Cameron Parish, LA 5/06
Two photos taken a minute or so apart, standing in the middle of Louisiana route 82, between Holly Beach and Cameron, spring 2006. I was still primarily a film photographer, but I started making digital doubles with a first generation Canon Rebel. I was also still developing my film manually at a now defunct public darkroom that popped up in New Orleans in the new year after Hurricane Katrina, or sometimes at home in the bathtub. This was the first time I saw Cameron Parish, and I was mesmerized by the skies, the silence, and the solitude of the place. The Canon Rebel was pretty good for being an early digital camera; the problem was the software of the time wasn't good enough to "see" all the info in the digital files. Modern photo software is now able to see with much greater detail and subtlety, allowing a much better "print" to be rendered, as close as possible to what I remember seeing, as well as being a Louisianan long enough to know the tones of a spring morning sky here. There was a tendency in processing of early digital photography to make everything look hyper-real. Today, processing these older files with modern software allows for a more realistic and detailed look into a somewhat distant mirror.
The film used was Kodak Plus-X Pan 125 -- a film I sure do miss. Most of the negatives I made with this film and my Canon F1N just got the tones right in a way I was always happy with, using Kodak D-76 developer. The film has been discontinued for unknown reasons, and the now-standard Kodak TMax 100 looks dull to me in comparison.

Crispy rice pancakes
“Comforting chickpeas add great taste and texture in this brekkie, plus they’re high in folic acid, a B vitamin we need for psychological function, basically allowing us to think properly! ”
Tumblr media
Ingredients
½ x 7 g sachet of yeast
125 g rice flour
olive oil
1 heaped teaspoon jalfrezi curry paste
½–1 fresh red chilli
1 bunch of spring onions
½ x 660 g jar of chickpeas
100 g baby spinach
4 cm piece of ginger
2 ripe tomatoes
1 lime
2 tablespoons unsweetened desiccated coconut flakes
½ a bunch of fresh coriander , (15g)
4 large free-range eggs
4 heaped tablespoons natural yoghurt
>Get Your FREE EBOOK With Over 700 Begginner Friendly Recipes<
Method
In a bowl, whisk ½ a 7g sachet of yeast yeast into 250ml of lukewarm water, then gradually whisk in 125g of rice flour and a pinch of sea salt until smooth. Put aside.
2. Place a frying pan on a medium heat with 1 teaspoon of oil and 1 heaped teaspoon of jalfrezi curry paste.
3. Finely slice half the fresh red chilli (whether you're using ½ or 1 chilli, to your taste) and just the top green halves of 1 bunch of spring onions and add to the pan. Cook and stir for 5 minutes, then add ½ x 660g jar of chickpeas (juice and all), and 100g of baby spinach. Bring to the boil, then simmer on a low heat until needed.
4. To make the salsa, trim and finely slice the whites of the spring onions, along with the remaining chilli and place in a bowl. Peel and finely grate in a 4cm piece of ginger. Quarter and deseed 2 ripe tomatoes, then finely dice and add the flesh to the bowl. Finely grate over the zest and squeeze in the juice from 1 lime, add 2 tablespoons of unsweetened desiccated coconut flakes and the leaves from ½ a bunch of fresh coriander (15g). Mix well, then taste and season to perfection.
5. For the pancakes, place a small non-stick frying pan on a medium heat, drizzle with a little oil, then carefully wipe it around and out with a ball of kitchen paper.
6. Stirring your batter well each time, add a quarter to the pan, swiftly swirling it around and up the sides to create extra crispy bits. Cook for about 5 minutes on the underside only, until dark golden – have faith, and when it’s coloured, use a spatula to ease it away from the sides and slide it out. Repeat with the remaining batter, and just before you start the last pancake, poach 4 eggs to your liking in a large pan of simmering water.
7. Serve each pancake with a spoonful of curried chickpeas and coconut salsa, 1 heaped tablespoon of natural yoghurt, and with a poached egg sitting proudly on top.

