I wouldn't say for any reason in particular, but I never uploaded the last photos of the dishes I did in the finale of Race to Cannes. These are the beautiful masterpieces that got me to the finish and missing first by 1 point. Soprasetta potato cakes with salmon mousse and preserved lemon aioli, almond corn chip fig crusted pork tenderloin that's been brushed with maple syrup on top of sweet potato coulis and red wine maple reduction with tumeric cauliflower rice, and then coconut panna cotta with sour cherry pear compote with brûléed pears and fried sticky rice. Today was round three of five for the Race to Cannes. This is the dish I presented. It's a root vegetable stuffed chicken with pineapple soy glaze and a lift spinach salad with a pineapple jalapeño jelly vinaigrette. We had to use jicama, pineapple, chicken, and spinach. Today we have the second part of the first round of the race to Cannes. The ingredients we had to use were muscadine jelly, Doritos, pickled jalapeños, and chicken. I'm pretty proud of myself. I came in with the second highest score missing the top by just 1.5. I made a chicken stuffed bell pepper bite.
