Bone broth is becoming very trendy and with good cause – it’s better than botox. Bone broth has numerous health benefits such as a skin rejuvenator, a cellulite reducer, joint health, helps arthritis and healing for the digestive tract. You can even get bone broth at specialty pubs for a lofty $9/cup, although I prefer to make my own. I like to enjoy my bone broth straight up in the late morning during my fast as well as a late afternoon pick me up.
Bone broths — beef, chicken, fish, lamb and more — are staples in the traditional diets of every culture and the basis of all fine cuisine, and now a staple in the Paleo diet and keto diets because of their nutrient-dense, easy to digest, rich in flavor and immune boosting properties.

INSTRUCTIONS
Place the bones your slow cooker. The bones should fill up about 3/4 of the slow-cooker.
Chop your vegetables and garlic, no need to peel. You can also add vegetable scraps.
Fill the slow cooker with water.
Add 2 tablespoons of apple cider vinegar
Cook on low and cook for 18-72 hours.
Strain the broth through cheesecloth or a strainer and cool. A good broth will usually have a layer of fat on the top and will gelatinize when thoroughly cool. Remove the fat with a spoon and discard.
It will keep in the fridge for up to five days. For longer storage, freeze in one cup portions.

Over the past three years, I have had the pleasure of giving a keynote presentation at the annual PaleoFx conference. This conference is a gathering of individuals and vendors door focused on the notion of reclaiming health through emulating the environment of our ancestors. Most importantly, the event looks at food, and how that important choice influences health.
This year, at the 2018 event, there were two areas of interest that were clearly trending, especially in comparison to previous years. First, there was a high level of interest in the ketogenic diet. This was the topic of multiple presentations and its popularity was certainly not lost on many of the vendors who were present. The idea of that consuming various types of food products could boost ketones was certainly very well represented at the conference. The other topic that was receiving quite a bit of attention both in the lectures as well as in terms of what was being made available to the consumer was bone broth. Truthfully, I was happy to see both of these trends getting a lot of attention because they’re so well supported by science. As many of you know, I am deeply involved in spreading the message as to how powerfully effective the ketogenic diet is in terms of allowing people to regain health and stave off disease. Similarly, I speak often about the benefits of making bone broth a dietary staple because of it is tied to some really terrific health benefits, which we will explore below.
What is bone broth?
Bone broth is made by boiling connective tissues and bones of animals, generally cattle or chicken, for several hours. Typically, recipes for bone broth call for the addition of various spices, herbs, and vegetables. What differentiates bone broth from typical broth or stock has to do with the amount of time bone broth simmers. Typically bone broth will simmer anywhere from 10 to 20 hours, and this is really important because that length of time is required to liberate collagen and various other components that contribute to the nutrient density of the bone broth.

Glycosaminoglycans
Proline
Minerals
Glutamine
Glycine
Collagen
Collagen is one of the most important types of protein in human body. In fact, about a third of the protein in humans is collagen in one form or another. As mentioned above, collagen is the fundamental component of various connective tissues including cartilage, ligaments, and tendons, as well as playing an important supportive role in the skin.
It is truly collagen that binds the human body together. This makes it a powerful nutrient for skin conditions and joint pain. For example, clinical research has demonstrated that oral collagen has beneficial effects on human skin physiology in research looking specifically at skin elasticity. In terms of the joints, an interventional study published back in 1993 looked at 60 patients with severe, active rheumatoid arthritis. The subjects that were fed collagen for 3 months had a decreased number of swollen joints, with 4 patients going into complete remission.
Glycosaminoglycans
While the name sure sounds compelling, it would be good to get to know this import and group of carbohydrates. Now that we’ve discussed the importance of collagen, it’s important to know that collagen is supported and maintained by glycosaminoglycans (GAGs). In addition to supporting collagen, GAGs also support elastin and therefore they are really important in terms of skin health and appearance. One of the main things that GAGs do to help keep skin healthy is they enhance the ability of collagen and elastin to absorb and retain moisture. And this extends well beyond the skin as GAGs combine with various proteins that help form synovial fluid, keeping the joints lubricated.
Proline
Proline is an amino acid that plays a role in regulating the process of apoptosis. Apoptosis is an important mechanism in the body for getting rid of defective or unnecessary cells. Apoptosis, for example, is one of the mechanisms by which our bodies offload potentially malignant cells. Proline is important for the formation of collagen, and as such, wound healing. In fact, the protein collagen contains approximately 15% proline. We are now seeing quite a bit of research that relates proline to healthy skin.
Minerals
Bone is a rich source of a variety of minerals including iron, copper, magnesium, calcium, phosphorus, manganese, sodium, and zinc. Liberating these minerals from bone happens, to some degree, during cooking. Adding a small amount of apple cider vinegar, an acid enhances the liberation of these minerals into the broth.
Glutamine
Glutamine is an amino acid and in fact is the most abundant amino acid in the human body. One of its most important roles is to serve as an important fuel for the enterocyte, which is the type of cell that lines the intestines. Not only does glutamine fuel the metabolism of these cells, but it also regulates their growth. We absolutely depend on healthy enterocytes to maintain the integrity of the gut lining. This becomes especially important when we consider that increased permeability or “leaky gut” is associated with a variety of inflammatory bowel issues as well as other inflammatory conditions elsewhere in the body. And beyond the enterocyte, glutamine also serves as a source of fuel for cells in the kidney, liver, brain neurons, immune cells, and the beta cells of the pancreas – the cells that make insulin. It’s also important to note that glutamine is a required precursor for the production of glutathione, one of the most important antioxidants in the human body.
Glycine
Like glutamine, glycine is also a requirement for the production of the antioxidant glutathione. And beyond just serving as an antioxidant, glutathione is also very important for detoxification reactions. Glycine is an important component of the connective tissue collagen, so it has an important role to play in terms of the health of cartilage, tendons, bone, blood vessels, ligaments, and skin.
Clearly, bone broth is a terrific food. No wonder it is so popular. And it’s a great choice if your trying to maintain a gluten-free or ketogenic diet. What’s more, it’s really not that difficult to make, although it does take a bit of time. You simply boil any kind of animal bones for at least 10 hours, add vegetables, and various spices, and then you have it! As mentioned, adding a bit of apple cider vinegar helps release minerals.
Or, you can buy bone broth online or in health food stores. But when shopping for bone broth, be sure to look for:
Bone broth that is simmered for at least 10 hours, preferably longer.
The ingredients should be organic.
The bones should come from grass-fed and finished animals that are hormone and antibiotic free.
There should be no additives or preservatives
Whether you make it yourself or buy a healthy version, bone broth is a delicious way to supply your body with key nutrients that keep you healthy.