VEGAN CHOCOLATE TART
Ingredients
For the base
350g digestive biscuits
2 tbsp cocoa powder
1 tbsp plain flour
1 tbsp golden syrup
125-175g vegan margarine or butter, plus extra for the tin
For the filling
2 x 400g cans coconut milk, chilled
200g dark chocolate
1 tbsp golden syrup
To serve (optional)
edible silver or gold glitter spray
raspberries
Method
STEP 1Heat the oven to 200C/180C fan/gas 6. Crush the biscuits to crumbs in a bowl using the end of a rolling pin or by pulsing in a food processor. Mix in the cocoa powder, flour, syrup and enough vegan margarine or butter to create a dough. Butter a 23cm loose bottom tart tin and press the mixture into the tin.
STEP 2Bake in the oven for 10-12 mins, then leave to cool in the tin.
STEP 3Meanwhile, make the filling. Open the cans of coconut milk which will have separated with the water at the top and the thick coconut at the bottom. Discard the water (or use it to make a smoothie) and tip the thick coconut into a bowl.
STEP 4Break the dark chocolate into pieces and melt in the microwave on high in 10-second bursts, stirring in between, or in a heatproof bowl set over a pan of simmering water until smooth. Add the coconut along with the golden syrup and whisk together, beating hard until there are no lumps of coconut left.
STEP 5Pour the filling over the base of the tart and put in the fridge to set for 3-4 hrs, or overnight.
STEP 6Spray the tart with edible silver or gold glitter spray, if you like, and serve with raspberries. Will keep in the fridge for three days – it actually tastes even better one or two days after baking.

APPLE CINNAMON SUGAR PULL APART BREAD
INGREDIENTS
FOR THE DOUGH
2¾ cups plus 2 tablespoons all-purpose flour, divided
 ¼ cup granulated sugar
2 1/4 teaspoons 1 envelope active dry yeast
 ½ teaspoon salt
 2 ounces unsalted butter
 ⅓ cup whole milk
 ¼ cup water
 2 eggs (at room temperature)
 1 teaspoon pure vanilla extract
FOR THE FILLING
 1 cup granulated sugar
 2 teaspoons ground cinnamon
1 large apple (peeled, cored and diced small)
 2 ounces unsalted butter (melted)
DIRECTIONS
Prepare the Dough: In a large mixing bowl, whisk together 2 cups of the flour, the sugar, yeast, and salt. Set aside.
In a small bowl, whisk together the eggs and set aside.
Place the milk and butter in a small saucepan over medium-low heat, and heat, stirring occasionally, until the butter has just melted. Remove from the heat and add the water and vanilla extract. Let mixture stand until it registers 115 to 125 degrees F on an instant read thermometer.
Pour the milk mixture into the dry ingredients and mix with a spatula. Add the eggs and stir the mixture until the eggs are incorporated into the batter. The eggs will feel soupy and it’ll seem like the dough and the eggs are never going to come together. Keep stirring. Add ¾ cup of the remaining flour and stir with the spatula for about 2 minutes. The mixture will come together but be slightly sticky.
Place the dough is a large, greased bowl. Cover with plastic wrap and a clean kitchen towel. Place in a warm space and allow to rest until doubled in size, about 1 hour. (Make Ahead! >> The dough can be risen until doubled in size, then refrigerated overnight for use in the morning. If you’re using this method, just let the dough rest on the counter for 30 minutes before following the roll-out directions below.)
Prepare the Filling: In a medium bowl, whisk together the sugar and cinnamon, then stir in the chopped apple until evenly coated. Set aside.
Grease and flour a 9 x 5-inch loaf pan.
Assemble the Bread: Deflate the risen dough and knead the remaining 2 tablespoons of flour into the dough. Cover with a clean kitchen towel and let rest for 5 minutes. On a lightly floured work surface, use a rolling pin to roll the dough into a 12 x 20-inch rectangle. Brush the melted butter across all of the dough. Spread the apple/cinnamon-sugar mixture evenly all over the dough (if there is any accumulated juices, drizzle that over the dough too).
Slice the dough (I use a pizza cutter!) into six equal-sized strips in both directions for a total of 36 squares/rectangles (they might not all be the same size/shape and that's okay). Create six stacks of six layers each. Layer the dough squares in the loaf pan cut-side up. (You can do them all in one direction or alternate them like I did.) Cover with a kitchen towel and place in a warm place for 30 to 45 minutes, or until almost doubled in size.
Bake the Bread: Preheat oven to 350 degrees F. Cover a sheet pan with foil and place on the lowest oven rack to catch any drips. Place the bread in the oven and bake for 35 to 45 minutes, until the top is very golden brown, and an instant read thermometer placed into the center of the bread reads at least 190 degrees F. (The top may be lightly browned, but the center may still be raw. A nice, dark, golden brown will ensure that the center is cooked as well.)
Remove from the oven and allow to rest for 20 to 30 minutes. Run a butter knife around the edges of the pan to loosen the bread and remove to a cutting board or serving plate. Serve warm or at room temperature. The bread is best served the day it’s made, but it can also we wrapped in plastic wrap and kept at room temperature for up to 2 days.

