Maqloobeh (arabic for upside down) is one of the best things known to mankind and a symbol of palestinian protest and resistance;
a hearty levantine dish made of fried vegetables (typically any combination of aubergine, cauliflower, potatoes or all three.. it also varies depending on the country and whats in the pantry XD)
the veggies, chicken/meat, and rice are eventually layered in a pot and slowly cooked together with a bunch of spices, and is served on a flat tray by flipping it over, like a sandcastle, hence the name :D
the mark of a well made maqloobeh is if it stays put after being flipped, served with a side of salad (falahi or cucumber & yogurt are popular).

Lamb Chops : A cut in the lambs
Today I decided to Cook some Lamb chops, I choose chops because it is said to be one of the most tender cut of lamb meat.

Some facts about Lambs
Lamb is also the term for the flesh of a young domestic sheep eaten as food. Lambs are less than one year of age. They have usually not produced offspring. Sheeps are divide into three types;
a) Lambs
b) Hoggets
c) Mutton
There are several species of Sheep and they can range in size. Most of them are white but you will also find those that have black or brown on them. Some Sheep have horns that tend to grown in spirals but many of them don���t. Some of them can grow to be about 350 pounds but most species are about 100 pounds.
They are often used for fleece. The Sheep fleece is believed to be the most common type of fiber used from animals. They are also raised to offer milk. Sheep tend to be grazers and they will consume grass, shrubs, and plants.
Lamb does fall into the red meat category, The amount of myoglobin in animal muscles determines the color of the animal’s meat. Red meats have a high myoglobin content, which is a protein found in muscle that changes to red when it’s mixed with oxygen. As a red meat, lamb inherently contains more zinc and iron than non-red meats.

Traditional lamb chops come from the rib, loin, sirloin and shoulder of the animal. Shoulder chops only require a shorter amount of cooking time than other cuts, making them an economical and flavorful while loin chops are lean, tender and delicious!
Price of lamb chops ($$$)
I visited nofrills and I found the chops cost around $14.43 for two pieces which totally weighs 468 grams. The lamb chops don’t have much trimming waste.

Cooking methods for Lamb Chops
Chops can be cooked in various ways, including grilling, sauteing, pan broiling, braising, frying, baking and grilling.
Spicy Lamb Chops (Indian Style)
Ingredients
8 pieces lamb chops
4 green chillies
2 pieces garlic
1/2 inch ginger
1 tsp garam masala
2-3 tsp white vinegar
1 tsp red chilli powder
2 tsp salt
1 tsp cumin seeds
2 chopped onions
2 tomatoes
5 ml lemon juice
4 tsp vegetable Oil.
Methods For preparation
1) First make a paste by blending green chilly, garlic, ginger, garam masala, white vinegar, red chilly powder and salt together.
2) Smear the lamb chops with the paste and Leave to marinate for 1 hour.
3) Heat 2 tea spoon of vegetable oil in a pan. when the oil gets hot place the lamb chops in the pan until it turns golden brown. Keep aside. 4) Heat 2 tea spoon of oil in a pan and add cumin seeds. Once the seeds crackle, add chopped onions. Cook until the onions turn golden brown. Season it. 5) Add lamb chops to onion, and in the end add tomatoes. Let it simmer for 10 minutes till the chops turn tender. 6) After 10 minutes add 2-3 green chilies and lemon juice.
7) Remove from fire and Garnish it.
8) Ready to serve.

Hug A Farmer
Farmers Plays an important role in the entire life of an economy. They are one of the backbone of the economic system of a country. As farming provides Job opportunities for a large proportion of a country's population, many people choose to be farmers.
In this blog I would like to write about a farmer and his views on farming.
About Farmer !
His name is Binoj Jacob. He hails from Kerala, India. He is the youngest Son of my father’s eldest brother Mr. Jacob. He completed his diploma in Agricultural Science from Kerala Agricultural University and currently he is working as Assistant Manager in Kerala State Farmers Corporation Limited.

Actually Me and Mr. Binoj hails from family of farmers. Our grandfather was a farmer. But after he Passed away, only Mr. Jacob and his son Binoj takes farming as a serious profession. Rest all Family members including me and my father don’t show much interest in farming.
Binoj and his father have their own paddy fields and they successfully produce rice from these fields every year. They also produces bananas coconut's and vegetables from their other fields, also they have a cow at their home. Binoj takes machines like Rice Transplanter, straw baler, harvester combine etc for rent for farming in his fields.

