Cameron Parish, LA 5/06
Two photos taken a minute or so apart, standing in the middle of Louisiana route 82, between Holly Beach and Cameron, spring 2006. I was still primarily a film photographer, but I started making digital doubles with a first generation Canon Rebel. I was also still developing my film manually at a now defunct public darkroom that popped up in New Orleans in the new year after Hurricane Katrina, or sometimes at home in the bathtub. This was the first time I saw Cameron Parish, and I was mesmerized by the skies, the silence, and the solitude of the place. The Canon Rebel was pretty good for being an early digital camera; the problem was the software of the time wasn't good enough to "see" all the info in the digital files. Modern photo software is now able to see with much greater detail and subtlety, allowing a much better "print" to be rendered, as close as possible to what I remember seeing, as well as being a Louisianan long enough to know the tones of a spring morning sky here. There was a tendency in processing of early digital photography to make everything look hyper-real. Today, processing these older files with modern software allows for a more realistic and detailed look into a somewhat distant mirror.
The film used was Kodak Plus-X Pan 125 -- a film I sure do miss. Most of the negatives I made with this film and my Canon F1N just got the tones right in a way I was always happy with, using Kodak D-76 developer. The film has been discontinued for unknown reasons, and the now-standard Kodak TMax 100 looks dull to me in comparison.

VEGAN CHOCOLATE TART
Ingredients
For the base
350g digestive biscuits
2 tbsp cocoa powder
1 tbsp plain flour
1 tbsp golden syrup
125-175g vegan margarine or butter, plus extra for the tin
For the filling
2 x 400g cans coconut milk, chilled
200g dark chocolate
1 tbsp golden syrup
To serve (optional)
edible silver or gold glitter spray
raspberries
Method
STEP 1Heat the oven to 200C/180C fan/gas 6. Crush the biscuits to crumbs in a bowl using the end of a rolling pin or by pulsing in a food processor. Mix in the cocoa powder, flour, syrup and enough vegan margarine or butter to create a dough. Butter a 23cm loose bottom tart tin and press the mixture into the tin.
STEP 2Bake in the oven for 10-12 mins, then leave to cool in the tin.
STEP 3Meanwhile, make the filling. Open the cans of coconut milk which will have separated with the water at the top and the thick coconut at the bottom. Discard the water (or use it to make a smoothie) and tip the thick coconut into a bowl.
STEP 4Break the dark chocolate into pieces and melt in the microwave on high in 10-second bursts, stirring in between, or in a heatproof bowl set over a pan of simmering water until smooth. Add the coconut along with the golden syrup and whisk together, beating hard until there are no lumps of coconut left.
STEP 5Pour the filling over the base of the tart and put in the fridge to set for 3-4 hrs, or overnight.
STEP 6Spray the tart with edible silver or gold glitter spray, if you like, and serve with raspberries. Will keep in the fridge for three days – it actually tastes even better one or two days after baking.

APPLE CINNAMON SUGAR PULL APART BREAD
INGREDIENTS
FOR THE DOUGH
2¾ cups plus 2 tablespoons all-purpose flour, divided
¼ cup granulated sugar
2 1/4 teaspoons 1 envelope active dry yeast
½ teaspoon salt
2 ounces unsalted butter
⅓ cup whole milk
¼ cup water
2 eggs (at room temperature)
1 teaspoon pure vanilla extract
FOR THE FILLING
1 cup granulated sugar
2 teaspoons ground cinnamon
1 large apple (peeled, cored and diced small)
2 ounces unsalted butter (melted)
DIRECTIONS
Prepare the Dough: In a large mixing bowl, whisk together 2 cups of the flour, the sugar, yeast, and salt. Set aside.
In a small bowl, whisk together the eggs and set aside.
Place the milk and butter in a small saucepan over medium-low heat, and heat, stirring occasionally, until the butter has just melted. Remove from the heat and add the water and vanilla extract. Let mixture stand until it registers 115 to 125 degrees F on an instant read thermometer.
Pour the milk mixture into the dry ingredients and mix with a spatula. Add the eggs and stir the mixture until the eggs are incorporated into the batter. The eggs will feel soupy and it’ll seem like the dough and the eggs are never going to come together. Keep stirring. Add ¾ cup of the remaining flour and stir with the spatula for about 2 minutes. The mixture will come together but be slightly sticky.