Sausage Pizza - Jamie Oliver
Ingredients:
150 g self-raising flour, plus extra for dusting
olive oil
2 higher-welfare Cumberland or veggie sausages
1 small red onion
1 sprig of rosemary
1 heaped tablespoon sun-dried tomato paste
100 g red seedless grapes
1 x 125 g ball of mozzarella cheese
1 tablespoon pine nuts
Directions
Preheat the oven to full whack (240ºC/500F).
Pile the flour into a bowl with a small pinch of sea salt, add 80ml of water and mix into a dough, then knead on a flour-dusted surface for 2 minutes, adding a little extra flour, if needed. Roll and stretch out into a large oval (about 15cm x 30cm), then place in a large sturdy oiled tray.
Cover with a clean damp tea towel and leave to rest while you put a small non-stick frying pan on a medium-high heat, then squeeze balls of sausage meat out of the skins into the pan (if using veggie sausages, roughly slice and use 1 tablespoon of olive oil for frying). Fry until golden all over, tossing regularly, while you peel the red onion and slice super finely, ideally on a mandolin (use the guard!).
Pick the rosemary leaves and toss with the onion, a pinch of sea salt and black pepper and 1 tablespoon of oil until well coated.
Spread the tomato paste over the dough, sprinkle over the dressed red onion, and spoon over the sausage balls.
Toss the grapes into the pan for 1 minute, then spoon over the pizza with any juices, tear over the mozzarella and sprinkle with the pine nuts.
Place the tray over a high heat on the hob until it starts to sizzle, then cook at the bottom of the oven for 10 minutes, or until golden and crisp.

Simon Riaux | 27 novembre 2020 - MAJ : 27/11/2020 14:27
Tumblr media
NO SHAME FOR FAME