Call me crazy or radical but I truly believe that the earth contains everything we need to survive happily on this earth! I am not a preacher, doctor or even vegan but I am a living witness that herbs, fruits and vegetables can heal your mind, body, and soul. Do extensive research before making drastic changes that may affect your health. With that being said, let me say this again: fruits, vegetables and herbs can change your life if you let them! I no longer suffer from many of my past health issues simply because I took ahold of God’s Word, believed it for my situation, and started making small changes.
You’re probably like what does God’s Word have to do with herbs, fruits and vegetables?” Well:
Genesis 1:30 God said, “Behold, I have given you every herb bearing seed, which is upon the face of all the earth, and every tree, in the which is the fruit of a tree yielding seed; to you it shall be for meat.”
Genesis 2:8 And the Lord God planted a garden eastward in Eden; and there he put the man whom he had formed.
9And out of the ground made the Lord God to grow every tree that is pleasant to the sight, and good for food; the tree of life also in the midst of the garden
This is God’s Word telling us about what he created for us to eat. When He created the first human beings they were perfect, so I can’t help but believe that when he created fruit trees for them; he created the perfect foods. In my opinion, these foods are still perfect for us today! When I realized something was going on with me, my body was already full of toxins, I was overweight, depressed, fatigued, sluggish, my skin was dull and had a dark film over it, I had no libido, chronic yeast infections…I was just one unhappy creature. I had been feeling this way for so long that I thought it was normal for a 30 year old to feel this way. I longed for sleep ALL DAY, and on top of that I started having chest pains.
I sat in my car one day and cried my eyes out. I asked God to please help me and give me the motivation to exercise and to have self-control when it came to eating. I asked Him to show me what I needed to know about healing my body. So, over the next few years…yes years, you better believe that God began to show me all kinds of things I would have never discovered on my own. He put before my eyes different resources by natural health practitioners, I heard mind-blowing stories of people healing themselves of cancer and disease by eating only avocados and carrots. Moreover, he allowed me to connect with a network of local herbalists and most importantly I rediscovered the joy of walking. He gave me courage to trust and know that He’s got this thing figured out if I just listen to Him. I received a major revelation one of those days when He reminded me of a passage in the Bible:
And the Lord God formed man of the dust of the ground, and breathed into his nostrils the breath of life; and man became a living soul.
Again, like I said before, NOT a Bible scholar, however looking at this passage you clearly see that God formed mankind out of the dirt. This is the revelation He gave me: “YOU ARE MADE OF DIRT. THEREFORE YOU MUST EAT OF THE DIRT.”
On a scientific level what is dirt made of?
Dirt on a molecular level is carbon, hydrogen, oxygen, potassium, magnesium, copper, and a host of other minerals. So being that we are made of dirt, then we humans are made up of carbon, hydrogen, oxygen, potassium, magnesium, copper and a host of other minerals.
So if we are made up of these elements then we need to put these elements back in to our bodies to replenish us and keep us functioning as the amazing beings made in the image of God! In other words, to be absolutely healthy, well, and whole we must eat elements of the earth. We must eat the fruits and vegetables that come from the dirt. The animals we eat must eat fruits and vegetables of the earth.
I was mind-blown by this beautiful revelation! Somewhat obsessively I researched and embraced the benefits of different types of herbs, fruits, and vegetables and began to eat and juice them. I listened to my body and started taking different minerals to replenish what was lacking. My chest pains stopped completely once I began supplementing magnesium and eating magnesium rich barley. I believe those pains were my heart crying out for nutrients.
In closing, with God I was completely able to take control of my health! It has been an ongoing journey for years now but I am no longer overweight, my skin is looking better and better, I’m happier, confident, and my husband is pleased that my libido has returned. After being unhealthy for so long I thought that I could never look and feel good again and by no means am I perfect! I still eat unhealthy things and I love cake! But I have learned self-control and cucumbers go a long way. God wants us healthy, happy, well and whole, He gave us everything we need on this earth to accomplish these things. Ask Him to help you take authority over your health. Ask Him to show you what your body needs so that you can live your best life as the king or queen you were designed to be, and then just DO IT!

