"Hock burn" is caused by ammonia from excrement. A sign of poorer welfare on farms, it can be seen on a third of birds in some supermarkets, data shows.
The BBC asked the 10 biggest UK chains about its presence on their shelves. Co-op and Aldi reported the highest rates but five (Asda, Morrisons, Lidl, Iceland and Ocado) refused to release data.
Hock burn is often associated with a high-stocking density of birds and is a result of prolonged contact to moist, dirty litter. It shows up on packaged and prepared meat as brown ulcers on the back of the leg.
Chicken with hock burn markings is still safe to eat. But the amount of hock burn within a poultry flock is an industry-accepted indicator of wider welfare standards on farms.
Red Tractor, the UK's biggest farm and food assurance scheme, sets a target rate for hock burn of no more than 15% of a flock.

“The Great Depression reached into every corner of the country, but it did not affect all people equally. For many middle-class women of all races, the depression required certain changes in spending patterns: buying cheaper cuts of meat, feeding the homeless men who stopped at the back door, and doing without new clothes. Some of these women continued to do community volunteer work, raising money for the unemployed. They saw the food lines, but they did not have to join them.
Among women workers, race played an important role. The fierce competition for jobs fueled racial resentments. Mexican-American and African-American women were the first to lose their jobs and the last to get relief from welfare agencies. Often, they were already living on the margin of survival. Before 1933, when the Prohibition amendment making the manufacture or sale of alcoholic beverages illegal was repealed, many of these women turned to bootlegging, making their own beer or liquor and selling it.
…Even relatively prosperous farm women--owners, not tenants--in general produced as much as 70 percent of what their families consumed in clothing, toys, and food. They not only gardened but raised poultry. During the depression, women increased the size of their gardens and the number of their hens. They made more butter from their dairy cows and sold it. They cut up the sacks that held large amounts of flour and sewed them into underwear. In the previous decade, they had proudly begun to participate in a culture of store-bought goods. Now they began to can food again. Government agents dragged huge canning kettles across the mountains of northern New Mexico and eastern Tennessee so that women in remote farming villages could preserve their food.
Even with all this work, rural children suffered from malnutrition, and rural women faced childbirth without a doctor or midwife because they could afford neither the medical fees nor the gasoline for transportation. The women resented their declining standards of living, particularly those from better-off farm families who owned their own farms and had, during the 1920s, aspired to participate in the new domestic technology of indoor bath-rooms, modern stoves and heating, and super cleanliness.
…In 1936, a federal appeals court overruled an earlier law that had classified birth control information as obscene and thus illegal to dispense. That decision still left state laws intact, however. The number of birth control clinics nationwide rose from 55 in 1930 to 300 by 1938, but in some states and in many rural areas women still had no access to birth control. In 1937, North Carolina became the first state to provide contraceptives with tax dollar, and six others soon followed. Ironically, North Carolina’s reasoning was not that birth control was a human right but that birth control would reduce the black population.
Despite statistics showing that black women had fewer babies than white women with similar incomes and living situations, many white southern officials in states with large black populations feared a black population explosion. In 1939, the Birth Control Federation of American responded to eager southern state governments by developing “The Negro Project,” a program to disseminate birth control information, which they carefully staffed with local black community leaders. Whatever the logic, one quarter of all women in the United States in their 20s during the depression never bore children. This was the highest rate of childlessness for any decade. Many people simply decided not to get married, and marriage rates fell.
…In the mass media women seemed to be receiving mixed messages. On the one hand, in 1930, the Ladies’ Home Journal featured a former career woman confessing, “I know now without any hesitation… that [my husband’s job] must come first.” In 1931, the popular magazine Outlook and Independent quoted the dean of Barnard College, a women’s college in New York City, telling her students that “perhaps the greatest service that you can render to the community… is to have the courage to refuse to work for gain.” And on its front page in 1935, the New York Times reported that women “suffering from masculine psychological states” and an “aversion to marriage” were being “cured” by the removal of their adrenal gland. In this atmosphere, not only were women workers under fire, but women who centered their lives on women rather than on men came under attack. Lesbianism was no longer chic. Lesbian bars almost disappeared. Homosexuality was now seen by many people as just one more threat to the family.
On the other hand, movie houses showed zany screwball comedies with more complicated lessons. Often deliciously ditsy, incompetent women were rescued by sensible, capable men. Yet, the men in these movies were frequently portrayed as bumbling or slower-witted than the women. Sometimes the men were people who needed joy and whimsy restored to their lives, not an unexpected theme for a nation in the throes of an economic depression. In other movies, however, women were by no means incompetent. The women portrayed by Katharine Hepburn, Bette Davis, and Joan Crawford in the 1930s were often intelligent but needed men alternately to tame and to soften them.”

