate a fair bit, but they are authentic french recipes.
I did change it a little bit but not by much.
Now let's start. You will need:
620g wheat flour (all purpose/405 or 550)
One egg + one egg yolk
One package ore 42g of fresh yeast
125ml heavy cream
150ml milk
100g sugar
Salt
70g of cold cubed butter
Some vanilla is optional but tastes really good
All in all this is a fairly sweet bread. You can reduce the sugar if you want to but if so I would leave out the vanilla. That way you have a more savoury loaf.
Warm up your milk and cream together up to room temperature. Add in your yeast in small pieces an set it aside for now.
Add all of your other ingredients EXCEPT the butter into a bowl. If you have a standmixer, lucky you. A handheld mixer is also good, but if you have neither, be prepared to knead quite a bit😅.
Roughly combine everything in the bowl and add your liquids whith the yeast. Knead it all together until a shaggy and sticky dough forms. Now you can tip it out on your contertop or keep kneading in the bowl, that is up to you. I prefer it on the countertop but if you don't have any space, the bowl is perfectly fine as well.
Once you have your dough add in you cold and cubed butter bit by bit, kneading it into the dough as well as you can. That can take quite some time, depending in how you do it. So i wont give you a time estimate but a 'look' estimate. Your dough is finished once it looks smooth and is less sticky. If you are unsure you can do the window test. You take a small piece of dough and stretch it out carefully into a square shape. It should be able to strech out thin enough to let light through without ripping. If it rips you should keep kneading. Repeat the test whenever you need.
Once your dough is ready let it rest at room temperature. Leave it in the bowl and cover it loosely with a damp towel/cloth. Leave it for up to two hours or until it has about doubled in size.
In the meantime take a rest yourself if you kneaded by hands. You deserve it☺️.
Once your dough has proofed enough you knead it one more time to get out all the air. You will notice that it is no longer sticky.
Devide the dough in half and then each half again by three. Then you shape each sixth into long strips about the length from your fingertips to your elbow. Take three strands, lay them out infront of you and pinch the tops together. Then you braid it and put it on aprepared oven tray lined with baking paper.
Repeat that for the second loaf and cover them again loosely, this time with clingfilm. The towel would just stick to the loafs. Preheat your oven to 180°C... Umluft...circulating air... Convection oven... Google is unclear about that... The thing with the fan... While your oven is preheating pit in an ovensafe dish with about 1 liter of water. That will give you a bit more volume and a fluffier loaf.
Let your loafs rest again for 30 minutes. In the meantime prepare an eggwash from your leftover cream and eggwhite. Brush it on your loafs prior to putting them in the oven(without the clingfilm😉) and let them bake for 20 minutes. You do not necessarily need the eggwash but it keeps the bread from forming a crust to quickly and gives it a nice shine after baking.
Be cautious when taking them out after baking as there will be quite a lot of steam escaping. And to my fellow glasses wearer.. Take them of beforehand or you will be blind for a bit😶‍🌫️.
And now you are done. Let the brioche cool down before you cut into it as the heat trapped inside is crucial to keep it fluffy and moist once it has cooled down.

I enjoy it with a nice butter and just salt ontop or with chocolate sprinkles in the morning. But the best I ever had it was with my grandmas homemade raspberry jam. Not to sweet with a nice sourness to it, that compliments the richness and sweetness of the brioche.
You can also color the dough while kneading and get some funky colors after baking.