12 Monthly Nutrition and Health Challenges to Thrive in 2018
Each new year, just after the clock strikes midnight, we’re given a golden opportunity to turn the page on one year, and start writing the story of the next.
To set resolutions, and tackle the health, nutrition, and fitness goals that plagued us for the last 12 months. It’s beautiful, if you ask me.
The only problem? Health and nutrition goals like that — goals that stick and make a lasting change — take work.
There are a lot of blogs out there that promise quick fixes through hacks or other shortcuts, when what you really need is real, lasting change. And the cold, hard, nobody-wants-to-hear-it truth about achieving your health and fitness goals is that it ain’t easy.
Which, if you haven’t figured it out already, is why most people’s health goals and new year’s resolutions fail (often before they even get started).
But your 2018 goals?
Those will be different.
Those will be… magical. No no, that’s not right. No mythical magic here…
Those will be…
Earned.
Sexy, it is not. But in truth an earned goal is far superior than one handed down with magic (if there actually is such a thing).
And to earn those healthy goals, I can’t think of any better way than making small-step-style progress through monthly goals. Small challenges that will make hard-to-get-started health goals easier, manageable, fun, and most importantly, successful.
12 Monthly Health and Nutrition Challenges for 2018
For the past two years, we’ve put together a plan of monthly challenges to help you push through the next year. The first year focused on running, the second happiness, and this year we’re focusing on nutrition and general health to build a solid foundation.
Because any big, lasting health change or goal only takes root on a strong habit foundation. Once that foundation is established, the options are endless.
If you stick with this plan, laid out through 12 monthly challenges, you’ll unquestionably make progress towards your larger health and fitness goals.
Here’s how it works:
Each challenge is designed to last a month, but the hope is that you’ll keep up that new habit, or at least a similar version of it, after the month ends. If you’d like to slow it down, feel free, but I encourage you to push yourself to stick within the schedule.
The challenges build on each other, so start with numero uno.
Most challenges are adaptable, so if something sounds too easy (or if you’re doing it already), step it up a notch to make it harder. If what I’m suggesting is simply far too hard, take it back a bit. But let me be clear, this should be difficult. These are challenges, after all.
Each year we set these up to start in January, but they don’t have to! If you’re finding this in August, start now!
Ready to get started? Good. Let’s make 2018 your best year yet.
Challenge 1: The Year Of…
I’m a big believer that overarching themes can help us stay focused. By setting a theme, you provide a guide for all your goals and objectives.
That way, when you’re feeling conflicted about a task or mini goal, you can ask yourself:
Does it fit my theme?
If the answer is “yes,” then great. Go for it. If the answer is “no,” you may want to rethink it.
Objective: Create a theme for your year, then brainstorm how the next 11 goals, plus any others you may have, can fit that theme. They might not all fit perfectly, but there should be a way to make the connection. Take your time on this, and spend the next weeks refining it (and the following challenges) in a way that supports your theme.
Rules: Define your theme in an objective way. Sample themes could include:
The year of going vegan.
The year of running a marathon.
The year of losing 20 pounds.
As an example, my theme this year is running related: The year of vertical gain. All the races, training plans, and objectives I set for myself will be based on big vertical gains and mastering the climb. Though many of the challenges below don’t have anything to do with running, I can frame them in a way that will set me up for success with my training.
Now it’s your turn. What will be your theme for the year?
Challenge 2: Nailing Breakfast
They say breakfast is the most important meal of the day.
I’m not sure who “they” are, or even if they’re correct, but I know for sure that if you start your day off on a healthy note, it will get you in the right frame of mind to kick ass as the hours go on.
For this second challenge, start with nailing breakfast by having a healthy, nutrient-rich meal before you start the day.
Objective: Make a nutrient-rich, energy-rich breakfast a priority.
Rules: During each weekday, make a nutrient-rich breakfast to start your day. It could be a smoothie, bowl of oatmeal or fruit, salad, or anything else you come up with. Feel free to treat yourself on the weekends.
Note: Going back to the last challenge and tying my theme into this second focus, I’ll be eating hills for breakfast. Only kidding, but since most of my runs will take place in the morning, I’ll be designing a breakfast perfect for fueling tough workouts and big hill days.

Challenge 3: Daily Meditation
Just a few minutes of mediation each day can make you happier, calmer, and more focused. And it’s absolutely free to do.
But anyone who has tried unsuccessfully to meditate knows that quieting the mind for five or 10 minutes is crazy hard. Despite my best intentions over the years, I haven’t been able to make a meditation habit stick, and I know you may be in the same boat.
This month let’s make it happen together.
Objective: Create a daily meditation practice to stay focused, increase happiness, and improve health.
Rules: Start with just two minutes per day, and build from there. You can do this at any time of the day, but it’s often recommended to meditate in the morning, before the day gets too involved. As the month goes on and the two minutes begin to feel like nothing, begin slowly increasing the time.

Challenge 4: Meal Planning
If I could give only one piece of advice to someone looking to eat healthier, it would be to start meal planning.
Planning out your meals for the week saves time and money (fewer last-minute calls for take-out), and can be far healthier because you’re not grazing the kitchen looking for something appetizing. When you think through your meals and shop for the ingredients ahead of time, you’re more likely to stick with the healthy habits or goals you’ve set for yourself.
It may seem like a lot, but once you get into the routine of planning your meals, you’ll find it liberating to no longer have to worry or wonder what’s for dinner.
This month the challenge is to start planning your meals for the week ahead of time.
Objective: Save time, energy, and money, and guarantee you’ll get your healthy meals, by making a weekly meal plan.
Rules: Compile a list of your favorite recipes and go-to meals you don’t need recipes for, and plan out at least five lunches and dinners (remember, lunches can be leftovers from the night before!) for the week no later than Sunday. Shop for the meals all at once, so you can start your Monday off with a full fridge and knowing what’s on the schedule. The two additional days can be “free days” to go off-schedule and eat out or treat yourself to something unplanned.

Challenge 5: Sunday Food Prep
Got the meal planning down? It’s a pretty nice routine to get into, if I do say so myself.
Now let’s take it one step further and actually start prepping your food for the week ahead of time.
Even with the best-planned intentions, life can get in the way, and you may find yourself without time to cook what you had scheduled. By starting food prep on Sunday, or any other day when you have a block of time to focus on food, you can pre-chop veggies, soak beans, cook and freeze a meal, or sort snacks for later in the week.
The early preparations will keep you on track, and often lead to healthier decisions, since you aren’t as rushed to get something together.
Objective: Save time and make healthier choices by prepping food for the week ahead of time.
Rule: Block off one to three hours on Sunday to pre-chop, cook, and prepare food for the week ahead. You can do this in the evening instead of watching TV or as a fun family activity with the kids.

I first learned this term from friend of NMA, Sid Garza-Hillman. The idea is simple: take advantage of the two- to five-minute breaks you have throughout the day to add in short, high-intensity exercises like push-ups, squats, sprints, etc.
Just think about the number of push-ups you could knock out in five three-minute mini-workouts, that you probably wouldn’t make time for otherwise.
Objective: Take advantage of short breaks while in the office, watching TV, between phone calls, or any other time you find yourself with a few minutes to kill, to do mini-workouts that get the heart rate up and build strength.
Rules: At least three times per day, use short windows of time to exercise. These should be in addition to your regularly planned exercises.

