sea food stir fried vermicelli: 9/10. the seasoning is sawr good, with a tiny bit of spice to kick off the flavor and yk I love spice. also there scallops which is a big plus

dried pangasius kunyit hotpot: 8/10, the broth is good, the fish is fatty and crunchy enough but im just too full lmao




after that we went to this mega big coffee & dessert exhibition on its final day, like there so many sections and also some of them not even coffee or desserts they like appliances and also Korean food?? all the things I tried

god torsdag venner - hvad siger vi til et kapitel på 5600 ord? dagens kapitel er nu på ao3.
jeg bliver altid sulten når jeg skriver fordi jeg næsten altid inkluderer mad på en eller anden måde, så her er opskriften på den rødkålssalat som blev nævnt i dagens kapitel:
slawdressing: 1 tbsp maple syrup 1 1/2 tbsp date syrup 1 tbsp pomegranate molasses 2 tsp red wine vinegar 100ml extra virgin olive oil
middle eastern slaw: 1/2 head of red cabbage, thinly sliced 1 tbsp salt 1/2 red onion, thinly sliced 1 red chilli, deseeded and finely sliced 1 beetroot, peeled and ends trimmed, thinly sliced or julienned 1 large carrot, peeled and ends trimmed, thinly sliced or julienned grated zest of 1 lemon small handful of dill leaves plus extra for garnish 2 tbsp finely chopped flat leaf parsley 2 tbsp finely chopped coriander 3 tbsp toasted and chopped pecans small handful of pomegranate seeds
dressing: whisk all ingredients except olive oil together. gradually whisk in the olive oil until emulsified and season with salt and pepper to taste.
slaw: slice the cabbage thinly, toss in salt, and place in a colander over a sink or bowl and place heavy weight atop to help the cabbage release its juices and bitterness. leave for an hour
julienne the beetroot and carrot and place in bowl with the drained cabbage. mix well, add all the other ingredients but leave half the pecans. refrigerate until ready to serve.
toss with the dressing until evenly coated. garnish with remaining pecans, a bit of fresh dill, and a sprinkling of pomegranate seeds.

Even on a grey and chillier Summer's day, one fancies fresh herbs and vegetables. They are ripe and full of flavour, and all the fresher if picked in one's kg!! And they make this Chilli and Tomato Pasta a beautifully hearty lunch!
Ingredients (serves 3):
1 1/2 cup short whole-wheat pasta (such as tortiglioni or farfalle)
2 tablespoons olive oil
2 fluffy sprigs Garden Parsley
1/3 red chili pepper
a small Green Onion
a large, ripe heritage tomato (such as Marmande or Black Krim)
1 garlic clove, minced
½ teaspoon fleur de sel or sea salt flakes
½ teaspoon freshly cracked black pepper
1 1/2 tablespoon Modena Balsamic Vinegar
1 teaspoon caster sugar
half a dozen Garden Cherry Tomatoes
In a pot of salted boiling water, cook tortiglioni according to package’s directions, about 9 minutes until al dente.
In a large, deep skillet, heat olive oil over medium-high heat.
Finely chop Garden Parsley, add to the skillet, and fry, 1 minute.
Thinly slice red chili pepper, and stir in as well.
Thinly slice Green Onion, and stir into the skillet, keeping a little of the chopped green part for garnish.
Roughly dice Marmande tomato, and stir into the skillet, with all its juice. Increase heat to high. Cook, 3 to 4 minutes, until tomato collapses into a sauce.
Stir in minced garlic. Season with fleur de sel and black pepper.
Finally, deglaze with Balsamic Vinegar. Cook, 1 minute, and stir in caster sugar.
Halve Cherry Tomatoes, and stir into the skillet. Cook, 1 minute.
Once the tortiglioni are cooked, drain quickly, saving about 1/3 cup of the cooking water, and stir both into the Balsamic tomato sauce, until the pasta is beautifully coated.
Serve Chilli Tomato Pasta hot, sprinkled with chopped green part of the Green Onion, plus an onion flower, if you have one, and chopped Garden Parsley.