Place the dough is a large, greased bowl. Cover with plastic wrap and a clean kitchen towel. Place in a warm space and allow to rest until doubled in size, about 1 hour. (Make Ahead! >> The dough can be risen until doubled in size, then refrigerated overnight for use in the morning. If you’re using this method, just let the dough rest on the counter for 30 minutes before following the roll-out directions below.)
Prepare the Filling: In a medium bowl, whisk together the sugar and cinnamon, then stir in the chopped apple until evenly coated. Set aside.
Grease and flour a 9 x 5-inch loaf pan.
Assemble the Bread: Deflate the risen dough and knead the remaining 2 tablespoons of flour into the dough. Cover with a clean kitchen towel and let rest for 5 minutes. On a lightly floured work surface, use a rolling pin to roll the dough into a 12 x 20-inch rectangle. Brush the melted butter across all of the dough. Spread the apple/cinnamon-sugar mixture evenly all over the dough (if there is any accumulated juices, drizzle that over the dough too).
Slice the dough (I use a pizza cutter!) into six equal-sized strips in both directions for a total of 36 squares/rectangles (they might not all be the same size/shape and that's okay). Create six stacks of six layers each. Layer the dough squares in the loaf pan cut-side up. (You can do them all in one direction or alternate them like I did.) Cover with a kitchen towel and place in a warm place for 30 to 45 minutes, or until almost doubled in size.
Bake the Bread: Preheat oven to 350 degrees F. Cover a sheet pan with foil and place on the lowest oven rack to catch any drips. Place the bread in the oven and bake for 35 to 45 minutes, until the top is very golden brown, and an instant read thermometer placed into the center of the bread reads at least 190 degrees F. (The top may be lightly browned, but the center may still be raw. A nice, dark, golden brown will ensure that the center is cooked as well.)
Remove from the oven and allow to rest for 20 to 30 minutes. Run a butter knife around the edges of the pan to loosen the bread and remove to a cutting board or serving plate. Serve warm or at room temperature. The bread is best served the day it’s made, but it can also we wrapped in plastic wrap and kept at room temperature for up to 2 days.

Michael Fassbender : de Hunger à X-Men, de la gloire au néant

Aussi à l’aise du côté de Shakespeare, que des super-héros, Michael Fassbender pourrait incarner un pied de chaise que l’essentiel de la population terrienne rêverait de s’assoir. On l’imagine même en James Bond. Et pourtant, en cette fin 2020, le comédien semble avoir été balayé des tablettes hollywoodiennes. Que s’est-il passé ?
NO SHAME FOR FAME
Au mitan des années 2000, Michael Fassbender est sur beaucoup de lèvres, pour ne pas dire toutes. Célébré en tant que comédien, adulé comme sex symbol, absolument rien ne paraît pouvoir lui résister, alors qu’il enchaîne rôles complexes, tourmentés, positifs, populaires ou périlleux, tout le monde guette avec appétit la moindre de ses prestations. Il fait pour ainsi dire l'unanimité, avec ce qui ressemble à une déconcertante facilité. Il faut dire qu'en un temps record, l'acteur a brillé dans un éventail de productions dont la variété a de quoi donner le tournis. En six ans à peine, son CV se transforme en orgie cinéphage.
Si quelques yeux concupiscents ne manquent pas de s'attarder sur son torse dès 300, c'est avec le traumatisant Hunger de Steve McQueen, sorti en 2008, que son corps frappe tout un pan de la cinéphilie. Dans la peau d'un prisonnier politique irlandais, il électrise la caméra, le cadre et le public.
Le cinéma d'auteur anglo-saxon ne s'y trompe pas, et on le retrouve bientôt à l'affiche de Fish Tank, primé à Cannes, avant que tout s'accélère grâce à un dénicheur de trognes hors du commun : Quentin Tarantino. Avec Inglourious Basterds, le cinéaste est le premier à capturer le mélange d'assurance, de flegme et de prédation suave qui émanent de sa personne. Cette équation gagnante continuera d'exploser à l'écran, dans X-Men : Le Commencement, Shame et bien évidemment Prometheus.
