Although he does typicall fight with his Saber and Blaster with his right. He does eat with his left (and according to IMDB is even seen throwing with his left at one point)

Also Mark Hamil who plays him is Left Handed so I feel like that should count for something.

The most obvious/noticeable. Body language, rest postures and handling of objects. I love the fact that SEGA realize that being left handed is not just about handling things with your left. Is doing virtually everything mirrored. It suits Shadow since his name also does means 'Reflection of (...)'.

I noticed how you love my left handed Shadow post.

All those pictures were legit, canonical with Shadow using his left hand. The thing is still noticeable in many Sega original art (Like the singing goth Shadow with the sword hanging on the right side).

he also holds the microphone with his left.