Challenge 7: A Month of Review
Phew! What a first six months this has been!
If all has gone as planned, you’re now crushing your mornings with a healthy breakfast and meditation, taking advantage of extra time to work out and get stronger, and between regular meal planning and food prep, you’re saving time and money, and eating healthier than ever.
That is pretty darn cool. But …

This month I want you to ask yourself why you’re struggling with a certain challenge, and really dive in to figuring out what you can do to make that challenge, or a version of the habit it encourages, stick.
Objective: Review the first six months of challenges to see where you’re falling behind and which habits have been the most successful.
Rules: Do a complete brain dump of everything you’re thinking and feeling about each month’s challenge. Over the next few weeks, review those notes and spend the time evaluating progress and hurtles to see how you can improve and set yourself up better going into the second half of the year.

Challenge 8: Intermittent Fasting
This one might be the toughest challenge yet, but harder challenges yield bigger results.
Intermittent fasting, or cycling between fasting and non-fasting, has recently become a popular weight-loss tool by boosting your metabolism, and it has also been shown to provide longevity benefits as well.
There are a number of approaches to intermittent fasting, including:
The 16:8 method where you eat within an eight-hour period each day and fast for the remaining 16 hours. When you’re fasting you can’t take in any calories, but you can consume non-caloric beverages, including coffee, herbal tea, water, and sparkling water.
The 5:2 method where you eat normally for five days of the week, and restrict your calories to 500 (women) or 600 (men) the other two days.

Objective: Experiment with intermittent fasting to see if it helps with your energy, weight, or overall healthiness goals.
Rules: Ease into an intermittent fasting cycle by choosing a plan that works for you. Once you have a plan, give it a go for the next month. Take notes and track how you feel and your energy levels, and consider whether it’s something you’d like to continue.

Challenge 9: The Pre-Dawn Miracle
Not a morning person? Me neither. I wasn’t, anyway.
In a recent upgrade to the Apple iPhone iOS, they added something called “Bedtime,” where you set a bedtime and wake-up alarm based on the number of hours you’d like to sleep each night. Up until I used that tool, I would set my morning alarm based on what I had going on that day. Now, my phone wakes me up at the exact same time each day. And because I’m an idealist, I set that time earlier than I normally wake up.
Amazingly, after a week or two of waking up at the same earlier hour every day, my natural clock started following the alarm. I’d wake up with more energy and alertness, and the added time and energy has made my mornings more productive than ever.
This month, the challenge is to turn that daily alarm up by 45-60 minutes, and start the process of kicking off your day earlier. While 45 minutes may not sound like much by itself, in just one week that’s over five additional hours of productive time. Over an entire month? 22.5 hours. How’s that for finding time?
Objective: Begin waking up earlier to take advantage of the quiet, productive time and not feel as rushed or stressed in the morning.
Rule: Set your alarm at least 45 to 60 minutes earlier for each weekday morning. No snoozing!

Challenge 10: Morning Pages
What if you could start each (now earlier) day by dumping out everything on your mind first thing — no matter the topic?
It’s called Morning Pages, and people (including Matt) swear by it. Morning Pages is the process of writing three pages in a stream-of-consciousness format first thing in the morning. These aren’t pages anyone will ever read, and aren’t intended to be rewritten or used on a blog.
Just a massive brain dump, every single morning.
Objective: Promote clarity and productivity through stream-of-consciousness writing first thing in the morning.
Rules: Write at least three stream-of-consciousness pages. There’s no wrong way to do it, as long as you just let the writing flow. Remember, no one will be reading this or using it later.

Whether it’s alcohol, coffee, chocolate, or Doritos, everyone has their vice.
It’s time you go 30 days without yours.
I know, I know… What’s the harm in an evening beer or morning cup of joe? Probably not much, but you likely won’t know until you go without it. The discipline, clarity, and independence you’ll gain from ditching something you once felt dependent on will give you strength to take on bigger challenges moving forward.
Objective: Ditch one vice for 30 days to prove to yourself that you’re strong enough to go without.
Rules: Select a vice. Ditch it for an entire month without exceptions. If it’s hard to ditch, you’re doing it right.

Challenge 12: Tidy Up
If you listen to No Meat Athlete Radio, you’ve likely heard Matt and me talk at length about The Life-Changing Magic of Tidying Up by Marie Kondo. For us, the book was, well, life-changing.
This month’s challenge is to tidy up your life: your things, habits, and lifestyle.
If you’d like to follow Marie Kondo’s method exactly, I definitely recommend the book, but for the purposes of this challenge, let’s keep it simple:
Get rid of what doesn’t serve you.
Objective: Rid your life of the extra “stuff” that clutters your home and life.
Rules: Throughout this month, focus on one specific area of your home or life at a time, and go through it. Ask yourself, does this thing/habit/routine serve me? If not, make an intentional decision of whether or not to keep it.
It may seem hard at first, but trust me, freeing yourself from things you don’t need is addicting, and once you get going, you’ll be amazed at what you can let go.

