What's the difference between a quick pickle and regular pickles? Are you just half pickling them? Do you use a different brine?
huh. okay. quickles are, in the broadest sense, just not canned. think of it like this: quickles are marinated vegetables; pickles are the same marinated vegetables that have gone through the whole canning process.
if youre using a less than 5% vinegar, you should either make small batch quickles or just resign yourself to relegating a lot of fridge space to canned pickles cuz they're not gonna be shelf stable. quickles are not shelf stable and need to be refrigerated.
if im planning to keep them for a long while in the fridge, or im using a denser veg like carrots, ill actually heat the brine and seal my jars before fridging them, but that's not necessary. usually im making a micro batch for a meal—as in one literal cup of quickles.
also, doing micro batches means you can play around with recipes and marinating times without wasting a lot of ingredients if it turns out bad. like one large onion can make like five different quickles.
and since you're likely not fully canning a quickle, you have a little more leniency with the strength of your acid—cuz remember it's gonna be AT LEAST 5% acidity if you're planning on having shelf-stable pickles. all you need for quickles is: acid + sugar + salt, sometimes + water.
half cup rice wine vinegar, dash mirin, dash soy, 1 shallot thinly sliced, marinate for at least 20 minutes
half cup lemon juice, 1 tbsp white vinegar, 1 tbsp honey, pinch salt, 1 thinly sliced clove of garlic, several thinly sliced jalapenos (or other hot peps, but this is the only way i like jalapenos), marinate for at least two hours - EDIT: also really good if you heat the brine with a few sprigs of fresh rosemary before adding the jalapenos
2 cup cider vinegar, 1/2 cup sugar, 2 tbsp salt, heat with 1/2 tbsp each of whole allspice, whole cloves, whole black and pink peppercorn, and 1 tsp each of whole mustard seed, coriander seed, pinch of caraway, two or three bay leaves, pour over sliced red onion, fridge at least overnight
1 1/2 cup lemon juice, 1/2 white vinegar, 1/3 cup sugar, 1 1/2 tbsp salt, heat with 2 tbsp peppercorn (i load it up with black and green, usually a little more than 2 tbsp worth), 1 tsp chili flakes, 2 cloves garlic, pour over asparagus stalks, fridge at least overnight
1 cup cider vinegar, 1 cup balsamic vinegar, 3/4 cup sugar, 2 tbsp salt, heat until sugar is dissolved with 1 or 2 tbsp of cloves, 1 tbsp pink peppercorn, lots of fresh tarragon, pour over sliced beets, fridge for at least a full day
1 cup red wine vinegar, 1/2 cup maple syrup, hefty pinch salt, heat until lightly bubbly with a few sprigs of thyme, 1 tbsp black peppercorn, pour over carrots (we prefer small to mid sized whole carrots, but slices work just fine), fridge for at least a full day
i fucking love pickles. i would drink vinegar constantly if it wouldn't cause me great harm. go forth, pickle something

Giant wellington is a showstopping centrepiece packed with roasted red peppers, cooked beetroot and kale. Plus, we've made a vegan stuffing and glazed the pastry in marmite to take it to the next level
Ingredients
1 tbsp olive oil
2 cloves garlic, finely chopped
250g kale, tough stalks removed
250g pack cooked beetroot, thinly sliced from a jar 3 roasted red peppers, drained and halved PASTRY
500g plain flour, plus extra for dusting
210ml olive oil
7 tbsp aquafaba, see notes below
STUFFING
2 tbsp olive oil
1 onion, finely chopped
150g swede, coarsely grated
2 cloves garlic, finely chopped a few sprigs thyme, leaves stripped a good grating nutmeg
200g pouch ready-cooked puy lentils
1 apple, coarsely grated
30g hazelnuts, toasted and finely chopped
50g breadcrumbs
1 lemon, zested GLAZE
1 tsp Marmite
GRAVY
1 tbsp vegetable oil
1 shallot, finely chopped
100ml brandy
1 tbsp pink peppercorns, lightly crushed
3 tbsp vegan gravy granules, see notes below
50ml soya cream Method
STEP 1
To make the pastry, mix the flour with 1 tsp salt then stir in the olive oil and 5 or 6 tbsp of aquafaba until it comes together as a dough, then knead lightly for 30 seconds. Cut 1/3 of the pastry from the block, then wrap and chill both blocks for 30 minutes.
STEP 2
Meanwhile, make the stuffing. Heat the olive oil in a frying pan and cook the onion and swede for 5-10 minutes or until soft. Add the garlic, thyme and nutmeg, and cook for a further minute. Tip in the cooked lentils, apple and hazelnuts, and cook for 1 minute before stirring through the breadcrumbs and lemon zest.