Once I have asked Mr. Binoj why he is continuing farming along with his Job as a government employee but he replied with a smile and said that when he was young he use to visit farms along with his father and observe his father working in the fields. He told me that he is not doing farming to earn more, but it is a passion for him and he enjoys being a farmer.
Organic or Non Organic ?
Mr. Binoj told me that he do Non organic farming. He explained to me that it is very difficult to do organic farming, because of the unexpected changes in climate and due to the increasing number of pests which become a challenge to farming.

He clearly stated his status that he also loves to do organic farming and he told me that foods cultivated without using any pesticides are really healthier and tastier. But he said that it is difficult to replenish Non Organic farming methods at present, because of the change in climate and many other factors.
As a agricultural officer Mr. Binoj try to promote farming among youth by visiting schools and colleges, conducting awareness programmes and seminars to teach importance of farming
What I Learned From This Experience !
From Mr.Binoj I learned how important is farming is and influence it has on peoples life. I was wondering about passion and dedication that Binoj shows for farming I was able to understand the difficulties behind farming, influence of climate on farming etc.
So, We should not try to waste any food products because it is a result of hard work of lot of people and their valuable time. And we should try to do small scale farming as possible as we can.

Diets And Dietary Restrictions
It is very important to maintain a good balanced health diet for our body to function well. A good diet helps to stay away from diseases.
Given below was my diet plan from July 2nd to July 8th.
Day 1
Breakfast
Broccoli rabe and egg toast
1 cup coffee without sugar.
Snacks
Poached eggs
3 slices of bread
Lunch
Kale chicken salad:
1 cup kale with 1/4 lemon, juiced, 1 tsp olive oil, 4 oz grilled chicken, 2 Tbsp pomegranate seeds.
Snacks
1 cups air-popped popcorn
Dinner
3-bean chili.
Day 2
Breakfast
1/3 cup dried oatmeal, cooked in water
1 banana with 2 tsp almond butter and a dash of cinnamon
Snacks
1 cup cucumber slices
2 Tbsp guacamole
Lunch
Shrimp salad : 2 cups mixed baby greens, 5 shrimp, 1/4 steamed avocado, 2 sliced hearts of palm spears, 1/4 lemon juiced, 1 tsp olive oil,Snack 1 green apple 250 ml milk.
Snacks
1 Cup cake
Dinner
Chappathi and Dhal Curry.
Day 3
Breakfast
Appam and Egg curry.
Snacks
Guacamole Bowl
Lunch
Shrimp salad: 2 cups mixed baby greens, 5 shrimp, 1/4 steamed avocado, 2 sliced hearts of palm spears, 1/4 lemon juiced, 1 tsp olive oil.
Snacks
1 large orange
Dinner
4 oz salmon baked with 1/4 lemon juiced, 1 Tbsp Dijon mustard, and 1 Tbsp chopped fresh parsley
2 cups sautéed spinach
Day 4
Breakfast
Canadian Poutine
1 cup skim milk.
Snacks
1/4 cup plain fat-free Greek yogurt with 1 tablespoon sugar-free fruit spread.
Lunch
cucumber nori rolls
Snacks
1 Medium apple
Dinner
1 cup brown rice
5 OZ grilled salmon.
Day 5
Breakfast
1 Bacon and waffle sandwich
Snacks
1 flatbread with hummus
Lunch
1 Cup Brown Rice and chicken curry.

Personal Experience
After following a special diet menu for a week, I noticed many Good symbols of health changes were happening in to my body. I was feeling really relaxed, and myself I felt more confident.
Now I understand how important a healthy diet menu is and the importance it has on our daily lives. So to be a good chef I must learn more about healthy menu’s to serve healthy meal to my customers.
In future if I get an opportunity to create a new menu I will give more importance to healthy foods than junk foods.
Also, I am planning to learn more about Different menu’s around the world,so that I can discover new foods and their cooking methods around the world.