Health, Vitality, and Courage
During the dark years that followed my diving accident, I deviated from my wholesome eating habits. This deviation was partly due to my limited control over my diet, as I lived in a hospital or a group home. It was also due to my reduced health-consciousness. Largely disgusted with life, I was proportionally hedonistic and suicidal. I sought consolation in gustatory pleasure at the risk of undermining my health. To be more precise, I often overindulged my fondness for fatty and savory foods or sweet ones, with the result that I gained weight and lost my edge-- that is, part of my vitality. This loss was ominous. It took a wealth of vitality to accept and overcome the difficulty of attaining happiness. The more I was devitalized and consequently weak, the more I was likely to be daunted by this difficulty.
Devitalization was the worst form of impoverishment. In a state of weakness, it was tempting to deny that happiness was possible or worth the effort and choose the easy option: idleness and carelessness or death. I never gave in to this morbid temptation, but my overindulgence in fatty and savory foods or sweet ones caused my vitality to lessen and my depression to worsen, thereby reinforcing my hedonistic and suicidal tendencies. I had entered a vicious circle, or rather a downward spiral that led to hell.
Fortunately, before it was too late, I became disgusted with my way of life, as opposed to life itself. I was less a victim of circumstances than a fool who brought about his own misery, on account of his negative attitude and self-destructive behavior. I began my uphill journey to wisdom and health.
Health is the basis for every human achievement, even when it is poor, in which case it provides a lot less vitality and longevity than when it is good. I pledged to do everything possible to be healthy to maximize my potential to live and love.
In fact, health is not just a matter of vitality and longevity; it is also a matter of sanity. A sound mind is a complement to a sound body. Furthermore, the one is dependent on the other. This dependence had dawned on me with dazzling clarity a few months after I had moved into my apartment and improved my diet. By then I had studied many health books. They had helped me define and meet my nutritional requirements much more wisely.
My body needed a balanced and moderate amount of carbohydrates, lipids, proteins, minerals, and vitamins to function well. Correlatively, the foods containing these nutrients had to be properly chewed to aid digestion and absorption (this did not apply to fiber: a type of carbohydrate that the body can neither digest nor absorb). Proper chewing reduces foods to mush and proportionally increases the effect of the digestive juices on them or the availability of the nutrients that are ready for absorption. I thoroughly performed this simple chore, at the center of life.

To start with, carbohydrates are simple or complex sugars that I generally obtained from fruit, honey, milk products, beets, rutabagas, potatoes, legumes (beans, lentils, or peas), nuts, seeds, whole grains, and the bread, cereal, or pasta made from these grains. Simple sugars and digestible complex sugars serve as an energy source and participate in the synthesis of DNA and RNA molecules: the genetic information and the genetic messengers that enable the organism to regenerate and reproduce.
Indigestible complex sugars, better known as dietary fiber, are capable of promoting the elimination of waste through the intestine. Refined foods are depleted of this fiber, without which constipation is a predictable outcome that bodes ill. Except on festive occasions, I resolutely avoided them.
Lipids include two main subdivisions: saturated, monounsaturated, or polyunsaturated fats (with a phosphoric component in some of them-- i.e., in phospholipids versus triglycerides that are pure fats) and cholesterol, which is a singular fatty compound. Like simple sugars and digestible complex sugars, saturated fats and monounsaturated fats serve as an energy source. In addition, they contribute to the integrity of the body tissues. Polyunsaturated fats and cholesterol also contribute to this integrity and are used for a variety of vital functions involving the cardiovascular, digestive, endocrine, and immune systems.
A distinctive feature of polyunsaturated fats is their instability. When exposed to heat, light, or air, such as in processing, intense cooking, or prolonged everyday use, they can suffer damage and become harmful. In view of this fact, I was careful to eat the foods that contained them-- for example, walnuts and seeds, and the oil extracted from either-- in their most natural (unprocessed and if possible uncooked) form and fresh (unspoiled) state. When cooking was necessary, as in the case of fish or tofu, which numbered among these foods, I resorted to steaming or baking in preference to frying and proceeded with caution, while avoiding the pitfall of undercooking. I applied the same basic principles to the foods that contained monounsaturated fats, like peanuts, almonds, olives, and avocado, and the oil extracted from any of them, though these fats are less unstable than their polyunsaturated counterparts. As for cholesterol, found exclusively in animal products, and saturated fats, found mostly in land animal products, they have a reputation for causing arterial blockage and organ dysfunction if consumed without restraint. I limited my intake of them by following a largely vegetarian diet where animal flesh was the exception, not the rule. Actually, I exercised restraint in my consumption of polyunsaturated fats and monounsaturated fats as well. The opposite, like any lack of moderation, is a health hazard.
Now for proteins. They are various macromolecules that comprise a large number of amino acids (nitrogenous molecules that occur in twenty-two different forms). In the course of digestion, these macromolecules are broken down into these molecular components, which act thereafter as raw material or building blocks to produce new molecules or new macromolecules (polypeptides, smaller than proteins, or proteins) that suit our physiological needs in many areas: the metabolism, the blood, the mucous membranes, the skin and the tendons, the muscles, plus the endocrine, immune, and nervous systems. These molecular components act so if the body has enough carbohydrates and fats to satisfy its energy requirements. Otherwise, they are stripped of their nitrogenous part and mobilized into satisfying these requirements. This constitutes a waste of precious amino acids and a burden to the kidneys, in charge of eliminating the free nitrogenous part after the liver has transformed it into urea. As it happened, my main sources of protein-- namely, legumes, nuts, whole grains, and the bread, cereal, or pasta made from these grains, together with milk products and eggs-- were also rich in carbohydrates or fats. Here the fats that mattered were saturated or monounsaturated, whereas the polyunsaturated ones were not a favorable means of satisfying my energy requirements, given the many other important roles they played.
Lastly, minerals and vitamins are a group of some thirty substances that complement carbohydrates, lipids, and proteins. A deficiency in one of them can hamper a bodily function and jeopardize in so doing the health of an individual. Collectively, as precursors or components of useful agents, or as useful agents themselves, they assist in numerous processes: vision, nerve impulses and neurotransmission, muscle contraction, digestion and absorption, regulation of blood sugar and of the metabolic rate, respiration, energy production, regeneration and reproduction, formation and maintenance of bones and teeth, coagulation, protection against free radicals (noxious atoms or molecules), and immunity. My usual sources of carbohydrates, lipids, and protein already supplied me with minerals and vitamins, all the more since they were unrefined. Refining is a terrible refinement that depletes fibers and nutrients in foods. Nevertheless, to make sure I got enough minerals and vitamins, I rounded off these usual sources with additional vegetables: carrots, radishes, cauliflower, red cabbage, green vegetables, leafy or non-leafy, garlic, and onions. I could sleep three hours, rest another two hours, and go about my business for the remaining nineteen hours. In conjunction with this rise, my morale was unusually high. Circumstances alone could not account for this boost. My relationship with my girlfriend (an extremely kind and gentle, and rather pretty nurse) was in the doldrums and on the brink of termination. My new apartment, on the other hand, was a significant improvement; but what changed for the better during the few months in question was primarily the condition of my body, which impacted my state of mind. I was vibrant with health, notwithstanding I still experienced bladder problems that somewhat weakened me on occasion. This health was both physical and mental. I had a vigorous and joyous sense of purpose that kept me going and especially writing.
In the effort to be healthy, a reasonable diet is not everything. Fresh air and regular exercise ought to form part of this effort. There are two types of exercise; both require stretching, before and after, plus warmup and cooldown periods, to avoid injuries.
The first type of exercise is anaerobic, not dependent on the intake of oxygen. An example of anaerobic exercise is weightlifting. Done frequently, in vigorous workouts, it strengthens muscles and bones. The second and most beneficial type of exercise is aerobic, dependent on the intake of oxygen. An example of aerobic exercise is jogging. Done every day or a few times a week, for at least fifteen minutes (enough to markedly and sustainedly increase the activity of the respiratory and cardiovascular systems, responsible for delivering oxygen to the body tissues), it yields numerous health benefits. Veganism
Evergreen Organics Restaurant is the only fully vegan restaurant in the Middle East. It is located in the Pearl-Qatar. I was asked to interview someone that has the same theme as my blog. I chose to interview a chief at this restaurant and learn about the story behind this unique place. It was hard to find the location at first however, when I found the place the interview went better than expected. The people working there were all helpful, wanted to find out more about my blog and wanted to spend as much time as they can to help me.
What I learnt from this experience is that becoming vegan could change a persons life completely health wise. If I were to do this again I would go alone while doing the interview.

