Roasted leg of Goat/Lamb (Raan)
Ingredients
1. Lamb/Goat Leg - approx 5lbs
Marination:
2. Yogurt - 1 cup
3. Lemon Juice - 1/2 cup
4. Papaya/meat tenderizer - 2 tbl
5. Ginger garlic paste - 2 tbl
6. Fried onions - 1/2 cup
7. Kashmiri chili - 1 tbl
8. Red chili - 1 tbl
9. Chaat masala - 1 tbl
10. Garam masala - 1 tbl
11. Coriander powder- 1 tbl
12. Cumin powder - 1 tbl
13. Black pepper - 2 tsp
14. Salt - 2 tbl
15. Oil - 6 tbl
Filling (put in cuts when roasting):
16. Chopped garlic - 1/4 cup
17. Lemon zest - 2 tsp
18. Mixed herbs rosemary, thyme, oregano - 1/2 cup
19. Salt - 1 tsp
20. Olive oil - 3 tbl
Veggies (add when roasting):
21. Rosemary - 20 sprigs
22. Garlic cloves - 20
23. Whole garlic w 1/4 inch cut off the top - 2
24. Baby potatoes - 8 (rub oil and salt on them)
25. Lemon slices - 2 lemons
Method
1. Make several long cuts 1 inch deep
2. Combine all the marination ingredients in a mixture and rub on the lambs. Fill the cuts
3. Sling wrap leg and put tightly in a bag.
4. Leave in refrigerator for 24 hours
5. Combine all filling ingredients in a chopper and grind well
6. Take out leg for roasting and insert filling in the cuts.
7. Heat roaster on stove top
8. Put a little oil in roaster and roast leg till brown (for 5 mins per side)
9. Put rosemary at the bottom of roast.
10. Put leg over with fat side facing up.
11. Arrange all veggies around except potatoes. Make sure to insert some rosemary sprigs in cuts
12. Roast at 375 F for 45 mins
13. Flip leg and roast for 30 mins
14. Add potatoes, Flip leg and roast again 30 mins
15. Flip leg and cover with foil and roast 30 mins
16. Now you can repeat 30 mins with or without foil as needed till desired.
17. When raan done, take it out in a dish along with lemons, potato and garlic heads.
18. scrap the brown bits for roaster in a pot with liquid. Cook and blend to make sauce.

The all essential Sunday or anyday roast!

We don’t have an oven and only have a very small camp oven but we do have a nifty double sided pan which acts as a brilliant substitute.

It cooks much quicker than a conventional or camp oven but one potential small drawback is that it is limited in height so no legs of lamb with bone in and probably not more than 1 kg of meat. Boy have we had some delicious meals out of this little beauty.

Succulent rump with roasted onions potatoes. Pork ribs with roasted beetroot and onion. Chicken in Greek-flavoured marinade. And this delicious roast lamb - thanks Robert; recipe adapted from NYT.
Sabut Raan (roast leg of lamb)
The spices are key in this dish BUT if you’re on the road you could substitute with whatever you have and it would still be delicious but perhaps taste slightly different (I try to pack enough but .... lack of space necessitates clever substitution).
Ingredients
1 Tbsp poppy seeds 
1 tsp coriander seeds
10 cloves
15 black peppercorns
1 cinnamon stick
2 cardamom pods
1 bay leaf
6 garlic cloves
6 cm fresh ginger
1-2 tsp salt
250 ml (1 cup) yogurt
1 leg of lamb 1-2kg
1 large onion, chopped
4 Tbsp butter
Method
Toast first seven spices in dry pan until they release their aromas. Use spice grinder or mortar and pestle to process into a rough powder. Add garlic, ginger, and salt and grind into a paste. Mix with yogurt. 
Prick deep holes all over the lamb or make gashes with a knife. Rub marinade all over the meat, and transfer to a pan. Refrigerate for at least 2 hours or overnight. 
Heat oven to 180C. In a saucepan heat butter and sauté chopped onion until light golden. Set aside. 
Add 1 cup water to a roasting pan with the lamb. Cover with foil and bake for 45 minutes. Gently flip the lamb over and bake another 45 minutes. Flip again. Pour onion/butter mixture over the lamb and roast uncovered for about 1 more hour until meat is tender, cooked through, and lightly browned on the surface. If the pan starts to get dry at any time, add 1/2 cup water to it. Garnish with thinly sliced lemon and coriander. 
Chook’s note: I use up to 1 kg boned lamb so all the other ingredients are reduced accordingly. Because my pan closes tightly, I don’t cover with foil and cook for about 1/3 of the above time.

Raan roast (leg roast) Eid Mubarak to all of you. As,all of you will be busy in Eid and hosting dinners for each other. Here’s a small gift 🎁 for all people in form of leg roast recipe Ingredients: - cashew nuts 1/4 cup - almond 1/4 cup - water 1/4 cup or as required - green chillies 10-12 - yogurt strained 1 cup - black pepper powder 1/2 tbsp - salt to taste - turmeric powder 1/2 tsp - red chilli powder 1 1/2 tsp or to taste - meat tenderizer 1 1/2 tbsp - ginger garlic paste 3tbsp - Mutton 1 1/2 kg Directions: - In spice mixer add cashew nuts, almonds and grind well. - Add water and grind to make a paste and set aside. - In spice mixer add green chillies, water , grind well and set aside. - In a bowl add yogurt, black pepper powder, turmeric powder, salt, red chilli powder, meat tenderizer, green chillies paste almonds + cashew nuts paste whisk well and set aside - Wash and pat dry mutton leg - Prick and add marks/cuts on mutton leg. - Now add prepared marination, rub evenly and let it marinate for overnight in refrigerator (reserve 1/2 cup marination for later use). - On baking tray place aluminium foil and butter pepper, place marinated mutton leg with marinade and seal the foil properly. - Bake in preheated oven at 180’ C for 1 hr 15 mints then grill (uncovered) in preheated oven at 180 C for 20 mints each side.