Innovative Product Related To Culinary Industry
Hello everyone in this blog, I am going to write about an innovative product that changed the food industry. So I have decided to write about ‘Food Processor’.
Food Processor
>Food processor, is an equipment which we use in the kitchen for food-preparation functions including chopping, blending, pulverizing and kneading. Food Processor was invented in the late 20th century, by Pierre Verdon.
>The concept of a machine to process food began when Pierre Verdon, observed the large amount of time his clients spent in the kitchen chopping, shredding and mixing. He produced a simple but effective solution, a bowl with a revolving blade in the base. In 1960, this evolved a company establishment to manufacture commercial "food processors" for the catering industry. In the late 1960′s, a commercial food processor driven by a powerful commercial induction motor was produced

Food processors are of two basic types:
a) Those in which most of the work is done in a single bowl by a flat blade.
b) Those fitted with many attachments.
Standard accessories include a work bowl, lid, chopping blade, mixing blade, and disks for slicing and shredding.
<>The motor is the heaviest component of a food processor and its heavy weight keeps the processor stable while the motor is running so that it does not jump around the kitchen counter or you.
<>When the motor spins at high speeds, finer grinding is achieved. To control the speed of the motor, there are switch controls. Using these switch controls allows time for food to fall back down off the sides thereby allowing for more even consistency of what you are grinding, chopping or slicing.
-> A Food processor has an significant role in today’s culinary industry as it is one of the basic things which ensures proper run of a kitchen as it makes food making process like chopping, grinding etc so fast.
->As a cook and a Culinary Management student this technology has helped me a lot, because when I need to make a paste or puree I can use the help of food Processor.
I am concluding my blog thanking the ‘inventors of the innovations’ that we use now in the kitchen. If those innovations were not here yet, cooking would have been more difficult.

Few days before I visited a Nofrills near my friend Vishnu's house in Eglinton West, along with him. Actually we were planning to visit St.Lawrence market near our college, but when we searched on google we came to know that St. Lawrence market remain closed on every Monday. So we made a decision that we will visit nearest Nofrills.
When we visited there, market was not so busy,so that we were able to spend more time over there and take pictures of fruits.
There were many fruits like oranges, apples, plum etc but I choose Bosc pears because, it is not so available in the part of India I lived.
Pears
Pears are a member of the rose family of plants. They are found in a variety of colors like green, red, yellow, and brown. Many varieties fail to change color as they ripen, making it more difficult to determine ripeness.There is debate about the exact origins of the European pear, but many experts believe that European pears and Asian pears evolved separately and during the same approximate time in history Certain species of pear are also native to parts of Africa. China is the world's largest grower of pears.Pears are a concentrated source of phenolic phytonutrients, including hydroxybenzoic acids and hydroxycinnamic acids. Pears are a very good source of dietary fiber and a good source of copper, vitamin C and vitamin K.European pears generally grow best in U.S. Department of Agriculture plant hardiness zones 5 through 8. Asian pears grow best in U.S. Department of Agriculture plant hardiness zones 9 and 10. In areas with mild climates, pears can tolerate salty coastal environments.
My Sensory Evaluation
The taste of pears is sweet, they have a pleasant smell and they have curved stem and a neck with round bottom. Their are different varieties of colors for pears. When biting it a crispy sound is produced,but it is little thick while touching its surfaces.
My Cooking Method
Some people love to cook pears by baking it, by I suggest to try poaching method.
Poached Pears with Honey
Ingredients
4 Pears
5 cup of water
1/4 cup sugar
1 tsp, whole cloves
1/2 cup of honey
2 piece sliced ginger
1 cinnamon stick
METHOD FOR PREPARATION
1) Wash Pears first.
2)Peel the pears and cut it into half.
3) Add water, honey and sugar in a sauce pan and boil them
4) After they completely dissolve add cloves, ginger and cinnamon stick.
5) Then add pears to them and reduce them to simmer.
6) Allow them to cook about 30-35 minutes in medium heat.
7) After it is cooked, you can eat them immediately or refrigerate them.
I suggest you to eat them after refrigerating. But it is totally your wish.
MY EXPERIENCE
After every blog I am learning new things.This time I got an opportunity to select and taste a new fruit, which is not much common in my country. I was able to think different method of cooking a fruit. And I was able to study about the history, geographical conditions and Nutritional benefits of this fruit.
