I’m gonna share another very useful approach to life as an adult with ADHD: cooking and nutrition edition.
The American idea that dinner is “meat/protein with a veggie and a side” and that this is somehow an easy thing to prepare is a lie. That’s so much work. Sometimes I like making a meal that requires a lot of effort but that’s not sustainable for my average weeknight dinner.
I would like to instead introduce you to my world of Sauce Based Cooking. It is predicated on the idea that the “one pan meal” is not a category of recipe but rather a decision made by the chef. There are some deviations (some meals require a pasta pot and/or sheet pan) but that’s still way less than a lot of recipes call for. If it requires a blender, simply close the link and step away.
Rules for Sauce Based Cooking Freedom:
Have more spices/flavorful pastes than you know what to do with. Better than Bouillon and miso paste and curry paste and spice mixes etc etc. You are not running an authentic Tex-Mex restaurant from your kitchen just get the taco seasoning packets.
If you eat meat, you should be buying bone-in skin-on chicken thighs. Not chicken breasts. You can braise a chicken thigh for two hours and it will only get tastier and better. Cooking a chicken breast is stressful and requires a level of precision im not prepared to give to a chicken.
Focus on learning to make tasty BASES. You have learned if you make it and it tastes good to you. Nail down a good cream sauce, perfect your 20 minute marinara, learn a coconut curry, figure out the basic components of a marinade. Add some ground ginger to your chicken soup and thank me later. Then cooking is just beating protein and veggies into submission under your sauces and above your grains.
Don’t try and make ~dishes~. I call this “Zelda cooking.” You need something that you enjoy eating and gives you the nutrients you need to function. Prep vegetables and proteins you like and dump them into a sauce you also like. Add some polenta or bread or rice or couscous or any other grain to soak up the sauce and make it filling and satisfying. 9 times out of 10 it’s gonna work. The only decision you need to make is the flavor profile of the sauce.
Buy the precut vegetables. I know. It feels wasteful. So much plastic. But I promise you it’s way more wasteful to throw out half your groceries and order Uber eats 5 days in a row because you never managed to chop an onion. It’s okay. Precut/frozen vegetables and canned ingredients and prepared food items are going to be your lifeline. I can turn a rotisserie chicken and plastic tub of mirepoix (pre chopped onions, celery and carrots) into a delectable soup with just things in my pantry at this very moment.
Same as above but line the pan with foil. Save yourself a dish.
Add at least one vegetable to everything you cook. This might be controversial but you need fiber. And all sorts of other vitamins and minerals that things like kale and carrots and sweet potatoes have. My go to is canned chickpeas. A jar of marinara plus some canned chickpeas and kale is suddenly a hearty and filling topping for pasta that’s gonna satisfy me way more than just the pasta and sauce. And all I had to do was dump a can and a bag into the pot. That’s not a dish that really exists or has a recipe but it’s Sauce Based and I eat it a lot.
Keep some fortified cereal (most cereal is fortified by default) and trail mix on hand. Sometimes I get in a funk and order a lot of takeout or just eat a lot of carbs and not much else and then get woozy because I’m a little dumb and don’t eat a lot of animal products so all my Nutrients are low and that makes cooking harder. Fortified cereal and trail mix together will have most of the stuff you need to get rid of the lightheaded wooziness (iron and b12 and fats and sugar) in a dense little package that’s easy to munch on while cooking.
Finally, I know online recipes and Pinterest are great and wonderful but get proper cookbooks whenever you can. The first reason is that even with AdBlocker online recipes are a minefield and can be distracting and frustrating and overwhelming which are all things you don’t want when knives and hot pans are around. The second is that you will learn so much about cooking from a proper cookbook and the better you are at cooking the easier and faster it goes. ThriftBooks has plenty as will your local library or even older relatives. Ones like “Cook What You Have” by Christopher Kimball and “The New York Times Cooking No-Recipe Recipes” book and the classic “The Art of Simple Food” by Alice Waters are great.