Many! Many! Many! By eating vegetable, grains and nuts you can easily get all the daily nutrients and minerals a human being needs without consuming animal protein. When Nascimento became a vegan for the 1st time she found it healing, her energy levels went up tremendously and she had no more mood swings. Before becoming a vegan Nascimento had arthritis for 10 years taking strong medication which is a long time, she was constantly tired and had no energy. She then decided to become vegan to see if it would help. In 6 months she was cured, she had no more pain and was more alive than ever. And most importantly, she was healthier than ever. No nutrients missing, no vitamins missing. She felt perfect.
8. Is your restaurant as successful as you thought it would be?
It is more successful than anyone imaged it would be. It was supposed to be a café, but since day 1 it turned into a restaurant by itself.
9. Why did you choose this particular type of restaurant?
Nascimento chose this restaurant because a healthy living is what she chose for her life, and it’s what her body asked for. Therefore, as she wanted to continue her career as a chief, she had to join her daily life and her job together, and that’s how she chose to work in a vegan restaurant.
10. How do you make recipes that make people want to eat vegan?
Nascimento tries to make recipes that she would love to eat at home. She always asks her family and friends what their favourite dishes are, and she would base herself on them and brainstorm on how she could transform them into a vegan dish, using all sorts of spices and flavors that would satisfy their palate. Also, always trying to make the dish as UMAMI as possible, so that all your taste buds are on track and happy.
(UMAMI is the taste that has been described as rounded, rich and savory.)
11. How do you come up with these recipes?
It varies. Most of the time it’s when Nascimento is craving something in specific; she always tries to re-create it in the healthiest way possible, but still going for the flavors she wants. Also, she does a lot of research, she reads a lot and it gives her plenty of imagination specially when it comes to vegetables. One more very good way to get her going with recipes is wastage. There is always something hanging around, never being used, or when you have leftover from a recipe and it would go to waste, that’s when she starts thinking what could be used. For example, in their burger they use pulp that is taken out of one of their juices.

• The burger itself is made out of the pulp of one of their juices, which would normally go to waste, instead they combine it with grains such as lentils etc., vegetables and spices and turn it into a burger patty.
• The fries that comes with the burger are sweet potato which are roasted with different kinds of spices to increase flavors.
• The ketchup is made mostly out of beetroot trimmings and goji berries. Beetroot trimming would usually be put to waste too, in this case they cook them together with goji berries (which are packed with vitamin C, fiber, iron and anti oxidants) and spices, making their ketchup a healthy choice that gives you nutrients that you wouldn’t get from eating a normal ketchup
13. How is your restaurant different than all the other vegan restaurants all over the world?
There are many good vegan restaurants in the world. However, to Nascimento, what makes Evergreen Organics the most amazing and most special of all vegan places that she has been to is, the consciousness of her team. Not only because the staff is amazing, but most importantly because they are all keen to learn about veganism and about wellbeing. When they arrived, none of them were vegan. None of them knew what veganism was about, and now, they are the ones explaining the meaning of veganism. They are aware of the importance of eating healthy to the human body and to the planet. They are always pushing themselves to the maximum to pay attention to everything that’s going on around them, treating every aspect of their work with love and care, from the food they cook to watering the plants in each table.

16. Why did you choose vegan and not vegetarian?
Nascimento chose veganism instead of vegetarian because at first, her decision was based on her health issues and she believed that she had to cut all animal products from her diet. It helped, a lot. She was cured. After all this time, she encountered many things in her daily life routine and she would still happily chose veganism over vegetarianism. One of the big reasons for it is because the meat we eat today, is not the meat we used to eat 20 years ago, it’s full of chemicals and anger. The eggs we eat today are also not the eggs we used to eat 20 years ago, it’s again, full of chemicals. And so the list goes on, with the cheese, with fish etc.
This is something caused by us humans, who were ambitious enough not to care for our planet and the well being of our animal kingdom. And now, the only ones capable of fixing what was destroyed, or at least minimizing and even stopping further damage in the long run, is us Humans.
Becoming vegan is certainly not only about what we eat, it is mostly about awareness’s of what’s going on around us. It’s about why we are we eating what we are eating. How it affects our body, how it affects the plant, the animals. It is also about changing our priorities and accepting this change.