STEP 3
Heat 1 tbsp olive oil in a large pan and cook the chopped garlic for 2 minutes until fragrant. Add the kale and a splash of boiling water, and cook until the kale has wilted and the water has evaporated. Season and cool.
STEP 4
On a lightly floured piece of baking paper, roll out the 1/3 of pastry to a 25cm x 15cm rectangle, then slide onto a baking sheet. Spoon ½ of the stuffing onto the pastry in an even layer, leaving a 1cm border. Add ½ of the kale mixture, ½ of the beetroot slices and all the pepper slices, so that you have clear layers. Spoon the remaining stuffing mix on top of this, then repeat with the remaining beetroot and kale.
STEP 5
On another lightly floured piece of baking paper, roll out the remaining pastry to a 35cm x 30cm rectangle. Carefully flip the pastry onto the wellington and peel off the baking paper. Use your hands to mould the pastry round so it is tight to the filling. Use your finger and thumb to crimp the edges of the pastry so it’s completely encased, then trim any excess. Roll out any excess pastry and decorate, if you like. Chill for 30 minutes.
STEP 6
Heat the oven to 200C/fan 180C/gas 6. Mix the Marmite with 1 tbsp aquafaba and use this to glaze the entire wellington. Put into the oven for 25-30 minutes or until the pastry is crisp and golden.
STEP 7
To make the gravy, heat the vegetable oil in a small pan and cook the shallot for 5 minutes until soft. Tip in the brandy and pink peppercorns. Mix the gravy granules with 350ml water and pour in. Simmer for 5 minutes until thickened slightly, then stir through the soya cream. Keep warm but do not boil. Cut the wellington into thick slices and serve with the gravy.

I have another perfume question for you. I’m trying to find a new perfume but don’t want to spend a lot of money. Two of the higher end perfumes I like are Ghost Eclipse and Hugo Boss alive. Could you suggest some alternatives? Also, could you tell me what the bases of these perfumes are?
Definitely! Alive features notes of plum, vanilla, jasmine, thyme, cinnamon, blackcurrant apple, cedar, sandalwood, and olive tree, while Eclipse features a blend of bergamot, lemon, mandarin orange, black currant, peach, apple, marigold, lotus, freesia, amber and musk.
So it looks like the overlap you have between the two of them are the apple and blackcurrant notes and an overall attraction towards fruity florals. Alive is more woody, with base notes of cedar, sandalwood, and olive tree, while Eclipse is more in the musk/amber family.
I'm not sure what your price point is, but for new perfumes, here are ten you might like:

Let’s talk about food
Every good cook has a style of their own, whether that’s the way granny fries a chicken, or how the four-star chef makes a soufflé. A lot of that is in little choices you make as a cook. Here are a few things that I do that help make my food taste the way it does.
Cooking fats: While some dishes really do call for a neutral oil – canola and corn oil are a couple of examples – much of the time, you can make a statement with a more flavorful cooking fat. Butter added to the neutral oil can add a lot of zing. I like extra virgin olive oil for Mediterranean and middle-eastern foods as well as for making salad dressings. I always have a little bacon fat handy to add a down-home touch to those home-style favorites like cottage fries or sautéed greens. Coconut oil is something you’ll want to try for tropical and Asian dishes, especially if they come from regions where they grow coconuts.
Black Pepper: I do my own special blend of peppercorns that I use instead of plain black pepper. Freshly ground black pepper tastes better than the stuff from a can, and my blend of black, green, white, pink and Szechuan peppercorns brings an extra kick of fruitiness that says, “Alden cooked this.” Those are the kinds of touches you want. Things that subtly change the flavor in a way that makes that dish “your dish” instead of just another plate of food.
Citrus Juices: My son has never liked lime juice as a flavor in his food, and while you can easily substitute lemon juice without any problems, we have also found that bitter orange juice (which you can find in specialty markets) makes a bold statement in a lot of dishes where lime is the expected flavor.
Herbs: This is a huge area for you to experiment and personalize your cooking style. Does a dish call for oregano? Marjoram has a similar, but milder, flavor. Thyme gets used a lot, but have you tried using savory instead? Try some herb blends to see what you like, then try different brands of them to see which one you prefer (every spice merchant has a different blend). When you decide which one you prefer, use that one. It becomes part of your style.
Salt: For most cooking, we use Kosher salt. We keep it in a dish (a salt pig as it’s sometimes called) right by the stove. It’s convenient to grab a pinch to add to a dish. The big grains don’t stick to your fingers (too much). We also keep some normal salt around, too. The smaller crystals dissolve better in baked goods. A note here about the two kinds of salt. I’ve heard it said that Kosher salt is ‘less salty’ than regular table salt. It’s not. It’s salt. The truth is that a teaspoon of Kosher salt weighs less than a teaspoon of table salt because the big grains don’t stack as closely as the small ones.
Spices: Try some substitutions, even partial ones. Most apple pie recipes call for cinnamon, some of them exclusively, but some reduce the cinnamon and add other spices like cloves, nutmeg, mace or even ginger or allspice. An even wilder example is a recipe I have from my great-grandmother. Her raisin cake recipe calls for a half teaspoon of whatever spice you have. Her list includes cinnamon, nutmeg, mace and allspice. A raisin cake with cinnamon seems like an obvious choice, and it’s tasty, but I’ve tried all the other spices in the list and nutmeg is my first choice, followed by allspice.
Bell Peppers: there is a flavor difference between green bell peppers and the ripe ones – red, yellow or orange. We prefer the sweetness of the ripe ones.
Onions: Red, Yellow or white? White onions are strong flavored. Yellow onions are a little less pungent and somewhat sweeter. Red onions are, to me, in between. I use yellow onions. There are also the super-sweet varieties such as Walla Walla Sweets or Vidalia onions.
Pasta: Pick a favorite brand and stick with it. Avoid brands that seem to fall apart in cooking. Remember that some brands, especially the ones imported from Italy will tend to need just a little longer cooking time than they call for on the package. Italian al dente is a lot chewier than the American version.
Rice: We love rice in our house and always have a few varieties on hand – Arborio for risottos and paellas, basmati for Indian and Persian dishes and sticky rice for Southeast Asian foods. For almost everything else from Chinese to Puerto Rican, we use jasmine rice. We don’t use a lot of brown rice.
Flour: All-purpose flour works for most everything. I add some gluten to the bread I bake, so I don’t have to keep bread flour on hand. You might want to use pastry flour if you bake many cakes, since the lower protein content makes for a more tender result, but we don’t bake enough to make it worth keeping yest another kind of flour in the pantry. I recommend unbleached flour since I’m not a fan of benzoyl peroxide and chlorine gas. I also choose organic flour. The less pesticide you eat, the better.
Bacon: I have a favorite brand of bacon, it’s thick-sliced and apple-smoked, and usually has more fat than lean meat. I cook it until it’s all crispy and save the fat for cooking.
Eggs: They matter. I prefer organically raised brown eggs. If you can get eggs from a local farmer at one of the farmers markets, go for it. You’ll notice the difference, from the heavier shell to the darker, richer-flavored, yolks. Remember that baking recipes always imply a large egg even when it’s not specified.

Shrimp Boil
INGREDIENTS
For the shrimp boil: 2 lemons, quartered 2 bay leaves 3 tablespoons kosher salt 2 tablespoons whole black peppercorns 1/2-3/4 cup crab and shrimp boil seasoning, such as Old Bay, plus more, or 4 (3-ounce) bags Zatarain's Crawfish, Shrimp, and Crab Boil (See Cooks' Note) or Thyme sprigs, Head of garlic
1 onion
4 pounds small new potatoes (about 1 1/2" in diameter) 2 pounds smoked sausage (about 4 links), such as kielbasa, andouille, hot links, etc cut into 2" pieces 2 sweet or yellow onions, peeled, quartered 8 ears of corn, shucked, cut in half 4 pounds fresh large shrimp (31–35 count; preferably wild-caught), unpeeled
Preparation
Fill stockpot with 6 qt. water (if using 2 pots, divide ingredients and water between them). Add lemons, bay leaves, salt, peppercorns, and 1/2 cup seasoning, cover, and bring to a rolling boil. 
Add potatoes, return to a boil, and cook 7 minutes. Add sausage and onions, return to a boil, and cook 5 minutes. Add corn, return to a boil, and cook until corn is cooked and potatoes are tender when pierced with a knife, about 5 minutes more.
Add shrimp and cook (no need to return to a boil), stirring gently, until shrimp turn pink, about 3 minutes. Remove insert or drain through a very large colander. Serve shrimp boil on a newspaper-lined table or large platters. Dust with additional Old Bay, if using. Serve with sauces alongside, if desired.