Food is such a motivator for me. For example, tescos and sainsburys used to have hot meat counters, where you could get such things as bbq chicken wings, gammon shanks, rotisserie chickens, pizzas etc. Now all sadly discontinued because of 'changing customer habits' (ie we could continue because we make boatload of profit anyway but we won't because not as many people were buying it).
My absolute obsession was their chinese marinade chicken thighs. These things tasted like I think god would taste, if they were a juicy, perfectly seasoned piece of meat. But long before the shops announced they'd be discontinuing the hot meat counters, I couldn't find them anymore. Maybe I was slow off the mark each time, maybe they weren't as cost efficient to make.
I am not a good cook, but frustration at being denied these things drove to to try and learn. Consequently I can now make ten of them for the price of four off the hot meat counter.
Recipe:
Bone in chicken thighs (this recipe presumes 8)
Salt and pepper
Honey (2tsp)
Soy sauce (2tbsp)
Ginger paste (1tbsp)
Rice vinegar (1tbsp)
Tomato puree (1tsp)
Five spice (2tbsp)
Preheat oven to 200c fan, 220c reg oven Season the chicken with salt and pepper first. Mix all the marinade ingredients together in a single bowl, then cover the thighs using a pastry brush. Any leftover sauce, pour over the top. Put in a greaseproof lined tray and pop in the oven for 40 mins. At the 20 min mark, look in on them and use the runoff to baste. If you have a grill that doesn't set off your smoke alarm, switch to the grill for a few minutes afterwards to get a nice crispness to the skin. (This step is optional).
If you have a airfryer you can chuck them in there instead.

Prepare the Fire: If you have a wood-fired oven, get it preheated to around 400°F (200°C). For a smoky taste, add some aromatic wood chips (like hickory or applewood) to your fire.
Stack and Skewer: Using a metal skewer, layer the marinated meat tightly. If you have a vertical rotisserie, this works best, but a simple skewer over a wood fire will still bring out incredible flavors.
Cook: Place the skewer in the oven or over the fire, rotating occasionally until the meat is charred and crispy on the outside and cooked through on the inside (about 30–45 minutes depending on thickness).

I made a focaccia tonight (with rye and oat flour) topped with pesto, melted Gouda, rotisserie chicken (with an herb and lemon marinade, no salt) and sliced avocado on top.
Holy shit it was crack. Can easily be vegetarian without the chicken but would probably do a lime/herb drizzle on the avocado.
Trying to figure out dinners for working in the office again.

so my friend julia and i started a thing we call pizza flipper fridays where we get ✹toasty✹ and take a frozen cheese pizza and zhuzh it up a little with a main mystery ingredient and whatever i have in my pantry/fridge.
my name is katja and since july i’ve been trying to teach myself how to cook and build a diverse pantry so i could create more satisfying meals at home at the drop of a hat for less than i’d spend going out to eat.

week one, our mystery ingredient was a nice big heirloom tomato

so we sliced up the tomato, crumbled some fresh cheese, drizzled some balsamic vinegar and put some dried basil on top
7/10 it was delicious and the flavors *were there* but it would have benefitted from a balsamic glaze rather than liquid-y balsamic vinegar flooding the pie. also some fresh basil for color. it’s just okay visually so i knocked a point off for it
i actually bought balsamic glaze after making this, it’s actually life changing i got it from whole foods.

week two, we had julia’s girlfriend lucy over and she brought the mystery ingredient zucchini

so this week we have some panko-fried zucchini, chopped red onion, and a mayo/gochujang drizzle on top.
10/10, absolute banger. panko added a nice crunch because we added it towards the end of the bake so it wouldn’t get mushy in the cheese. kewpie mayo and gochujang paste is my favorite combo right now and I’ve been putting it on everything. very visually pleasing to me, lots of colors.

we went a little crazy this week and used a white pizza with spinach on top. it breaks the mold a little but pizza flipper fridays is always about thinking outside the bun.
lucy shredded up the chicken and tossed it in a sauce julia and i made up of gochujang, rice wine vinegar, a little soy sauce, a little sesame oil, and a tiny squeeze of kewpie mayo. put a very generous layer of chicken on top. lucy then rough chopped a couple cloves of fresh garlic.
now the issue, i forgot how we did the zucchini the last time and i cut the slices a bit too thicc and just plopped them on top. they got tossed in some salt, pepper, and olive oil. tbh i may have just been a bit too ✹toasty✹ to chop any thinner and was taking precautions.
overall though?
8.5/10, the zucc got baked just fine and softened up but it looks very silly like i have a polka dot pizza. the chicken was đŸ”„ and the white sauce really allowed the gochujang marinade be the star of the show rather than fight against tomato. if we panko fried the zucchini or even just sliced them thinner/smaller, i think this would have been a solid 10/10.