It is not a vegetable or no carb diet. It’s a LIFESTYLE, a way of living. A way of giving yourself healthier options throughout your life. Nascimento would also suggest reading about it, reading about our planet, our animals, our biodiversity. Understanding what is going on with your body, your mind and our planet is the 1st step to veganism.

A week in the life of a garden blogger
What does a garden blogger do?
Or, indeed, what does any blogger do?
And, most importantly, does blogging make money? If so, how?
The world wakes up in February, after the hungover sleep of January. In the garden, the first snowdrops and hellebores are up.
And in the blogosphere, companies start reaching out to bloggers.
When I started the Middlesized Garden blog, I promised to be honest about the ups and downs. I said I would reveal what goes on behind the scenes.
So I thought a diary of this week would be one of the best ways of showing you how the business of blogging works.
Sunday – snowdrops day + editing
The Middlesized Garden comes out first thing on Sunday morning. So when I wake up, I check it on a mobile phone or tablet in order to spot any mistakes.
Then I publicise the new post. I use Twitter, Facebook, Pinterest, Instagram, and (sort of) Google+. It saves time to use Hootsuite to schedule tweets.
If you only tweet your post once, most people will miss it. You have a better chance of getting it seen if you tweet it around a dozen times, on different days and different times.
So rather than manually tweeting it every time, I use Hootsuite to schedule tweets about posts.
Last Sunday I went to Copton Ash’s snowdrop open day. Copton Ash’s owner, Tim Ingram, talked to me about growing snowdrops.
I turned this into a video for The Middlesized Garden YouTube channel. This, too, has to go on Twitter, Facebook Instagram etc.
I use a Sony Xperia X phone to video. The EE shop recommended Sony phones for the best photo and video because Sony are also camera manufacturers.

Monday – book review, emails and catching up.
I received a review copy of Good Soil from the publishers, Frances Lincoln.
As soon as I opened it, I was hooked. Would it be very shallow of me to say that I am only likely to read about something as worthy as soil if it’s written about in a very beautiful book?
Good Soil – manure, compost and nourishment for your garden, by Tina Raman has the design and photography you’d expect in a book on Californian smoothies or Danish hygge.
It has beautiful photographs, accompanied by really solid information. You will find interesting tips boxes and excellent advice.
For example, there’s a box on which wild flowers and weeds do best on which soils. And did you know that cow manure is the best manure for fertiliser?
A spread from Good Soil – a serious book that’s also a pleasure to look at.
As the intro says: ‘We hobby gardeners often go all out on the plants and decorations, completely forgetting how important it is to build up a good nutrient-rich soil.’ Well, no more.
Apparently, this book is already a best-seller in Scandinavia and Germany.
Note: bloggers are supposed to state clearly when something has been sent free for review. Like most bloggers, I only review books and products I really like. There is absolutely no point in saying you think something is good if you don’t. That’s why I, along with most other blogs, can’t guarantee a review when a product is sent for free.
Now for the emails
I deal with around 100 emails a day, often from people wanting to ‘guest post’ on The Middlesized Garden. Some are charming, and say lovely things about the blog.
Others are misspelt and vague.
And some offer money. People and companies want to ‘guest post’ because it gives them links to a reputable site. When search engines see these links, this raises a company in the search engine rankings.
So Google have made it clear. If you are paid to link to a company, you should firstly state that it is ‘sponsored’ or ‘collaborative’.
Secondly, you should make the link ‘no-follow’. This means people can click through to the company from your blog, but there’s a piece of code in the link. Google then knows not to recognise it as a ranking signal.
So that is one way bloggers make money. Charging for guest posts on their site.
But many companies do insist on a ‘follow link’. And a few don’t even want the words ‘sponsored’ or ‘collaborative’ on the post. Some bloggers agree to that.
Why ‘disclosure’ matters
If you don’t follow the rules, then both the blog and the company that paid for a ‘follow’ link could be marked down massively by Google. You may disappear from sight. It’s not worth the risk.
It’s also illegal to mislead readers. There’s more about ‘disclosure’ here:
And I believe it’s important to be honest. If you have been paid to write something, that’s fine, in my view. It’s just wrong if you pretend you haven’t been paid.
The Middlesized Garden only does a few sponsored posts. We only do them if I feel sure that the product is good, and that the sponsor is happy to stick to the rules.
I also read about a dozen other blogs a day. Some are gardening, homes and lifestyle blogs.
That’s why I know that a few bloggers are accepting money for paid posts, and not disclosing they’ve been paid. The same companies approached me.
Interestingly, however, some companies are increasingly emphatic that the guidelines must be followed. Wayfair works with a number of bloggers and insists that all links ‘must be no-follow’ and that posts must be marked ‘sponsored.’

On Tuesday, BBC Radio 4 Gardeners’ Question Time recorded at the Alexander Centre, Faversham.
By coincidence, I handle the social media for the Alexander Centre. Blogging or handling the social media for other companies is another way bloggers earn a living.

We did the video interview in the back garden. I don’t have a tripod for my phone, so we propped it up on a table, step-ladder and two copies of Nigel Slater’s Tender.
My makeshift ‘tripod’. The cost of blogging equipment adds up quickly, so a proper tripod will have to wait. I managed to do a quick ‘poo-pick’ of the garden before she arrived, but we sat amid piles of pruned branches.
We then went to the Alexander Centre, where I interviewed the BBCGQT producer, Dan. He told me that Gardeners Question Time will record anywhere from a big city centre to a small village hall.
‘We try to vary where we go, week by week,’ he said. He revealed that the programme has never been to the Orkneys, so if there is an Orkney Horticultural Society reading this – invite BBCGQT now! Dan says he’d love to go.