Avian flu is wreaking havoc in poultry farms and dairy cattle -- and public health experts are worried that the virus could mutate to spread among humans.1,2
Left unchecked, avian flu could result in the next deadly human pandemic. In order to prevent a public health catastrophe and reduce the impact on humans and animals, we need to take much more aggressive action.
Take action to help keep bird flu under control before it begins to pose a bigger threat to our health.
How can we reduce the risk of avian flu making the leap to humans and fueling another pandemic?
We're urging the Department of Health and Human Services (HHS) and the U.S. Department of Agriculture (USDA) to increase testing and monitoring, develop a vaccination program, and take prudent measures to protect the health of people working directly with impacted animals.
The first case of H5N1 bird flu in humans this year was confirmed in April. By November, the total number of confirmed human cases had grown to at least 52.3
Now is our chance to get this under control before it gets any worse -- but we need our public health agencies to take the right steps to make it possible.

These straightforward steps could make a huge difference for our health.
First, USDA and HHS should increase surveillance for bird flu in all food-producing animals. We can better track and control this disease if we have reliable data about where it is appearing and spreading in our food system. New federal rules requiring milk to be tested for bird flu on dairy farms are a great first step, but more testing and monitoring are needed.4
The agencies should also provide protective equipment and vaccines to workers who work directly with impacted animals. This will help form a shield that could stop the virus from making the leap to humans.
Developing and implementing a vaccination program for food-producing animals will also be an important way to control the spread of H5N1 bird flu.
And of course, supporting local pasture-based farms with high standards for animal welfare will make our entire food system healthier. Animals kept in clean, healthy environments are less likely to pass disease among each other, or to farm workers.

Veganism is a way of living which seeks to exclude, as far as is possible, all forms of exploitation of, and cruelty to, animals for food, clothing or any other purpose.
As such, not only does it mean not consuming any and all animal products, it also means staying away from all products derived wholly or partly from other animals - including not wearing leather, feather, fur, wool and silk and not using products that have been tested on animals.
Animal products include meat, poultry and seafood, eggs, dairy products, honey and beeswax, fur, leather, wool, silk, goose down and duck feathers.
They also include lesser known products such as bone char, bone china, carmine, casein, cochineal, gelatin, isinglass, lanolin, lard, rennet, shellac, tallow, whey and yellow grease.
Unfortunately, most medicines have been tested on animals due to regulatory requirements, and it may be hard to avoid them or find alternatives for some medical treatments.

A look at the sheer numbers of other animals raised, caught and killed for food, and the suffering endured by them, reveals the need to consider the cruelty surrounding farmed animals seriously and to focus on a cruelty-free plant-based lifestyle. About 60 billion land animals and over a trillion marine animals are used and killed as commodities to satisfy human taste buds.
Non-human animals are living beings seeking life and freedom, and avoiding harm and danger. In every livestock system’, no matter how high the welfare standards are supposed to be, non-human animals suffer.
Ultimately, humans take away life to satisfy their appetites. Other animals do not “give up their lives” as some believe– it is taken from them in the cruelest of ways.

1. Nearly All U.S. Turkeys Are Raised on Factory Farms
Each year, more than 200 million turkeys are slaughtered for food in the U.S. [over 46 million of those solely for the holidays] — and over 99 percent of U.S. turkeys are raised on industrial farms and kept in severely crowded and unsanitary conditions. They are given little or no care and denied the chance to engage in many natural behaviors, like nesting, rooting in the grass for food, or perching. Sheds are filled with ammonia and animal waste, which is harmful to both birds and human workers and puts both at risk for respiratory conditions.
2. Turkeys Are Bred for Painful Rapid Growth
Factory-farmed turkeys are selectively bred to grow to an unnatural size quickly, reaching market weight in just four months. By that age, today’s factory-farmed males are roughly triple the weight of adult wild male turkeys. This breeding for maximal production and profit leaves many birds suffering from deformities and heart conditions and too large to fly, roost, or mate naturally. Burdened by their body weight, some cannot stand or reach their water and food.
3. Turkeys Are Subjected to Painful Mutilations
Many consumers may be shocked that some excruciating procedures are considered standard practice in the poultry industry. Turkeys and chickens alike are routinely detoed (the tips of their toes are severed) and “debeaked” (the tips of their beaks are burned or cut off) — all with no form of pain relief. This is an attempt to prevent injuries caused by the stress of extreme crowding, caused by factory farming itself. While the American Veterinary Medical Association has not condemned debeaking, it has acknowledged that “acute and chronic pain are associated with this procedure.”
4. Birds Are Excluded From the Humane Methods of Slaughter Act
While other land animals — including pigs, cows, and sheep — are offered basic protections under the Humane Methods of Slaughter Act, birds (including turkeys, chickens, ducks, and geese) are excluded. This leaves the treatment of these birds at slaughter largely up to meat and egg producers, who most often put profit above animal welfare. While turkeys and chickens are lowered into electrified water in an attempt to stun them, this often fails, leaving many birds conscious when their throats are cut.
5. Animal Agriculture Is a Major Driver of Our Climate Crisis
Many factors affect human-induced climate change, but farming billions of animals yearly is widely considered a leading driver of our environmental crisis. Animal agriculture accounts for at least 14.5 percent of global greenhouse gas emissions. The industry also uses 80 percent of U.S. agricultural land — and according to the University of Minnesota, the U.S. could feed almost three times more people by providing major crops directly to humans rather than livestock. One of the easiest and most effective ways an individual can do their part in helping to fight climate change is by choosing a plant-based diet.
