Today we celebrated Midsummer. We went to my parents' house and had midsummer food and for dessert there were pastries. Strawberry cake (as I had made), apple cake as my uncle had made. 🍓🍏

I don't see him that often, but it was nice to have him with us. The day today has been very good, nothing to complain about. 😊

roll cake ♪(๑ᴖ◡ᴖ๑)♪

for the cake 5 egg whites 1/2 tsp cream of tartar 1 cup of sugar 3/4 cup flour 1/2 cup frozen straberries food coloring (optional)

3tbsp of vegetable oil or use spray oil parchment paper

Preheat oven to 325°F. With a stand mixer or automatic whisk, beat the egg whites and cream of tartar until medium peaks have formed. Slowly add the sugar and beat until stiff peaks have formed. If using food coloring add it now (2-4 drops). Slowly sift and fold in the flour. Blend/finely cut up your strawberries and fold those in.

On a cookie sheet (highly recommended you use nonstick) spray/coat the cookie sheet in oil (use 1 tbsp). Lay down a sheet of parchment paper and cover that in oil too (again use 1 tbsp if using regular oil). Put the parchment paper on the cookie sheet (the dry side of the paper facing the cookie sheet, oil side facing up. you can also just oil up the paper on the cookie sheet lol) and spread out the batter evenly.

Put in the oven for 15-20 minutes.

After you've taken the cake out, youre gonna oil up a second piece of parchment paper (both sides) and put it ontop of the cake. Then gently roll the cake into a cylinder, if you dont like oil all over your skin wear gloves. Also THIS IS HOT, be warned. After youve rolled it up put in the fridge for an hour.

for the frosting 1/2 cup butter 1 cup cream cheese 2 1/2 cups powdered sugar 1 cup of coconut flakes

Wait for the cake to be done cooling b4 u start the frosting. Automatic whisk the butter and cream cheese together (you can also use a fork or stand mixer). Add the sugar a bit at a time. Add all the coconut flakes :D

Unroll the cake and peel of the top piece of parchment paper, if the cake cracked, don't worry!! Itll still taste good <3 Frost the cake then roll it up once more, dont get the bottom piece of parchment paper in the roll. Then cut and serve!! Good job!!

fondant (optional) 1 cup powdered sugar 2 tbsp water food coloring (optional)

Stir/mold this together. Roll out flat and cut into desired shape, or mold it into the shape you want. Place it where you want.
