Where my tofu lovers at? 👋🏼 ⠀ ⠀ Despite what you might've heard, there's no reason to fear this little legume.⠀ ⠀ MYTH 1: Soy causes breast cancer. ⠀ ⠀ REALITY: Eating 1-2 servings of soy has a neutral or beneficial effect for most women. Tofu, tempeh, and miso are safe to eat even after a breast cancer diagnosis—hormone-sensitive cancers included. (Yup!)⠀ ⠀ I wrote a blog post a couple years back that breaks down this and more of the myths (+ research) on soybeans. Go to the link in my bio to give it a read, and then come back to try this delicious recipe. It's quick, crispy, and so, so good on top of your springtime asparagus haul!⠀ ⠀ What's your favorite way to eat tofu?⠀ ⠀ SESAME CRUSTED TOFU⠀ ⠀ Ingredients:⠀ 1 block pressed extra-firm tofu, chopped into cubes⠀ 1 tablespoon sesame oil⠀ 2 tablespoons sesame seeds (black and white)⠀ 1 tablespoon rice vinegar⠀ 2 teaspoons tamari (or soy sauce)⠀ 1 teaspoon honey ⠀ 1 tablespoon cornstarch (or arrowroot powder)⠀ ⠀ Instructions:⠀ Combine tofu, sesame oil, sesame seeds, vinegar, tamari (or soy sauce), honey, and cornstarch (or arrowroot powder), and stir until tofu is coated. Spread tofu in a single layer on a hot, greased skillet over medium heat. Cook 7-9 minutes, or until the bottom of the tofu begins to separate from the pan and turns golden brown. Flip and cook 5-7 additional minutes, or until tofu is golden brown on all sides. The hustle myth.⠀ ⠀ I've been quieter on the blog and 'gram lately, mainly because life has just been so FULL. (Kinda like this creamy cashew cheese board.🙆🏻‍♀️) ⠀ ⠀ I can't even explain how good it feels to slow down and remove phrases like "too busy" and "not enough time" from my vocabulary. ⠀ ⠀ So even though I meant to share this herbaceous cashew cheese on the blog last week, I chose hanging with the dogs and getting lost in books instead. (Even one that's totally fiction—okay, historical fiction—but 100% not at all about food or nutrition.💆🏻‍♀️)⠀ ⠀ I want to share all the exciting things coming up, but in the spirit of #slowliving, I'll just start with a recipe for this Spring Onion Cashew Cheese. 🌴Any book recommendations for my summer reading list? ⠀ ⠀ Ingredients:⠀ 2 cups cashew halves, soaked (see note), plus more for garnish ⠀ 1/2 cup chopped spring onion or green onion⠀ 1/4 cup parsley⠀ 1/4 cup fresh basil⠀ 2 tablespoons nutritional yeast ⠀ 1 teaspoon grated lemon peel⠀ 2 tablespoons lemon juice (1 large)⠀ 2 tablespoons extra virgin olive oil ⠀ Salt and pepper⠀ ⠀ Instructions: Combine ingredients in a food processor bowl or high-speed blender container. Cover and process/blend on high 2-3 minutes, pausing to scrape edges with a spatula as needed, or until smooth and creamy. (If the spread is too thick, add more olive oil and process/blend again.) Transfer to a bowl and top with cashew halves if desired. ⠀ ⠀ (Makes about 2.5 cups.)⠀ ⠀ Note: soak cashews in a covered bowl of water in the fridge for at least 8 hours.