Aluminum Foil Wrap - A Restaurant Owner's Complete Guide
Aluminum Foil Wrap - A Restaurant Owner's Complete Guide
Aluminum Foil Wrap Background
Almost all US foil manufacturers run their Aluminum foil UAE rolls with aluminum alloy #8011. The task begins having a massive, flat aluminum alloy slab that is progressively cut thinner and thinner until it forms the jumbo rolls that the smaller food service rolls are cut. You will find essentially two classes of foil thickness; standard duty and heavy duty, the second being more sturdy because it originated a thicker roll of foil, therefore rendering it now more expensive. The standard of foil wrap is usually driven by its thickness or heaviness, which could accurately be measured by its "gauge". The metric term with this is "micron thickness".
Aluminum Foil Thickness and Gauge
Standard (SD): In the US, an authentic standard foil is going to be 0.00065 gauge. Parsed together, that is commonly known in the marketplace as 0.0007 gauge foil. This standard foil gauge translates to at least 16 microns in depth and is also one of the most trusted gauge of commercial foil wrap today. An economy gauge foil is only 0.00055 gauge or 14 microns.
Durable (HD): A real durable foil wrap measures in at 0.00087 gauge, commonly put together to 0.001 gauge, equal to 23.5 microns. 0.001 is most favored high quality gauge inside food service industry. An economy gauge robust foil is simply 0.00082 gauge or approximately 20 microns thick.
Extra Durable (XHD): There's no stronger foil commercially ready than this, yet it's possible some manufacturers can custom come up with a thicker foil but it would cost exceptionally high. Extra robust foil comes in at 0.0015 gauge or 35 microns in depth.
Which Aluminum Foil Roll Can i Buy?
Most US foil manufacturers come up with a premium brand foil plus an economy "cheater gauge" sort of exactly the same foil. The economy version is made for distributors who'd love to keep costs down and pass on those savings for you, but don't forget you receive that which you spend on. Unless you're cheaply, it makes sense in order to avoid the economy brands. There are numerous causes of this, the initial since they're not really as effective as the premium brand version. For example, may possibly not appear to be a huge difference between 0.00065 gauge 0.00055 gauge from the standard gauge versions, but you'll immediately notice how much thinner the economy brand is at comparison for the premium brand. Economy foil will rip and tear a lot more easily, and never dispense as smoothly. Can it usually get the job done? Yes, but not always. Would it be really worth the extra hassle and occasional aggravation? That's doubtful. Therefore, stay with the good stuff!
For wrapping small food products such as tacos, sandwiches, potatoes, etc... standard aluminum foil is you'll need. It isn't required to spend any additional cash durable foil. Standard foil will even work effectively to pay small containers and cups. However, there are many jobs that robust works best for. For wrapping large trays, pans, and large foodstuffs, then its advisable to decide on a robust foil wrap that's no less than 18 inches long. Should you be using aluminum foil as an oven liner or burner bib, then use heavy duty. Covering your back-splash or grill areas? HD foil. Wrap to cover food in oven/broiler? HD foil. As you have seen, durable foil is more versatile within your kitchen than standard, but make use of it only where standard foil isn't adequate for the task. For that reason, many restaurants stock both standard and high duty foil inside their kitchens. Extra heavy duty foil is generally applied to outdoor grills when food such as ribs or brisket has slow smoked or grilled. The real reason for this is that the thinner it really is, aluminum foil will ultimately lose its integrity when confronted with intense heat just like an outdoor grill or smoker. Standard foil begins browning (on account of oxidization) and crumble in short order. HD foil hold up greater about the grill or perhaps in the smoker, but Extra-Heavy foil lasts all night before it offers a superior way.

Which Foil Brand is the better?
During numerous tests and via comments from customers, we learned that all of the foil manufacturers down the page come up with a great premium brand foil wrap. However, the foil is merely one consider determining quality, the second is the caliber of the packaging. Packaging is crucial. Commercial food service foil will not likely endure in your ordinary supermarket form of dispenser box. These are housed in bigger, stronger corrugated cutterboxes and dispensed from plastic rollers. The sturdier the therapy lamp, the more time it'll last in your restaurant kitchen. In case a cutterbox isn't made sufficiently strong enough enough, it'll rapidly weaken and fall apart in harsh kitchen environments because of grease, moisture, heat, through wear. However, 2 brands separated itself from your pack both in relation to its quality of foil and superb overall packaging. Durable and Wilkinson brands make excellent reinforced corrugated cutterboxes, that do not easily dent or bend, or fall apart, thereby allowing for continuous easy foil dispensing. Surprisingly, Reynolds is at the base of those. As they definitely increase the risk for great supermarket brand in Reynolds Wrap, Reynolds food service cutterboxes ranked dead last within our testing since they are on the flimsy side. Pactiv can be our third choice, followed by HFA and Western Plastics.