Minestrone Soup
Serving: 4-6
Ingredients
2 tbsp / 30 ml extra virgin olive oil, plus more to drizzle
1 medium onion, finely diced
3 celery stalks, roughly diced
2 carrots, roughly diced
1 medium zucchini, roughly diced
3 large garlic cloves, finely diced
2 bay leaves (fresh if you have one growing in your garden)
2 fresh rosemary twigs, leaves chopped finely or ½ tsp dried
2 fresh thyme stalks, leaves picked or ½ tsp dried
1 tsp sweet smoked paprika
¼ tsp chilli flakes (optional), adjust to taste
1¼ tsp salt, adjust to taste
2 x 400 g / 14 oz tins quality peeled plum tomatoes
1 large sweet (or regular) potato, cubed into 1.25 cm / 0.5″ dice
150 g / 5.25 oz conchigliette (or other small pasta of choice) or rice (for GF version)
150 g / 5.25 oz savoy cabbage, shredded finely
100 g / 3.5 oz lacinato kale, de-stemmed and shredded finely
1 x 400 g / 14 oz can cannellini beans
black pepper, to taste
Directions
Heat the oil in a large, heavy bottomed pot.
Once the oil gets hot, throw in diced onion, celery, carrot and zucchini (if using). Sauté on a very low heat until soft (15 minutes).
Next, throw in garlic, bay leaves and herbs. Sauté for another 5 minutes, stirring from time to time.
Mix in smoked paprika, chili (if using) and salt. Adjust the amount of chili to taste.
Add canned tomatoes to the pot, squashing them with a wooden spoon once they are in the pot. Add 0.5 liter / 2 cups of water. Cover and simmer for about 30-45 minutes, until the tomatoes are falling apart. Top up with more water if the pot is looking dry.
Add in about 0.75 liter / 3 more cups of water and cubed potatoes. Once the soup comes to a simmer, count down 5 minutes.
Next add in pasta of choice (use rice for GF version but add it with potatoes as it takes longer to cook). Cover the pot with a lid and simmer for about 6 minutes before adding shredded cabbage and kale.
Finally add in shredded cabbage, kale and drained beans. Simmer for further 5 minutes – until all the ingredients are fully cooked.
Taste, adjust the seasoning.
Divide between bowls, drizzle each portion with a teaspoon of extra virgin olive oil and sprinkle with freshly ground pepper.

And I made their cauliflower potato curry so many times, as featured in this special section of the DVD. Did I know what it was supposed to taste like? Nope. In having made it recently, I would say it was just lacking oil because I was going through a fat free portion of my life (god, I must have been so unhappy.) it tasted like delicious nostalgia.

Ingredients
1 ⁄4 cup vegetable oil
1 large onion peeled and cut into small pieces
1 bunch fresh coriander cilantro, separated into stalks and leaves and roughly chopped
1 small green chili chopped into small pieces (or one teaspoon chili powder)
1 large cauliflower leaves removed and cut evenly into eighths
3 large potatoes peeled and cut into even pieces
2 8 ounce cans diced tomatoes
fresh ginger peeled and grated (1 generous tablespoon)
fresh garlic chopped (1 generous tablespoon ~4 cloves)
1 teaspoon cumin seed
2 teaspoons turmeric
1 teaspoon salt
2 teaspoons garam masala
Instructions
Heat vegetable oil in a large saucepan.
Add the chopped onion and one teaspoon of cumin seeds to the oil.
Stir together and cook until onions become creamy, golden, and translucent. Will take 10-15 minutes
Add chopped coriander stalks, two teaspoons of turmeric, and one teaspoon of salt.
Add chopped chillis (according to taste) Stir tomatoes into onion mixture.
Add ginger and garlic; mix thoroughly.
Add potatoes and cauliflower to the sauce plus a few tablespoons of water (ensuring that the mixture doesn't stick to the saucepan).
Ensure that the potatoes and cauliflower are coated with the curry sauce.
Cover and allow to simmer for twenty minutes (or until potatoes are cooked).
Add two teaspoons of Garam Masala and stir.
Sprinkle chopped coriander leaves on top of the curry.
Turn off the heat, cover, and leave for as long as possible before serving.

