Ingredients: 3 cups cubed watermelon. 1 cup cherry tomatoes, halved. 1/4 cup fresh basil leaves, torn. 2 tablespoons extra virgin olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste. Optional: crumbled feta cheese or goat cheese.

Ingredients: 1 cup raw cashews, soaked overnight. 2 tablespoons lemon juice. 2 tablespoons nutritional yeast. 1/4 teaspoon garlic powder. Salt, to taste. 4 slices whole grain bread, toasted. 2 ripe peaches, thinly sliced. 1 tablespoon maple syrup. Fresh mint leaves, for garnish.
Instructions: The cashews should be drained and rinsed. Put the cashews, lemon juice, nutritional yeast, garlic powder, and salt in a food processor and blend them together. To make it smooth and creamy, scrape down the sides of the bowl as needed. Cover each piece of toast with a thick layer of vegan ricotta. Put sliced peaches on top, drizzle with maple syrup, and add fresh mint leaves on top to finish.

Instructions: Toast the pine nuts over medium-low heat in a dry skillet until they turn a light golden color. Leave them alone to cool. Place the zucchini slices that have been thinly sliced on a serving platter so that they form a base for the carpaccio. Add the arugula to the zucchini slices in a way that covers them all. Take a small bowl and mix the honey, salt, extra-virgin olive oil, fresh lemon juice, and freshly ground black pepper. Pour the dressing over the arugula and zucchini. Shred the Parmesan cheese and toast the pine nuts, then sprinkle them on top of the salad. Put some torn fresh basil leaves on top. Add the balsamic glaze on top of the salad to finish it off. Serve right away and enjoy!

A zesty and tasty BBQ chicken recipe with a marinade made of garlic and lime that will give your summer grilling a great kick. You can make this dish quickly and easily, and it will be a hit at any barbecue.
Ingredients: 4 boneless, skinless chicken breasts. 1/4 cup olive oil. 4 cloves garlic, minced. Juice of 2 limes. 1 teaspoon dried oregano. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. Salt and black pepper to taste. Fresh cilantro for garnish.
Instructions: Use a whisk to mix olive oil, lime juice, oregano, paprika, cayenne pepper, salt, and black pepper in a bowl. Pour half of the marinade over the chicken breasts in a plastic bag that can be closed again. Put the bag in the fridge for at least 30 minutes, or overnight for better taste. Get the grill ready by setting it to medium-high heat. Take the chicken out of the marinade and throw away the marinade. Grill the chicken for six to eight minutes on each side, or until the temperature inside the chicken reaches 165F 74C and it is fully cooked. For extra flavor, baste the chicken with the rest of the marinade in the last few minutes of cooking. Take it off the grill and let it rest for a few minutes before cutting it. Add fresh cilantro on top and serve hot. Enjoy your tasty Garlic Lime Chicken right off the grill!
