One wrap is done but it’s not over yet. It’s true that some people stop at this step and put it right in the freezer. But if you think about it, the puff pastry isn’t properly wrapped yet.

So, use clingfilm to give it another wrap. Although some people prefer wrapping it with aluminum foil. If that’s what you want, then go for it.

And to put a cherry on top, there’s another method for you. It’s to avoid the second wrap altogether and use an air-tight container.

Hoy domingo día de masas finas. . La pastelería a avanzado muchísimo estos últimos tiempos logrando infinidad de texturas. Que es más laboriosa .. y si... Quien no se resiste a unas sfogliatellas? A un dacquoise? Huevos kimbo? Tocinitos del cielo? Strudel? O un espectacular postre con masa philo? . El que no ha hecho una Sfogliattellas no sabe el trabajo que es!! Pero ese sabor a la sémola y la ricota perfumada a cítricos y ese crujiente hojaldre realizado vuelta por vuelta no tiene precio. .