I use a Zoom Handy Recorder for interviews. The microphone on a mobile phone is never as good as the camera. A proper recorder or microphone makes the sound much better.
Wednesday – People’s Friend and photo/film editing
Twenty years ago, my journalistic work came mainly through magazines I’d worked for in the past. Now it’s more likely to come through editors reading the blog.
People’s Friend magazine has asked me to do fortnightly gardening pages for a couple of months. I’ve been gathering info for this during the week, and put it together on Wednesday.
A blog keeps your name out there, and anyone wanting to use your services will have a good idea of what you do. It’s a calling card, plus portfolio.
Whether you’re a writer or a specialist in cheese-making, cake baking or crochet, a blog can help you be better known in your field.
Beware of the time sink…
But – and it’s a big but – blogging takes time. If, for example, your work is very local, you’d be better off spending that time networking rather than blogging.
If you’re a florist who wants more weddings, then it’s probably better to spend the time at wedding fairs or at local events. If you’re a florist who wants a book deal, then blogging is an effective way forward.
I’ve seen several book review bloggers go on to get book deals, and then become novelists in their own right. The book review blogs got them known in the publishing industry. Their writing talent got them the deals.
Photography, video and editing takes time
I probably spend an hour or two each day taking photographs, editing them, then sharing them on social media or creating videos.
This includes making YouTube thumbnails and Pinterest images, using Canva. I’m not a trained designer – far from it – but images are vital both for the blog and social media.

Having worked with some brilliant ‘proper’ photographers, I know the difference between their work and mine. I have a lot to learn.
But some bloggers’ photography is good enough to sell. One friend has signed up to the Getty Images photo agency. Most months he only gets about £20. Occasionally, however, someone buys a chunk of his photos for a book or catalogue. Several hundred pounds (or more) come in.
If you blog in a visual industry, such as gardens, homes, art etc, then syndicating your photos is another option. Garden bloggers Harriet Rycroft and Andrew O’Brien – you should give it a go, if you don’t already!
Thursday – the Garden Press Event
I went up to London to The Garden Press Event in the Barbican.
This is where garden companies introduce their new products to the media.
The first person I saw was Charles Dowding. When I explained that the Middlesized Garden was for people whose gardens were larger than courtyard but smaller than an acre, he said ‘Like mine.’

I was impressed to find out that Charles has achieved so much in the world of veg with just quarter of an acre of veg growing space. The total area of the plot is only three-quarters of an acre.
‘Some of that is house,’ he says. ‘And I keep the rest fairly wild.’ Charles has written several books. The most recent is Charles Dowding’s Vegetable Garden Diary from www.charlesdowding.co.uk.
The book starts on February 14th, because that’s when Charles starts planting seeds. And it gives you week by week ‘no dig’ veg planting and harvesting advice.
Gardening equipment is now easier to use
I’ll review other products I saw at the Garden Press Event in a few weeks. But the headline message is that tools are getting lighter, brighter and easier to use.
Wilkinson Sword has some super-lightweight tools. Burgon & Ball has luminous-bright tools that can even be seen in the dark.

And Cobra have a lithium-ion lawn-mower which means you can mow a middle-sized lawn with a battery-powered mower. It’ll do 40-50 minutes before you need to recharge it.
For the purposes of full disclosure, I must also reveal that Cobra had some delicious cup cakes on their stand. I’m not sure where Google stands on cake bribery.
The Garden Press Event is also an opportunity to catch up with people you normally only ‘see’ on Twitter or Instagram. Mr Plant Geek, Michael Perry and I had a quick catch-up, and I also met a fellow garden blogger, The Chatty Gardener.
Friday – coaching, writing and catching up
Coaching writers or bloggers is another strand of work that comes via the blog.
People get in touch because they’re thinking of starting a blog.
Sometimes people want a ‘blog clinic.’ Their blogs may already be successful, with a good following. But they have a sneaking feeling that they may be missing a trick or two.
Or they just want another eye on their work. When there’s only you, it’s easy to overlook something.
They’re not necessarily garden bloggers. Coachees have included Emma Varnam, who has a very successful and beautiful crochet blog. Rachael Hale’s lovely Home & History Magpie focuses on historic homes.
Whether you’re a primary school teacher or a pianist, you can publicise your coaching and teaching via a blog.
But the ‘local’ issue crops up again. If you want to coach eleven year olds to pass exams, you’d be better off spending the time getting involved with local schools.
However, I can coach or teach by Skype, so I’m not limited to local activity. Many bloggers also run excellent online courses (for example, Jen Stanbrook’s Pinterest tips courses.)
I’m trying to pluck up courage to start one myself.
Saturday – writing and photographing the next post
There hasn’t been alot of time for writing (or gardening!) this week. So at 9.30am, I went to a friend’s house to photograph next week’s post.
You can read about that next week, so now is probably a good time to mention affiliate sales.
What are affiliate sales?
If you are, for example, an Amazon Affiliate, then you can sell products via Amazon from your blog. You sign up, then you get special links to insert in your posts.
If someone clicks on the link and buys within 24 hours (without visiting another site), you would get a small percentage. Typically, this is 3%, but it ranges from 1%-10%.
It doesn’t affect the price the buyer pays.
The affiliate fee on books is 7%, so if you click through to buy the Gardener’s Companion to Medicinal Plants after my review, I would probably earn 94 pence. That’s only if you buy while clicking through my link. If you leave the site, but then return to buy the book, I wouldn’t earn anything.
However, if you buy other things, having clicked through via my site, I’d also get a small percentage on those.
As you can imagine, it takes a while for pence to add up. To date, in February, I have earned £33 via Amazon Affiliates.
Only recommend products you personally rate
And it is important to recommend products in your blog that you would recommend to a friend. People won’t be impressed if you just stuff your site full of links.
I only recommend either products I’ve tried myself, or those which have an exceptionally high number of positive reviews. It can take a while to hunt the latter down.
Often the products I recommend are ones I’ve bought, such as the Zoom Handy Recorder or Sony Xperia X phone that I mentioned earlier.
What about advertising?
You need hundreds of thousands of page views a month to make money from internet advertising. Fashion, beauty, travel, food, parenting and personal finance blogs can get that many, but a garden blogger is operating in a smaller industry.
I also find that internet advertising interrupts my reading. And if I don’t like it, then you probably don’t like it either. So, as a garden blogger, I don’t personally think it’s worth taking advertising.