Mais Fassbender ne se cantonne pas au cinéma indépendant ou d'auteur, loin de là. Parallèlement à la reconnaissance arty des festivals perçus comme plus ou moins pointus, on le retrouve dans une tripotée d'attachantes séries B, qui vont faire beaucoup pour le populariser auprès du grand public, et inscrire dans l'esprit du grand public son visage. En l'espace de trois ans, il se promène ainsi dans un survival énervé avec Eden Lake, avant de jouer les nazis zombies dans Blood Creek, pour le réalisateur de Batman & Robin (ça ne s'invente pas), et ne renâcle pas à desquamer des soldats Pictes dans Centurion ou à cabotiner comme un beau diable aux côtés de Jonah Hex.
On pourrait également passer en revue ses incartades du côté de créations plus risquées encore, voire expérimentales, de Frank à Piégée, pour arriver au même constat. Tout le monde veut une tranche de Michael, et quand Prometheus sort en 2012, on voit mal ce qui pourrait lui résister. Mais que s'est-il passé depuis ?
QUAND ÇA VEUT PAS, ÇA VEUT PAS
Si le succès appelle le succès, l'échec, lui, n'est pas particulièrement bien vu à Hollywood, à fortiori alors que l'industrie s'efforce de réduire les facteurs de risque au maximum. Et le moins qu'on puisse dire, c'est que la carrière de Michael Fassbender après 12 Years a Slave s'est transformée progressivement en chemin de croix pour le comédien. Non pas que l'artiste explose en vol ou ait soudain revendu son talent à la sauvette, ses performances vont demeurer exceptionnelles et forcer le respect tant des spectateurs qui les découvrent en salles que de la presse. C'est au niveau du box-office que le bât blesse. La première alerte s'intitule Cartel, un film qui ambitionnait un carton.
Réalisé par Ridley Scott, écrit par le légendaire Cormac McCarthy, interprété par un casting démentiel... tout le monde y croit. Sauf que le long-métrage n'a rien d'un récit criminel furibard, mais tout d'une plongée dépressive et métaphorique, un trip existentiel qui récoltera des critiques presque unanimement négatives et va laisser le grand-public sur le bas-côté. Et cette équation choix-exigeant/performance/box-office-en-berne va inlassablement se répéter, avec une insistance d'autant plus frappante que le comédien ne chôme pas et apparaît toujours dans des œuvres d'une belle variété.
Mais rien n'y fait, ni Macbeth, ni Steve Jobs, ni Une vie entre deux océans ou Song to Song ne provoque une électricité notable. Pourtant, en passant de l'adaptation shakespearienne présentée en grande pompe sur la Croisette à un biopic dirigé par le duo Sorkin/Boyle, un honnête mélo ou une prière Malickienne, il y avait de quoi faire et s'attirer les bonnes grâces, tant des médias que des cinéphiles. Or, s'il bien une chose à laquelle Hollywood est sensible, c'est l'indifférence.
À chaque semi-échec ou sortie nimbée de silence, c'est la côte de l'artiste qui est entamée. Et à ce jeu-là, se retrouver tête d'affiche de projets tragiquement foirés, tels que Le Bonhomme de neige, contribue progressivement à ternir l'image de Fassbender, qui pourtant ne démérite jamais. Jusque dans des propositions risquées, comme A ceux qui nous ont offensés, il est excellent. Mais le cercle vicieux de la poisse s'est mis en branle, et rien ne semble pouvoir l'arrêter.
EN TOUTE FRANCHISE
Comédien brillant, aux choix souvent audacieux et toujours pertinent, comment Michael Fassbender en est-il arrivé à perdre une partie de sa formidable aura auprès d'une industrie qui eut été partante pour lui confier, moins de cinq ans plus tôt, le rôle d'un cendrier en étant persuadée d'enjailler les foules ? Peut-être faut-il se pencher sur ce qui occupe désormais l'attention de tout Hollywood, à savoir la gestion de super-franchises, de marques et licences susceptibles d'attirer un public large et fidèle. Et en la matière, l'acteur a alterné manque de chance et grosse plantade.
Sur le papier, il a pourtant payé son écu au monde des super-héros, en jouant Magneto, méchant emblématique de la saga X-Men, de X-Men : Le Commencement jusqu'au crash industriel X-Men : Dark Phoenix. Sans jamais démériter, il est parvenu à prendre la suite de Ian McKellen, qui avait créé le rôle au cinéma de fort belle manière, usant avec élégance de son héritage germanique et anglo-saxon.