30 plants a week
I ate more than 30 plants today without really trying? Here’s how.
Started the day off with breakfast, of course. I can’t miss breakfast; it’s honestly the only thing that gets me out of bed. Had my standard this morning - seeded toast (wheat, sunflower seeds, brown linseeds, pumpkin seeds, golden linseeds, millet and poppy seeds) with peanut butter, plus a glass of orange juice.

At work, you’ve got to fuel the old brain, and for me that means copious cups of tea. I also have one coffee a day when I’m in the office (no more, as I have to drink it super sweet).

Mid-morning I got the hunger pangs, and my snack for the day was a three-day-out-of-date smoothie that I’d tacked on to a meal deal sandwich ages ago. It’s advertised as strawberry and banana, but the recipe also includes apple, white grapes, orange (boo, my first double!) and blackcurrants.

Time for lunch, and I had some odds and ends of veg slowly fading in the fridge, so I’d made a salad the night before. I roasted brussels sprouts, sweet potato and carrot while the oven was on re-heating my dinner, and added this to a handful of mixed salad leaves (baby green leaf, baby red leaf, baby spinach and rocket). To make sure I wasn’t hungry again before lunch hour even ended, I also added half a packet of Merchant Gourmet’s Jamaican grains, which includes wholegrain rice, pearl barley, bulgur wheat, kidney beans, black beans, pinto beans and quinoa. There’s also a range of veg-based flavourings and spices, but I won’t put them here as some are covered elsewhere and I don’t know the amounts. For added flavour, and because I had the jars open from a recipe at the weekend so they need using up, I added a small handful of black olives and sundried tomatoes. To this, I added a quick dressing, which as well as a bit of salt, olive oil and Dijon mustard, included black pepper and lemon juice.

After work I did the food shop - I could have stretched it out another day or two, except I was running dangerously low on milk and no one wants to see me tea-deprived. For dinner, I followed a Sidekick recipe for Gochu-miso coconut prawn rice. This started with garlic, fresh ginger, gochujang and miso (both soybean based). Added to this, along with rice and prawns, are peas, coconut milk, lime, and coriander. Although the recipe contained peas, otherwise it was pretty low on veg and I like a veg side with dinner just for variety of flavour (and in this case, texture), so I added a simple cucumber salad, spiced up a bit with chilli flakes and sesame seeds, and the leftover lime juice from the main dish.
This evening I also prepared my snack pot for tomorrow's mid-morning hunger, and sneaked a cherry while waiting for dinner to cook.

I’m not likely to extend too much beyond this over the course of the week - I’ll be eating the same bread over and over, and tomorrow I have the exact same lunch and dinner as I prepped two salads at once and have leftovers from cooking tonight. Things I likely will add because they’re currently in my kitchen and on the meal plan are oats, kiwi, raspberries, red pepper, little gem lettuce, melon, potato, parsley, chickpeas and red onion - so while I should hit 50, I’ll likely not get too much further!
It might sound like I’ve cheated a bit in places here - four types of salad leaf, really? But the Zoe website specifies different types of salad leaves count separately, as do different colours of the same vegetable - so a three pack of red, green and yellow peppers can count three times. 70% dark chocolate also counts.
Depending on which source you look at, herbs, spices and tea may only count as a quarter of a point, and some don’t count juices at all. The Zoe team suggest that given the small amounts of dried herbs and spices we tend to consume in a sitting, it’s worth eating them multiple times to get the full benefit - so perhaps if you do that, you can count them higher. I guess it’s guidelines rather than meant to be hard and fast rules. But even allowing for a reduction in the “counting” of herbs, spices and tea, and removing juice, I’d still have hit the weekly 30 today.
To boost the total, my biggest bangs for the buck were the seeded bread, mixed salad leaves, grain packs and herbs and spices - and in the case of the latter three, they’re also all shelf stable, which is a bonus! They’re really useful ways of getting that variety of plant foods when you live alone and supermarket packet sizes are really too big. I’ve been working on the same pack of brussels sprouts for three weeks now…