Tantôt minéral, tantôt volcanique, il a prêté ses traits au mutant vengeur avec un certain délice. Seulement voilà, le reboot initié par Matthew Vaughn a beau être d'excellente facture, il sera repris en main par Bryan Singer dès X-Men : Days of Future Past, lequel maintient encore l'illusion d'une certaine maîtrise, évaporée dès X-Men : Apocalypse. Certes, le public est encore au rendez-vous, et personne ne trouve à redire du travail du comédien, mais pour autant, il demeure un visage au sein d'une création chorale, artisan d'un succès dont aucune star ne pourrait revendiquer la paternité.
Pour notable que soit sa participation, elle demeure une participation. Et justement, média comme studios ne jurant plus que par les licences, il devient difficile, voire périlleux, de s'imposer durablement dans le paysage des majors sans avoir dans sa besace une marque de premier plan. Bénédiction ou malédiction, les franchises font désormais la pluie et le beau temps, qu'elles transfigurent la carrière d'un Robert Downey Jr. ou sclérosent celle d'un Vin Diesel, elles sont désormais le thermomètre de la gloire.
Michael l'a bien compris, et ce n'est pas un hasard s'il se positionne en chef d'orchestre du blockbuster Assassin's Creed. Ubisoft clame alors haut et fort qu'il n'est pas question de vendre son catalogue à la découpe, et que sa saga phare, alors au sommet de sa gloire, nous proposera un vrai moment de cinéma. Fassbender n'est pas là pour faire de la figuration, puisqu'il est carrément producteur du blockbuster, sur lequel il impose le réalisateur Justin Kurzel, dont Les Crimes de Snowtown l'a impressionné et avec qui il a aimé travailler sur Macbeth.
Tout semble réuni pour attirer en masse dans les salles les millions de joueurs et les spectateurs désireux de voir un grand film d'aventure spectaculaire. Mais le train va dérailler, tant du côté vidéoludique que filmique, et de silence coupable en désintérêt d'Ubisoft, l'opération sent bientôt le roussi.
Au final, l'opération se soldera par un navet fumant, mais surtout un échec cinglant au box-office. Avec moins de 250 millions de dollars réunis dans le monde entier pour un budget hors-marketing de 125 millions, a tout du vilain petit canard hollywoodien. Et pour ceux qui pensaient qu'Alien : Covenant permettrait au comédien de garder un pied dans le club très fermé des franchises à succès, le score en demi-teinte et la détestation d'une partie du public doucheront ces derniers espoirs, que le sordide Dark Phoenix n'essaiera même pas de ranimer. Les règles du jeu sont cruelles, un peu absurdes, mais elles n'en demeurent pas moins les règles.
Aujourd'hui, dans le casino hollywoodien, quelle que soit votre main, si on n'y trouve pas de super-héros ou de protagonistes récurrents, impossible de faire sauter la banque.
Dans le futur, on retrouvera l'acteur à l'affiche de Next Goal Wins, l'adaptation d'un documentaire à succès dans lequel il tiendra un rôle secondaire, Kung-Fury 2, suite de la pitrerie précédente, et peut-être dans le remake de La Horde sauvage par Mel Gibson, si le film voit jour et les rumeurs entourant le casting disent vrai. C'est bien maigre pour un artiste de cette stature, et pas loin d'être absurde, tant son talent a irradié durant une décennie, quasiment à chacune de ses apparitions.
On espère que les augures d'Hollywood se pencheront prochainement sur sa carrière, blockbuster ou pas, et qui sait, que l'excellent Steve McQueen lui redonnera un rôle à la hauteur de celui qu'il lui écrit dans Shame.

Most of us crave chocolate all the time, but when you suffer from Irritable Bowel Syndrome (IBS), there's a lot that you have to remove from the snack list.
Yummy treats such as chocolate, candy, fries, sodas, beer and wine are among the most popular things that people have a real hard time letting go of.
And now that Valentine's Day is around the corner, if you go to any store there is beautiful and delicious chocolate and candy displays everywhere and that just makes it so hard not to want to have some. So we bite our tongue, because we know that indulging in these sweets can do more harm than good with our situation.
But guess what? We found 3 different and super delicious chocolate recipes for you to try, designed for people who suffer from Irritable Bowel Syndrome (IBS).
Make them a few days before Valentine's so you can also enjoy a very sweet Valentine's Day, without feeling left out.
Make some for you and grab a pretty Valentine box or basket and surprise your Valentine as well!
Keep in mind that while these guilty pleasures are much healthier than the products sold at the store, go slow and eat in moderation. Some recipes might work better for some people than others, so proceed with caution and gauge how your body responds, just to be safe.

1. Dairy Free Raspberry Chocolates
(Makes 12 chocolates)
• 100g coconut oil
• 5 tbs cocoa powder
• 2 tbs maple syrup
• 2 tsp vanilla extract
• 100g raspberries
Instructions:
Measure out the coconut oil and drop into a heat-proof jug or bowl. Pop into the microwave and heat at short 10-15 second intervals, stirring in between, until the oil has completely melted and is clear.
Add the cocoa powder, maple syrup and vanilla essence to the coconut oil. Quickly stir until fully combined and smooth.
Drop a teaspoon of the chocolate mixture into each section of a silicone mould or ice cube tray. Place one or two raspberries on top of each dollop of chocolate, then top with another spoonful of chocolate to cover the raspberries.
Place the chocolates into the freezer for 10-15 minutes until set. If you’re short on freezer space, you can set them in the fridge instead, though they may take a little longer to completely set.
Pop the chocolates out of the mould and serve immediately, or store in the fridge until ready to serve.

2. Fudgy One-Bowl Brownies
(Serves 12 to 16)
• 250 grams (1 1/4 cups) granulated sugar
• 140 g (10 tbsp) unsalted butter
• 65 g (2/3 cup) Dutch process or "dark" cocoa powder
• 1 tsp instant espresso powder (optional)
• 1/2 tsp sea salt
• 1 tsp vanilla extract
• 2 cold large eggs
• 65 g (1/4 cup plus 2 1/2 tbsp) gluten free flour blend with no gums, such as King Arthur Multi Purpose
• 125 to 140g (2/3 to 3/4 cup) dark chocolate chips/chunks (optional)
Instructions:
Preheat oven to 350F. Line 8 x 8-inch baking pan (I used a light-colored metal pan) with nonstick foil or parchment paper, leaving an overhang on 2 opposite sides.
In a large, microwave-safe bowl, combine the sugar, butter, cocoa, espresso powder if using, and salt. Microwave in 20 to 30-second bursts, stirring each time, until butter is melted. Stir until combined (mixture will be very grainy). Stir in the vanilla.
Add the eggs one at a time, stirring until combined after each one. Stir until the batter is thick and shiny. Add the flour and stir until thoroughly combined and no white streaks remain. Stir in chips if using. Spread evenly in prepared pan.
Bake until a toothpick comes out with a moist crumbs, 30 to 34 minutes (mine took 32). The top should be puffed and shiny and the brownies pulling away from the sides of the pan. Cool completely on a wire rack. Cut into 12 or 16 brownies. For a perfectly clean cut, put the cooled brownies into the refrigerator or freezer until cold (don't freeze completely). For storage, these freeze really well. You can wrap individual brownies in plastic wrap and store in a ziploc bag. Defrost at room temperature.

3. Friendly Ferrero Rocher
(Serves: 20)
• 100g roasted hazelnuts
• 100g walnuts
• 3 tbsp cacao or cocoa powder
• 2 tbsp coconut oil, melted
• 2 tbsp maple syrup
• 1 tsp pure vanilla extract
• 1/2 tsp sea salt
• Chopped hazelnuts (to garnish)
Instructions:
Set aside roughly 20 hazelnuts for the centers of the Ferrero Rocher.
Add the rest of the hazelnuts and walnuts into a food processor and blend until chopped into small pieces.
Add the cacao and sea salt and blend again. Add the maple syrup, vanilla extract and coconut oil and blend until the ingredients start to stick together (you might have to scrape down the sides of your processor every so often).
Roll the mixture into small balls and pop insert a hazelnut in the center of each one.
Cover the outside in chopped hazelnuts.
Place the balls in the freezer for 20-30 minutes to harden and store in the fridge.
